Previous studies have shown positive effects of long-term resveratrol (RSV) supplementation in preventing pancreatic beta cell dysfunction, arterial stiffening and metabolic decline induced by high-fat/high-sugar (HFS) diet in nonhuman primates. Here, the analysis was extended to examine whether RSV may reduce dietary stress toxicity in the cerebral cortex of the same cohort of treated animals. Middle-aged male rhesus monkeys were fed for 2 years with HFS alone or combined with RSV, after which whole-genome microarray analysis of cerebral cortex tissue was carried out along with ELISA, immunofluorescence, and biochemical analyses to examine markers of vascular health and inflammation in the …

Exploring The Relationship Between Severity Of Illness And Human Milk Volume In Very Low Birth Weight And Extremely Low Birth Weight Infants Over Six Weeks, Shannon Leigh Morse Apr 2016

Exploring The Relationship Between Severity Of Illness And Human Milk Volume In Very Low Birth Weight And Extremely Low Birth Weight Infants Over Six Weeks, Shannon Leigh Morse

USF Tampa Graduate Theses and Dissertations

Very low birth weight and extremely low birth weight neonates have tremendous risk of mortality. This is a grave concern; however, survival alone is not the goal of neonatal intensive care. Survival, along with a reduction or elimination of life long morbidity is the aim of neonatal intensive care.

Human milk is known as the best nutrition for babies and a growing body of evidence supports that human milk is critical in helping these fragile neonates mitigate the overwhelming risks they face. Therefore, the purpose of this study was to examine the relationship between neonatal severity of illness and human …

The Change In Nutritional Status In Traumatic Brain Injury Patients: A Retrospective Descriptive A Retrospective Descriptive Study, Dina A. Masha'al Apr 2016

The Change In Nutritional Status In Traumatic Brain Injury Patients: A Retrospective Descriptive A Retrospective Descriptive Study, Dina A. Masha'al

USF Tampa Graduate Theses and Dissertations

There is a high prevalence in malnutrition among traumatic brain injury (TBI) due to the hypermetabolism and hypercatabolism which develop post injury. Traumatic brain injury patients are different, even among themselves, in their energy requirements and response to nutritional therapy. This implies that there are other factors that affect the energy intake of these patients and enhance the incidence of malnutrition.

This dissertation study examines the nutritional status of TBI patients upon admission to the intensive care unit (ICU) and during their hospital stay to describe baseline status, detect changes in nutritional status over 7 days, and identify the factors …

UCARE: Research Products

Can we reduce methane by using dietary interventions to reduce carbon footprint and increase feed efficiency? Ruminant livestock account for a significant amount of the anthropogenic methane produced in the U.S. All ruminant livestock produce 28% of the earth’s methane emissions. The methane within ruminants is produced by a microbial fermentation, especially by a group of bacteria known as the methanogens. However, the different species of methanogens and their pathways of methane production within ruminants are not fully understood. Cattle are considered one of the main producers of methane. They produce 20% of the U.S. methane emissions. Methane absorbs more …

Examining Maternal Obesity Effects On Oogenesis, Follicular Development, And Embryonic Myogenesis, Chris Lindeman, Jennifer Wood Apr 2016

Examining Maternal Obesity Effects On Oogenesis, Follicular Development, And Embryonic Myogenesis, Chris Lindeman, Jennifer Wood

UCARE: Research Products

The CDC estimates that more than one-third of U.S. adults (approximately 78.6 million) are obese. Despite national efforts to combat this with diet and exercise, the number of obese adults and children continues to climb. It is critical to emphasize that obesity can lead to lifelong, chronic complications and health risks including hypertension, heart disease, and diabetes.

Diet and obesity also have important impacts on the reproductive health of female including the ability to become pregnant (fertility) and risk for complications during pregnancy. Furthermore, for women who do become pregnant, obesity can affect the development of the embryo and fetus, …

Hypertensive Disorders Of Pregnancy In Rural Maharashtra: A Preventative Approach To Risk Factor Reduction Through Lifestyle Interventions, Jess Wiken

Independent Study Project (ISP) Collection

The primary purpose of this study is to assess the contribution and correlation between lifestyle behaviors and modifiable risk factors (MRF) established in adolescence and during pregnancy with development of hypertensive disorders of pregnancy (HDP) exclusive to preeclampsia (PE), eclampsia, and pregnancy induced hypertension (PIH). MRF include but are not exclusive to diet and nutrition, physical activity, and Mishri use. Associations of HDP with increased premature cardiovascular risk in the affected woman and child indicate the importance of healthy lifestyle modifications that promote cardiovascular health and longevity and reduction of risk factors through prevention. While cardiac conditions are primarily associated …

