Hypothalamic neurons expressing the anorectic peptide Pro-opiomelanocortin (Pomc) regulate food intake and body weight. Here, we show that Steroid Receptor Coactivator-1 (SRC-1) interacts with a target of leptin receptor activation, phosphorylated STAT3, to potentiate Pomc transcription. Deletion of SRC-1 in Pomc neurons in mice attenuates their depolarization by leptin, decreases Pomc expression and increases food intake leading to high-fat diet-induced obesity. In humans, fifteen rare heterozygous variants in SRC-1 found in severely obese individuals impair leptin-mediated Pomc reporter activity in cells, whilst four variants found in non-obese controls do not. In an exploratory study, a convenience sample of 148 pregnant women was recruited from a WIC clinic in the southeast region of the U.S. to: 1) Examine and compare daily nutrient and food group intakes of WIC pregnant women to national guidelines, and; 2) Determine racial/ethnic differences in nutrient and food group intakes among WIC pregnant women. Women were selected for the study if they were: ≥ 18 y, in 2nd trimester of pregnancy, and if they spoke English or Spanish as a first language. Background: Multiple Sclerosis (MS) results from genetic predisposition and environmental variables, including elevated Body Mass Index (BMI) in early life. This study addresses the effect of BMI on the epigenome of monocytes and disease course in MS.
Methods: Fifty-four therapy-naive Relapsing Remitting (RR) MS patients with high and normal BMI received clinical and MRI evaluation. Blood samples were immunophenotyped, and processed for unbiased plasma lipidomic profiling and genome-wide DNA methylation analysis of circulating monocytes. The main findings at baseline were validated in an independent cohort of 91 therapy-naïve RRMS patients. Disease course was evaluated by a two-year longitudinal follow up …

Mycoprotein is an alternative, nutritious protein source with a meat-like texture made from Fusarium venenatum, a naturally occurring fungus. Its unique method of production yields a significantly reduced carbon and water footprint relative to beef and chicken. Mycoprotein, sold as Quorn, is consumed in 17 countries, including the United States. In line with current dietary guidelines, mycoprotein is high in protein and fiber, and low in fat, cholesterol, sodium, and sugar. Mycoprotein may help maintain healthy blood cholesterol levels, promote muscle synthesis, control glucose and insulin levels, and increase satiety. In “Gut Feeling: Good Food, Good Mood,” Asia Battle describes the emerging field of nutritional psychiatry. Her essay explains why psychotropic medications can be unreliable and, over time, even counter-productive for treating ADHD, autism, bipolar disorder, and other disorders with which children are being increasingly diagnosed. Battle explains some of the science linking proper nutrition with relief from mental/emotional distress and offers suggestions for transitioning from poor diets (including the treats that we may use to placate children) to diets that promote physical and emotional well-being.

Climate change is predicted to increase the spread and abundance of invasive species and to erode global food security. I hypothesized that by incorporating edible invasive species into local food sheds, these two problems could help to mitigate each other. Genetically modified organisms (GMOs) and genetic engineering (GE) are accepted as safe and useful by the consensus of the scientific community. Their diverse utility has shown promise in addressing major challenges of the 21st century, including world hunger, global warming, and the prevalence of diet-related diseases (e.g. heart disease, cancer, diabetes, etc.). A 2014 Pew Research Center survey revealed that while 88% of scientists agreed that GM foods were safe to eat, only 37% of American consumers agreed. Furthermore, only 35% of U.S. adults trusted scientists to accurately inform the public about GMOs. To explain this disparity, I synthesize information …

Mammalian dental anatomy has evolved in accordance with the physical properties of its diet, and multiple features on each tooth have specific functions related to the breakdown of food during mastication and ingestion. Tooth structure is under tight genetic control and much of the anatomical variation in dentition across species is related to adaptation to a specific dietary regime. This diet-dentition relationship can be exploited to reconstruct mammalian diets from fossil specimens through calculation of dental topographic metrics. Background: Increased intakes of ready-made and fast foods paralleled with decreased homemade food consumption have been associated with increased rates of obesity. Researchers have shown associations between cooking self-efficacy (SE) and cooking frequency (CF) with dietary quality and weight status. Some cooking interventions have shown positive associations with dietary outcomes, such as increased fruit and vegetable intake and decreased fast food consumption. There is still much unknown about SE and CF, especially among youth.

This study is an observation of the various physicochemical changes that occur in enzyme-modified cheese (EMC) during the incubation step of production. The purpose of this study was an attempt to gain a better understanding of the changes that occur due to enzymatic reactions during EMC production. A standard EMC batch was prepared with the addition of two exogenous enzymes, a lipase and a protease (LP). Two additional treatment batches had either only a lipase (L) or a protease (P) added individually. Batches were prepared in duplicate with each replicate performed on different days. The food scene in Vietnam is social and lively. The demand for fresh meat, seafood, and produce has open-air markets open twice per day. Fortified and unfortified soymilk were produced from the same production batches for comparative evaluation. Fortification included a comprehensive array of micronutrients of interest to community and humanitarian nutrition programs. The effects of time after fortification prior to cooling, cooling method, and light or dark refrigerated storage on the stability of 5 vitamins (vitamin A, vitamin C, thiamine, riboflavin, and folate) were investigated for both fortified and unfortified soymilk. Significant vitamin C loss (6%) and mild vitamin A isomerization occurred while soymilk was hot immediately following fortification. Purpose: This qualitative study is to identify programing that encourages increased self-sufficiency in SNAP recipients. The goal was to identify themes related to successful self-sufficiency programming at federally-funded health centers/health programs (HCHPs). The study also investigated the role of social determinants of health in relation to achieving self-sufficiency.
Method: A series of 45-minute to 1-hour-long interviews were conducted to explore the perspectives of seven total staff at seven federally-funded HCHPs across the U.S. western region. The purpose of this study was to determine the efficacy of implementing two Postural Restoration exercises and relating principles on deadlifts using a hexagonal barbell. Specifically, we aimed to examine the effects of the intervention on muscle activation and the location of the ground reaction force (GRF) center of pressure. Sixteen subjects (age 18-35 yrs.; male (n=14); female (n=2)), with at least 1 year of deadlifting experience, were randomly assigned into a control and intervention group (both n=8). Both groups performed two sets of three repetitions of deadlifts at 50% and at 80% of their estimated one repetition maximum (1-RM). …

To compare the predictive accuracy of regression models for a non-consecutive day VO2 max/Wingate testing protocol and a same day testing protocol. Participants (N=23) completed a treadmill GXT and Wingate cycle test. Participants (n=12) completed testing on non-consecutive days (NON) and (n=11) the same day (SAME). VO2 max (L/min) and peak power (PP) were collected. Linear regression analysis of NON revealed R2=0.808 and prediction equation Ŷ=1.499+0.004X and SAME showed R2=0.861 and prediction equation Ŷ=1.407+0.003X. NON standard error of estimate (SEE) and standard error of estimate percent (SEE %) were 0.62 L/min and 15.23%, respectively. SAME SEE and SEE% were 0.34 …
