Food insecurity has long penetrated the rural South. This limits access to nutritious foods like fresh produce and contributes to chronic health conditions that may arise. Food pantries serve as a vital resource in addressing these disparities by providing free food to families in need. Many of these pantries incorporate strategies to increase consumption of nutrient dense options such as fruits as vegetables. Background/Objectives: Disorders of gut-brain interaction (DGBI), characterized by chronic abdominal pain and significant disability, affect 15-20% of children and adults and continue into adulthood in ~60% of cases. Costs for adults reach USD 30 billion per year, yet effective management strategies are elusive. Studies support using cognitive behavioral therapy (CBT), but abdominal pain only improves in ~40% of patients. Dietary management (low FODMAP diet; LFD) has also shown promise but it is effective in only a similar percentage of patients. Studies suggest that biologic factors (biomarkers) contribute to CBT response. Similarly, gut microbiome composition appears to influence abdominal pain …

The Interaction Between Physical Activity And Fruit And Vegetable Intake On Body Composition, Om S. Ghetia

Objective: Fruit and Vegetable (FV) intake and Physical Activity (PA) are important lifestyle factors associated with body composition. This study assessed the combined impact of meeting FV intake and PA recommendations on body composition measures including body mass index (BMI), percent body fat (PBF), and waist circumference (WC) in adults aged 20–64 years from diverse backgrounds.
Design: A cross-sectional study conducted in Northeastern Connecticut.
Methods: A total of 124 participants completed a one-week dietary and PA record followed by anthropometric assessments. Participants were categorized into groups based on FV intake (≥400 g/day vs. < 400 g/day) and PA levels (≥600 MET-minutes/week vs. < 600 MET-minutes/week). Independent t-tests and chi-square tests were used to compare dietary intake, PA levels, and body composition outcomes across groups.

Background:
Obesity rates in children has become a growing concern in the Hispanic/Latino community in Nevada. This study examines the availability of sweet snacks in the home and its association with children's dietary behavior.
Methods:
Data was analyzed from a survey of 155 Latina mothers using logistic regression while controlling for income, education, and acculturation. The survey was conducted in Nevada, between October 2022 and March 2024.
Results:

Food allergies and food intolerances are becoming an increasingly more prevalent issue in the Unites States. To mitigate adverse reactions, these individuals often eliminate food or food groups from their diets and the ramifications of these lifestyle changes may result in disordered eating patterns. High-fructose corn syrup (HFCS) is an artificial sweetener that contains slightly higher concentrations of fructose compared to standard sucrose. It has been linked to an increased risk of obesity, type 2 diabetes, cardiovascular disease, and fatty liver disease. OBJECTIVES: School food can have a profound effect on the population’s health. Thirty million children receive food at school and consume half their daily calorie intake at school. Competitive foods are foods sold outside of school breakfast and lunch, such as those sold in vending machines. A new ruling for Smart Snacks Standards, a set of competitive food guidelines, started in the school year 2014-2015. It is known that competitive foods undermine school lunch participation, and a decrease in school lunch consumption is associated with poorer student health. Vector-borne diseases, including Zika virus (ZIKV), Dengue virus (DENV), and West Nile virus (WNV), pose considerable global health threats, accounting for over 400 million infections and more than 700,000 deaths annually. Many vector-borne diseases are within the Flaviviridae family. Despite this, effective treatments have not been found for some flaviviruses. Flaviviruses exploit host cellular machinery to facilitate their replication and survival, reprogramming metabolic pathways, including lipid metabolism. Lipids play essential roles in the viral life cycle, providing structural components for the viral envelope, enabling membrane rearrangements for replication complexes, and supplying energy resources necessary for particle assembly.

This study investigated potential predictors and risk factors of disordered eating behaviors and attitudes among undergraduate college students, addressing the high prevalence of disordered eating on college campuses. The sample consisted of 85 female undergraduate students who completed self-report measures of impulsivity, emotion regulation difficulties, desire for a sense of control, eating disorder behaviors and attitudes, as well as behavioral (Go/No-go task) and physiological (antisaccade task) measures of impulsivity, using food-related stimuli. Correlational, linear regression, and discriminant function analyses revealed significant associations among the self-report independent variables with eating disorder risk. As the search for innovative mental health treatments expands, dietary interventions have emerged as a promising approach for alleviating depressive symptoms. This thesis presents a meta-analysis of randomized controlled trials (RCTs) examining the efficacy of whole-of-diet nutritional interventions in reducing depression symptoms among adults. Grounded in Bronfenbrenner’s Bioecological Model and Engel’s Biopsychosocial Model, this study explores the intersection of biological, psychological, and social factors that influence mental health outcomes. A systematic review identified six eligible RCTs assessing the impact of healthy dietary patterns, including the Mediterranean diet and other plant-based interventions, on depression symptoms. Research has shown that acute supplementation with dietary nitrate will increase the amount of circulating nitrate, boosting NO bioavailability via the nitrate-nitrite-NO pathway, providing enhanced vasodilation. There are limited dietary nitrate studies including young, healthy female participants. The purpose of this study was to investigate the influence of acute dietary nitrate, via beet root juice (BRJ) supplementation, on resting heart rate and blood pressure in young, healthy women. Postmenopausal women commonly experience declines in sleep quality, mood, and overall wellbeing, with limited non-pharmacological options available to address these concerns. This randomized controlled trial investigated whether daily beef consumption as part of a higher-protein diet could improve sleep, mood, and quality of life over four weeks. Participants were randomized to either a standard protein intake control group or a treatment group consuming a high-protein diet with daily lean beef.
The treatment group showed modest improvements in subjective sleep quality and perceived health compared to controls, although these changes were not statistically significant. Fatigue, however, significantly decreased in the treatment …