Micronutrient Foliar Analysis And Supplementation In Nutrient Management For High Yield Maize (Zea Mays L.), Zachary P. Stewart Apr 2016

Micronutrient Foliar Analysis And Supplementation In Nutrient Management For High Yield Maize (Zea Mays L.), Zachary P. Stewart

Department of Agronomy and Horticulture: Dissertations, Theses, and Student Research

Micronutrient supplementation in maize production is of growing interest to producers and agronomists as means to further increase yield as other crop needs are increasingly met. Plant tissue and soil sampling for micronutrient concentrations have been used to determine likely responses to micronutrient supplementation. Nebraska soils are generally micronutrient sufficient and usually do not have soil or plant tissue micronutrient concentrations below critical levels, however, during precise periods where specific micronutrients are in greatest need due to physiological demands, there may be opportunity for micronutrient supplementation to increase grain yield. The compiled chapters indicate that in most scenarios in Nebraska, …

Role Of Acetyl-Coa Synthetase 2 And Acetyl-Coa Precursors, Acetate And Ethanol, On Hepatocyte Gene Expression, Noel Bruner, Anjeza Erickson, Mengna Xia, Bo He, Regis Moreau

UCARE: Research Products

Abnormally high blood and tissue lipid levels observed in metabolic disorders and cardiovascular diseases are associated with extensive gene expression changes. Gene expression is modulated by epigenetic mechanisms, which include modifications of DNA-bound protein histones without alteration of DNA sequence. Histone hyperacetylation is observed in the setting of metabolic disorders but the causes have not been described in any detail. We know that histone acetylation is positively correlated with the abundance of acetyl-coenzyme A. This study tests the hypothesis that acetyl-coenzyme A metabolizing enzyme acetyl-coenzyme A synthetase 2 (ACSS2, cytoplasmic, aka AceCS1) impacts liver function through histone acetylation, and that …

The Impact Of Depleting Dietary Microrna In A High-Fat Diet, Briley Moates, Sonia Manca, Janos Zempleni Apr 2016

The Impact Of Depleting Dietary Microrna In A High-Fat Diet, Briley Moates, Sonia Manca, Janos Zempleni

UCARE: Research Products

We tested the hypothesis that a highfat diet would increase the difference in body weight between C57BL/6J mice provided dietary microRNA (Exo +) and mice which were fed the same diet depleted of microRNA (Exo-).

• The data demonstrate that depleting miRNAs from a high-fat diet does not impact the difference in body weight between Exo+ and Exo- subjects. • Depleting dietary miRNAs from normal low-fat diets do result in differences in body weight, fat, fecundity, purine metabolism, and gut microbiome.

Comparing Steady State To Time Interval Measurements Of Resting Metabolic Rate, Chelsea Jayne Irving Apr 2016

Comparing Steady State To Time Interval Measurements Of Resting Metabolic Rate, Chelsea Jayne Irving

Theses and Dissertations

The two most common methods to measure resting metabolic rate using indirect calorimetry are steady state or time interval. Steady state is commonly defined as the first five minutes in which oxygen consumption and carbon dioxide production vary by <10%. A time interval measurement generally lasts 20-60 minutes. Using steady state criteria is often harder to achieve, but many suggest it more accurately measures resting metabolic rate. Our objective was to determine if there were differences between steady state and time interval measurements in a healthy adult population.
Seventy seven subjects were measured for 45 minutes. Inclusion criteria included healthy subjects ages 18-65, excluding pregnant and lactating women. Paired t-tests analyzed differences between measures, and Bland-Altman plots evaluated bias, precision, and accuracy.
Of 77 subjects, 84% achieved steady state, and 95% achieved SS by minute 30. Most differences between steady state and time intervals were statistically but not practically …

Malnutrition And Handgrip Strength In Hospitalized And Non-Hospitalized Children 6-14 Years Old, Kayla Camille Jensen

