Although there are numerous benefits to increased physical activity and proper dietary behaviors, the decreased participation in physical activity and poor dietary behaviors has emerged as a significant problem within the college student population. The focus of this research study was to identify the relationship between physical activity and dietary behavior to weight loss behaviors within an undergraduate student sample of a small, comprehensive northeastern university. College-aged students (age range: 17 to 27 years old) completed the American College Health Association’s (ACHA) National College Health Assessment II (NCHA) during the years 2009 and 2012. The purpose of this project was to create an empowerment program for children with severe food allergy (SFA) in a residential camp setting. Despite recent advancements in research, there is no cure for SFA, thus there is a need for programs to help children manage their allergies and cope with the ramifications of their condition. Quality of life is a major concern for children with SFA, as the constant fear of exposure to an allergen can lead to high levels of anxiety. This is particularly noteworthy because, barring exposure to an allergen, these children are otherwise healthy and symptom free. …

This project identifies the main issues seen in the dietary habits of college-aged young adults through a comprehensive literature review of studies on the topic. Roughly half of the research articles were obtained through Dr. Tanya Horacek, an associate professor in SU’s Department of Public Health, Food Studies, and Nutrition, who has done research on the college diet and factors that affect the college diet. The purpose of this study was to determine if three elementary school garden club programs influenced students' attitudes and behaviors regarding fruit and vegetable consumption. Both quantitative and qualitative data collection and analysis took place, in the form of pretest and posttest questionnaires as well as participant interviews. Overall, non-significant results were found in the quantitative portion of the study, which led the researcher to determine that the garden club program had no significant effect on the participants regarding perceptions of fruit and vegetable consumption. Peer teaching is a promising model of health education. Limited research exists on the topic of the effectiveness of peer health teaching, and even less research exists on the effects on the actual peer teachers, notably their motivations for becoming peer teachers as well as behavioral modifications and improved self-efficacy made as a result. Obesity is a rising epidemic in the United States and the type of macronutrients consumed at breakfast serves an important role to decrease the statistics. This study analyzed whether a carbohydrate or protein breakfast affected the amount of calories consumed during an ad libitum lunch buffet. Both boys and girls, aged 8 to 12, were screened to participate. Each participant consumed either a carbohydrate or a protein breakfast on two separate occasions. Adolescents are not meeting the recommended daily intake of fruits and vegetables (FV). The Food Dudes Healthy Eating Program (FD), developed by researchers in the UK, has previously been shown to increase lunch time and overall FV intake in elementary school aged children. The aim of this study was to test if participation in the FD program during late elementary school could prevent decreases in FV intake and increases in junk food intake during the transition from elementary school into middle school.

Obesity among children is a public health concern. Preschool-‐aged children, especially those from low-‐income families, are no exception to the obesity epidemic. During the RD Parent Empowerment Program, parents of Head Start children in Johnson City, TN completed a structured education program over the course of 4 workshops related to healthy habits of families. The goal was to empower parents to shop smart, cook healthy, and eat right. Vitamin D deficiency is considered to be a pandemic with implications for compromised bone health and other chronic diseases. Few studies have examined vitamin D status in college-aged individuals where prevention of future health consequences is still possible. Serum vitamin D 25(OH)D status and vitamin D intake were examined in 98 college students ages 18-29 years during winter. BMI was classified as < 25and 25 or greater. Race was categorized as Caucasian or other. Overall, 69.5% had suboptimal serum vitamin D levels, <30ng/mL. Only 8 students (8.2%) met the EAR (400 IU) per day for vitamin D intake. t tests were used to determine if there were significant differences in serum vitamin D level and dietary intake based on gender, race and BMI. Significant differences were found in serum vitamin D level when compared by gender and race. Females tended to have a higher serum vitamin D level than males. Those representing minorities had lower serum vitamin D levels than Caucasians; One hundred percent of the minority students had suboptimal serum vitamin D levels. Based on these findings, dietitians should increase efforts to target college-aged individuals in educational programming related to factors affecting vitamin D synthesis, vitamin D intake, and health consequences of suboptimal vitamin D status, particularly in winter. Consideration should be given to vitamin D fortification of foods that meet the preferences of today’s consumer.

