Vitamin D deficiency is an epidemic in the United States. Uninsured women are at high risk due to a lower intake of vitamin D and limited sun exposure. We examined the association between vitamin D deficiency and hypertension in 96 uninsured women at a County Free Medical Clinic in urban Michigan. Questionnaires were used to obtain information about demographics, medical history including hypertension, and dietary habits. Measurements including blood pressure and serum 25(OH)D level were also collected. Prevalence of hypertension was higher in subjects with 25(OH)D less than 50nmol/l compared with others (85% vs. 27.3%, p = 0.014). For every …

Folate is the naturally occurring form of water-soluble B vitamin that is found in foods such as leafy vegetables, fruits, legumes, etc. Dietary supplementation of folate has shown to be protective against neural tube defects and other congenital disorders, and of recent, its role in carcinogenesis has been of special interest. Though mechanistically unclear, a positive correlation has been observed between folate deficiency in the diet and decrease function of DNA base excision repair pathways. Foods incorporating plant sterols (PS) reduce Low-density lipoprotein (LDL) on average approximately 10%. PS with a higher lipid solubility may promote greater reductions. We examined the cholesterol lowering effect of a novel triglyceride recrystallized phystosterol (TRP). Twenty subjects (mean ± SD; age, 56 ± 10 years; BMI, 27 ± 5) with elevated LDL (>100 mg/dL) participated in three 4-week phases; Phase I, 2% milk; Phase II, milk with 2.0 grams (g) free PS; Phase III, milk with 2.0 g TRP. Phytosterols (PS) have become a recent popular medication alternative for treatment of hypercholesterolemia and have proven effective. Whether PS decrease risk of cardiovascular disease through other mechanisms, such as lipoprotein particle size and inflammatory markers, remains unclear. PURPOSE: The primary aim of this study was to examine the effects of two forms of PS in milk on lipoprotein particle size, inflammatory markers and fat-soluble vitamins. METHODS: Twenty subjects (13 males, 7 females; age; 55±6.1 years, height; 169±10 cm, weight; 77.9±16.9 kg, BMI; 27.3) consumed 16oz of cow’s milk daily for 12 weeks. Sliceability is a cheese’s ability to cut cleanly into thin slices, resist breakage or fracture at slices edges, and undergo a high level of bending before breaking. Intuitively, sliceability depends on the chemistry, microstructural, and rheological properties of the casein network. Currently there is no reported scientific research investigating evaluation methods of cheese slice quality, as well as properties that influence a cheese’s ability to slice.
In this study, a method for slice quality evaluation was developed on purchased cheese and performed on commercial cheeses and experimental cheeses manufactured at three different moisture contents (40.6%, 37.0%, and 33.9%). In addition, …

A topic of interest that is growing in the general population is the idea of being sustainable, or “green”, and there is a rising awareness in sustainable practices involving food and the environment. Some of the “green” eating behaviors identified through my research included eating a plant-based (i.e. vegetarian or semi-vegetarian) diet, eating locally grown foods, eating organically grown foods, and eating foods that are labeled fair-trade. This study was designed to assess the knowledge and attitudes of collegiate freshmen regarding nutrition principles and nutritional guidelines. Participants in this study were 73 first semester students at Clemson University. A questionnaire on nutrition knowledge and attitudes was distributed during the fall semester of 2010. The participants self-reported both height and weight.
The mean score on the knowledge questions was 12.25 points (SD= 2.73), or 49% correct responses. The mean score of the attitude questions was 5.92 points (SD= 1.50), or 65.7% correct responses. There was no significant difference in averages in knowledge and attitudes by gender, (P= .138) …

Hominy feed, a co-product of dry corn milling, has been evaluated to a limited extent in feedlot and dairy rations, but has not been evaluated as a supplemental energy source for lactating beef cows. The objective of this study was to determine the effect of level of hominy feed supplementation on intake, digestibility, in situ DM disappearance, and ruminal fermentation characteristics of medium quality bermudagrass hay. Patients with end-stage renal disease (ESRD) who receive hemodialysis often fail to follow a prescribed diet and fluid regimen, which undermines the effectiveness of care and leads to unpredictable disease progression and greater likelihood of complications. Non-adherence to dietary and fluid limitations compromises the outcomes of patients receiving hemodialysis. Noncompliance can lead to detrimental long-term outcomes including deterioration of the cardiovascular system, heart failure, hypertension, and pulmonary edema as well as short-term problems such as edema, itching, bone pain, and breathlessness.

The demand for neonatal intensive care has lead to many improvements in the delivery of such care with an increase in the survival of the smallest and most premature infants. The Effects Of 1,25-Dihydroxyvitamin D3, Docosahexaenoic Acid And 5-Fluorouracil On Human Breast Cancer Cells, Liv Astri Engelsen

It is well documented that vitamin D and DHA have antiproliferative effects on a variety of human cancers, including breast cancer. Studies have shown that a combination approach to cancer treatment is more effective than any one treatment administered alone. In this study, human mammary epithelial cells from the MCF-7 cell line were treated with 25 μM DHA, 1 μM calcitriol, and 15 μM 5-Fluorourocil alone and in multiple combinations for 72 hours. Both DHA and 5-Fluorouracil slowed growth significantly (p < 0.05). In contrast, vitamin D did not inhibit cell growth at 1 μM. The combination of vitamin D and DHA inhibited cell growth slightly more than DHA alone. Interestingly, DHA was just as effective as 5-Fluorouracil at inhibiting cell growth. These results suggest that DHA may be just as efficacious as 5-Fluorouracil in slowing breast cancer progression and therefore may suggest a dietary approach to breast cancer treatment with low toxicity.

Background: In the Northwest Region of Cameroon, approximately 90% of women initiate breastfeeding; however, only 34% continue exclusive breastfeeding for the recommended six months (Kakute, et al., 2005; WHO, 2008). Entertainment-education is a mass-media communication strategy of placing educational information into media such as television programs, movies, and radio programs (Siegel & Lotenberg, 2007). One hundred seventy-three Nevada Air National Guard members voluntarily participated in this exercise science and nutrition survey-based study. The survey consisted of ten closed-ended questions; the intent of the study was to determine whether the participants were willing to attend exercise science or nutrition related classes, or if the participants were willing to instruct exercise science or nutrition classes if they possessed a degree in either field. Forty-six females, and one hundred twenty-seven males participated in this study; one hundred thirty-six of the respondents were enlisted, and thirty-seven of the respondents were officers. Most outbreaks of foodborne illness in the United States occur as a result of improper food-handling and preparation practices in homes or food establishments. The lack of food-safety knowledge is one of the several reasons for this. This project was coordinated with the Western Dairy Center for the initial phase of the project.

Each year approximately 73,000 refugees are resettled into the United States because it is unsafe for them to return to their country of origin. Resettlement agencies help refugees learn about their new environment and provide assistance with housing, food, English classes, and job skills training. The goal of resettlement programs is to help refugees become self-sufficient as quickly as possible.