Theses and Dissertations

Malnutrition is concerning in children because it effects proper growth and development. Handgrip Strength (HGS) has been identified as a diagnostic indicator for identifying pediatric malnutrition but normal reference ranges have not yet been established; therefore, HGS can be used to identify malnutrition but not quantify the degree of malnutrition: mild, moderate, or severe. The aim of this study was to determine if HGS differed between hospitalized and non-hospitalized children and to describe the association between HGS and several parameters including height, weight, body mass index (BMI), and mid-upper arm circumference (MUAC). One hundred nine hospitalized and 110 non-hospitalized pediatric …

Mitigation Of Ergot Vasoconstriction By Clover Isoflavones In Goats (Capra Hircus), Glen E. Aiken, Michael D. Flythe, Isabelle A. Kagan, Huihua Ji, Lowell P. Bush

Kentucky Tobacco Research and Development Center Faculty Publications

Ergot alkaloids produced by a fungal endophyte (Epichloë coenophiala; formerly Neotyphodium coenophialum) that infects tall fescue (Lolium arundinaceum) can induce persistent constriction of the vasculature in ruminants, hindering their capability to thermo-regulate core body temperature. There is evidence that isoflavones produced by legumes can relax the vasculature, which suggests that they could relieve ergot alkaloid-induced vasoconstriction and mitigate the vulnerability to severe heat stress in ruminants that graze tall fescue. To test if isoflavones can relieve alkaloid-induced vasoconstriction, two pen experiments were conducted with rumen-fistulated goats (Capra hircus) to determine with ultrasonograpy if …

The Association Between Vitamin A Status Or Supplementation And Hiv/Aids, Mikaela Kathleen Curtis Mar 2016

The Association Between Vitamin A Status Or Supplementation And Hiv/Aids, Mikaela Kathleen Curtis

Food Science and Nutrition

The human immunodeficiency virus (HIV) has infected millions of people since the start of the epidemic in the early 1980s. HIV is the etiologic agent of the acquired immunodeficiency syndrome (AIDS), which has taken millions of lives. It is extremely difficult for particular populations to receive medication to treat HIV infection and prevent the progression of HIV to AIDS. Multiple studies have examined the effect of vitamin A on HIV infection, due to its immune stimulating effects. It is unclear whether an association exists between vitamin A and different aspects of HIV. This review examined the effect of vitamin A …

Pink And Dude Chefs: Impact Of A Nutrition And Culinary Education Program With Middle School Students In An Afterschool Setting, Jessie R. Bierlich-Wesch

Master's Theses

The epidemic of adolescent obesity has become one of the greatest public health concerns in the United States. Approximately 20.5% of adolescents of both sexes aged 12-19 years are considered obese. Higher rates of obesity are evident in ethnic minority and lower income status children with the highest prevalence among Hispanic/Latino and Black populations. The causes for obesity are multifactorial in nature and highlight disparities nationwide. These factors include socioeconomic status, education, environment, availability and access to fresh fruits and vegetables, and behavior patterns. Successful intervention methods that have reduced the impact of adolescent obesity have incorporated nutrition knowledge and …

Human Oral Sensory Systems And Swallowing, Cordelia Running Mar 2016

Human Oral Sensory Systems And Swallowing, Cordelia Running

Department of Nutrition Science Faculty Publications

Numerous oral sensations contribute to the flavor experienced from foods. Texture is sensed throughout the mouth by nerve endings in the oral epithelium. Chemesthetic sensations, including irritation, spiciness, and chemical burn or cooling, are sensed by these same nerves. Tastes are sensed by taste buds, primarily on the tongue, which transduce information through the gustatory nerves. Even after placing food in the mouth, odor is still experienced through retronasal olfaction, the air that passes through the rear of the oral cavity into the nasal passages. All of these sensations combine to give an overall experience of flavor. In individuals with …

The Effect Of Monetary Reward And Food Type On Motivation Of Untrained Sensory Panelists In Triangle Tests, Jessilee Noel Loucks Mar 2016

The Effect Of Monetary Reward And Food Type On Motivation Of Untrained Sensory Panelists In Triangle Tests, Jessilee Noel Loucks

Theses and Dissertations

Although human panelists provide unparalleled data, they are prone to bias, which is a primary concern of sensory scientists. Motivational bias is of concern because it determines how much effort a panelist will exert to be consistent, find a difference, or use appropriate descriptors when taking a test. For central location tests, money has become a common motivational device to compensate panelists for their time and effort. Studies have documented that money can change results in sensory testing but have not measured the impact on motivation. Additionally, little research has been conducted on the effect of the test food itself …