Due to the increasing cost of soybean meal and concerns of excess N being excreted into the environment, new protein supplements have been developed. Two products that have shown potential in increasing N utilization efficiency are slow release urea (SRU; Optigen) and ruminal escape protein derived from yeast (YMP; DEMP). Orofacial clefts (OFCs) are birth defects characterized by immediately recognizable disruption of normal facial structure caused by abnormal facial development during the first six to eight weeks of gestation, causing a cleft in the lip or the palate. OFCs are among the most common structural birth defects and a public health problem. Some studies have found that maternal obesity, diabetes, hypertension, or the underlying metabolic abnormalities known as the metabolic syndrome, might be associated with the risk of OFCs, though other studies have been inconsistent. Sucrose esters have an established use in food industry as emulsifiers. Two novel lactose esters (lactose monodecanoate and lactose monomyristate) were synthesized and studied for their antimicrobial and emulsification properties. Lactose is a byproduct in cheese production and is an inexpensive carbohydrate source.
The antimicrobial activity of lactose monodecanoate (LMD) and lactose monomyristate (LMM) was tested against the growth of seven different bacteria. Both esters, when dissolved in dimethoxy sulfoxide (DMSO), proved bactericidal against Bacillus cereus, Mycobacteria KMS and Streptococcus suis. LMM/DMSO was bactericidal against B. cereus at concentrations between 1 and 3 mg/ml. LMM/DMSO was bactericidal against …

As overweight and obesity numbers continue to climb around the world, consumers continue to search for reduced-fat alternatives to foods they often consume. Given that cheese is naturally high in fat, this is one food that is often targeted for fat reduction. However, as fat plays an important functional role in the texture of cheese by breaking up the continuous protein matrix, reduced-fat products tend to be very chewy and rubbery compared to their full-fat counterparts.

The Western diet is commonly consumed by industrialized societies and characterized by an increased consumption of vegetable oils rich in omega-6 (n-6) fatty acids. This results in a higher ratio of omega-6 to omega-3 (n-3) fatty acids in the diet. Omega-6 polyunsaturated fatty acids (PUFA) are believed to induce a pro-inflammatory response in the body. Therefore, this change in PUFA concentration and/or ratio of n-6:n-3 in the Western diet may contribute to colorectal cancer (CRC) risk. Orofacial clefts (OFCs) are facial malformations that happen during early pregnancy and have a complex and heterogeneous etiology, involving both genetic and environmental risk factors. This project examined the association between maternal nutrition, folate-related biomarkers, candidate genes involved in one-carbon metabolism (OCM), and OFCs in order to achieve more comprehensive knowledge of how nutrition and genetics influence OFC risk. All studies performed in this project used the data collected in the Utah Child and Family Health Study (UCFHS) and the Johns Hopkins International Cleft Consortium.

In terms of energy density, the cost of shipping hay is often not justified in yr where adverse conditions limit available forage. Our objective was to determine if co-product feedstuffs could be used to meet the energy demands for cows in late pregnancy. Eighty-six crossbred cows (527 ± 0.8 kg BW) in late gestation were stratified by BW, BCS and age and allocated randomly to 1 of 6 groups held on 2-ha dormant bermudagrass pastures for 68 d. In the current study, a number of salt-tolerant clones previously isolated from a human gut metagenomic library were screened using Phenotype MicroArray (PM) technology to assess their functional capacity. PM's can be used to study gene function, pathogenicity, metabolic capacity and identify drug targets using a series of specialized microtitre plate assays, where each well of the microtitre plate contains a different set of conditions and tests a different phenotype. Cellular respiration is monitored colorimetrically by the reduction of a tetrazolium dye. In the original paper, the authors discovered a computer coding error that resulted in 33 of the women’s ages being incorrectly recorded. All analyses were repeated for this paper using the corrected age dataset, as all our logistic regression analyses in the published paper were adjusted for age.The repeated analyses, using the corrected dataset, lead to minor changes that needed to be reported to the results in the published paper. These corrections did not change the conclusion of the published paper.The authors apologize for any inconvenience.

The Baby-Friendly Hospital Initiative (BFHI) is a worldwide movement started by the World Health Organization (WHO) and the United Nations Children’s Fund (UNICEF) that is aimed at providing hospitals with a certification that guarantees the best possible patient-centered care for mothers and infants. It focuses on breastfeeding as optimal infant nutrition, and implements strategies to encourage and support mothers to breastfeed their infants exclusively for six months after birth. Dietary Prevention Of Prostate Cancer In The Tramp Mouse Model, Brett Shaw, Dr. Merrill Christensen

This project utilized histology in determining whether dietary supplementation of selenium and/or isoflavones (a component of soy) had a preventative effect on the development of prostate cancer. Additionally, we explored the timing of introduction of these supplements and observed their individual and combinational effects on cancer progression.