In chocolate-coated products, oil migration in fats can lead to chocolate softening, filling hardening, discoloration, and lower consumer acceptance. This study examined three different fats (soy- palm-, and palm-kernel (PK) based), crystallized under different conditions (cooling rate and use of high intensity ultrasound (HIU)) to examine how the crystallization conditions impact the physical properties of confectionery products. These conditions produced fats with high and low oil binding capacities (OBCs); the ability of crystal networks to entrap liquid oil. Food insecurity is a critical issue globally and in the United States. The USDA’s Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) aims to address this by improving the nutrition of low-income pregnant women and children. However, immigrants and refugees, who are particularly vulnerable to food insecurity, often encounter barriers to accessing WIC benefits. This study aimed to: i) evaluate how immigrant and refugee families in Utah utilize WIC benefits, and ii) explore their experiences, challenges, and suggestions for improving the program. We investigated the impact of protein source in a western-style diet on colon cancer, colitis, and the gut microbiome. The Western dietary pattern is energy-dense, low in fiber, and has a sub-optimal micronutrient profile. Our group has formulated the Total Western Diet (TWD) that emulates the Western dietary pattern using survey data (NHANES), and we have demonstrated that this diet increases gut inflammation and colorectal cancer relative to a healthy control diet (AIN-93G), which is optimized for mouse health. However, the effect of protein source in the TWD and its effects on gut health have yet to be investigated.

Neonatal calf health is an important factor in the productivity and profitability in the beef cattle industry, influencing preweaning survival, growth, and long-term performance. The overall objective of this thesis is to characterize risk factors that contribute to health issues in young beef calves. The first objective is to review literature exploring the environmental factors affecting preweaning morbidity and mortality, including hypothermia, precipitation, and wind. Management strategies such as the effect of environmental conditions of calving location, body condition score in dams at parturition, and the impacts of dystocia on calf health will also be discussed. Nutrition plays a vital role in early childhood, where rapid growth and development occur. This study investigates Early Interventionists’ (EIs) nutrition knowledge and perceptions of nutrition-related concerns in children receiving services through the Tennessee Early Intervention System (TEIS). An electronic survey was distributed to EIs in Tennessee to assess their nutrition knowledge and perceptions and to identify nutrition concerns. Findings revealed that most EIs have never received any nutrition education, despite being asked for nutrition guidance by families and being open to nutrition-related training. Studies examining patient awareness and attitudes toward diabetes have been conducted and found that diabetes education does increase patient knowledge but has no effect on attitudes. The typical modern diet is brimming with food additives used in food processing. Additives such as antibiotic residues, GMOs, pesticide residues, anti-caking agents, emulsifiers, artificial sweeteners, colorants, flavor enhancers, and preservatives. Most of these additives seem to shift the gut microbiome towards more pro-inflammatory signals. When all these additives are considered as an amalgam, such as with the modern processed diet, the ramifications on the gut microbiome are concerning. Obesity, which is characterized by low-level chronic inflammation, is likely exacerbated by these food additives. Consequently, most of these additives should be avoided or banned for optimal health.

Snakes in human care often lack diversity in the diet. Rodents account for the majority of meals, while wild snakes are consuming a varied diet composed of multiple different whole prey species. By feeding only one species of prey, the chance of nutrient deficiencies and other health concerns increases. Two Sweet Bran products were evaluated at 13%, 18%, and 23% inclusion of the diet on total tract digestibility and rumen fermentation parameters. Seven ruminally cannulated, heifers were used in a 6 x 7 row-column design with 21-d periods consisting of 16-d adaptation period followed by a 5-d collection. Dietary treatments were designed in a 2 x 3 factorial arrangement with 6 periods. Factors included two Sweet Bran products that differed in particle size (Sweet Bran-SP; GMD = 1.79 mm or Sweet Bran-LP; GMD = 2.51 mm) and three dietary inclusion (13%, 18%, or 23% of diet dry matter). The use of small grain silage to feed livestock has grown in popularity, although the more common source of silage is annual corn. A benefit of producing small cereal grain is double cropping, harvest a forage source in the spring prior to planting the summer annual crop. Introduction ;Undernutrition remains a significant global challenge, severely impacting children’s development and growth. To address this, the Sustainable Development Goals target a substantial reduction in stunting and wasting by 2025. Achieving these goals requires scaling up evidence-based nutritional interventions; however, limited budgets pose challenges in funding all necessary programs. To assist policymakers in making informed decisions, the World Bank developed the Optima Nutrition Modelling tool, which optimizes the allocation of nutrition investments.
