The prevalence of childhood overweight and obesity is an ongoing concern. Currently, approximately 20% of children in the United States are obese. While obesity was once regarded merely as excessive adiposity within the body, it is has emerged as a major risk factor for chronic diseases such as metabolic syndrome, type 2 diabetes, and cardiovascular disease. Obesity is multifactorial in nature. Weight gain can result from an energy imbalance in the body due to excess energy intake (calories in) and decreased energy expenditure (calories out). According to the Centers for Disease Control and Prevention (CDC) the prevalence of obesity in adults in the United States during 2017-2018 was a 42.4%, a high number considering all the risks factors associated with this disorder, such as cardiovascular disease, insulin resistance, diabetes type 2, and fatty liver disease, among others. Fatty liver disease is the accumulation of lipids in the liver that can account for more than 5 to 10% of the liver’s weight. The modern broiler is growing at a rapid rate generating tremendous amounts of heat. A sensitive Net Energy (NE) system is needed to measure body heat production (HP) generated primarily by daily maintenance and synthesis and degradation of myofibrillar and sarcoplasmic protein. The first two chapters present evaluation of the classic way to calculate NE versus a new methodology; the Arkansas NE (Ark NE) system, with birds from two genetic lines fed diets with different AA content or different ME content in two different environmental temperatures.

Dysphagia refers to the symptom of difficulty in swallowing that accompanies several prevalent conditions in the older adult population, including amyotrophic lateral sclerosis (ALS, Lou Gehrig’s Disease), stroke, Parkinson’s Disease, Multiple Sclerosis, dementia, various cancers, and brain tumors (Allari, 2014). Many older adults who suffer from these conditions reside in nursing facilities, where most of their care is provided by certified nursing assistants (CNAs) and medication aides (MAs). However, the extent of these workers’ knowledge and competence in providing care to nursing home residents with dysphagia is vastly under-researched. The purpose of this study is to determine if a optimal time of year exists for beef producers to have cows give birth in southwest Missouri for maximal net returns from calf sales and increased cow reproductive performance. To make this determination, data were collected which included year-round forage nutritive value, calf pre-weaning growth, cow energy efficiency and reproductive performance, and income and cost values. Cow and calf field data were gathered for the 2014-2018 production years at Missouri State University’s Leo Journagan Ranch. Objective: To assess spending by beneficiaries of Benazir Income Support Programme on monthly food commodities, and contribution of the cash grant programme on purchase of nutritious foods.
Methods: The descriptive cross-sectional survey of households enrolled in the Benazir Income Support Programme was conducted during July and August, 2013, in Matiari district of the Sindh province of Pakistan. Monthly household food expenditure on food commodities and use of the cash grant on type of food purchased was assessed through structured interviews of the beneficiaries. Birth defects are complicated pathological processes. Many birth defects can be traced back to disrupted regulation of molecular signaling pathways during embryogenesis. One of the most important gene regulatory factors during embryo development is retinoic acid (RA). However, studying the specific roles of RA in each organ during embryogenesis in vivo is challenging. The Sandell laboratory has a conditional mutant mouse model that can potentially be used for studying the role of RA during embryogenesis by inducing stage-specific RA deficiency. Brain glucose-sensing neurons detect glucose fluctuations and prevent severe hypoglycemia, but mechanisms mediating functions of these glucose-sensing neurons are unclear. Here we report that estrogen receptor-α (ERα)-expressing neurons in the ventrolateral subdivision of the ventromedial hypothalamic nucleus (vlVMH) can sense glucose fluctuations, being glucose-inhibited neurons (GI-ERαvlVMH) or glucose-excited neurons (GE-ERαvlVMH). Hypoglycemia activates GI-ERαvlVMH neurons via the anoctamin 4 channel, and inhibits GE-ERαvlVMH neurons through opening the ATP-sensitive potassium channel. Further, we show that GI-ERαvlVMH neurons preferentially project to the medioposterior arcuate nucleus of the hypothalamus (mpARH) and GE-ERαvlVMH neurons preferentially project to the dorsal Raphe nuclei (DRN). The gut microbiota and its metabolites – namely short chain fatty acids (SCFAs) – interact with the digestive, immune, and nervous systems. Microbiota with disrupted composition are highly associated with obesity, gastrointestinal symptoms, and chronic inflammation. Levels of SCFAs in the feces can represent dynamics of the microbiota, and they represent one mechanism by which the microbiota interacts with its host. These bypass proteins can escape the rumen to supply additional amino acids needed to support milk and protein yield. Resistance training has been shown to have several positive benefits to health including increasing muscle size and strength, reducing risk of sarcopenia with aging, and is associated with reduced risk of mortality. A cornerstone in accomplishing these goals is to progressively overload the muscle by increasing training volume to promote muscle protein synthesis following training stimulation. Folate is an essential B vitamin that serves as a primary one-carbon carrier in a number of essential cellular reactions; among these reactions are synthesis of purines, thymidylate, and methionine. As a result of these synthesis reactions, folate plays a key role in regulating nucleic acid metabolism, amino acid metabolism, maintenance of DNA stability, and production of S-adenosylmethionine for methylation of nucleic acids, neurotransmitters, phospholipids, histones, and other proteins. This project was funded by the Western Dairy Center at Utah State University as part of a multi-pronged approach to improve the current understanding of using concentrated milks in cheese making. Concentrated milk for this study was provided by South Dakota State University.
This study compared the effect of different concentration factors of milk on curd moisture levels, fat content, and cheese curd yields. To see if these results could be improved (i.e. remove more moisture and retain more fat) milk samples were also subjected to limited pressure homogenization (microfluidization) treatments.

Maillard reaction products (MRPs) are generated when proteins or amino acids are heated with reducing sugars. In previous studies, baking whole diet pellets at a high temperature has been the most common way to promote MRP formation. However, baking diets also induces other chemical reactions besides MRP production, for example lipid oxidation. In this study, only casein and sugars were cooked to generate MRPs. Thus, a complementary experiment was conducted to determine how baking diet pellets affects lipid oxidation.

For producers in more temperate areas, such as the Intermountain West, poor nutrition during the second trimester of gestation is common due to seasonal changes in forage and nutrient availability. The majority of muscle fibers are formed and adipogenesis is initiated in the second trimester, making it a critical time for skeletal muscle and adipose development in beef cattle. However, the extent to which these changes persist in the offspring postnatally is unknown. Thermosonication is the application of soundwaves at temperatures ≥50°C. It can be used to improve functional properties, overall quality, and shelf life of dairy products. Milk is concentrated before being spray dried and currently milk concentration is limited by increased viscosity. Decreasing the viscosity of concentrates prior to spray drying could be economically beneficial to dairy processors. Results from this study showed that that thermosonication significantly reduced the viscosity of concentrates such as reconstituted milk protein concentrate (rMPC) and reconstituted skim milk powder (rSMP). Zika virus is a single-stranded positive sense RNA virus that attracted international attention in 2015 when an epidemic broke out in Brazil. This vector borne virus is transmitted by mosquitos and is especially concerning for pregnant women because the virus can affect the development of the fetus. One known complication is the destruction of infected retinal epithelial cells. The transduction of light is interrupted due to cell death and results in blind spots. Background: Type 2 diabetes (T2D) is a worldwide epidemic and a leading cause of death in Mexico, with a prevalence of 15.9%, and >70% of diagnosed adults have poor glycemic control [glycated hemoglobin (HbA1c) >7.5%]. We developed a diabetes self-management education program contextualized to the study population, including dietary preferences, health literacy, and health system.

The purpose of this study was to assess factors associated with food insecurity among undergraduate students at the University of New Mexico (UNM). New Mexico has a higher estimated prevalence of adult food insecurity compared to the United States. The study design was a cross-sectional survey that collected self-reported socio-demographic data (race/ethnicity, age, living conditions, etc.) and food security status using an adapted 10-item USDA Adult Food Security Survey Module (AFSSM) from 83 undergraduate students enrolled in the UNM College of Education (COE). Background: Approximately 52% of fruits and vegetables are wasted during several stages of post-harvest, sale, and consumption. In 2018, 1.45 million tons of carrots were produced in the United States. Carrot leaves (tops) are either wasted or used in animal consumption. Therefore, input resources are wasted (Sustainable Development Goal (SDG) #12) and potential nutritional value is not utilized (SDG #2).
