The Effect Of A Single Dose Of Beetroot Juice On Speed, Strength, And Power In Healthy Recreationally Active Females., Maya A. Hammer, Ryan Kenney, Katie Price, Chandler Riley, Alyssa Riley, Courtney Merrill, Adam Pennell, Rachel Tan
Seaver College Research And Scholarly Achievement Symposium
Nitrate-rich beetroot juice (BR) improves muscle contraction which is relevant for intense intermittent-type sports. However, few studies have examined the effect of BR ingestion on performance using sport-specific exercise protocols. Moreover, there is a scarcity of research that include female participants which limits real world application given that females potentially have different responses to BR ingestion. The purpose of the present study was to examine the effect of BR supplementation on speed, acceleration, strength and power before and after fatigue in females. In a double-blind, randomized crossover design, 15 recreationally active females consumed BR and nitrate-depleted placebo juice (PL) ~2.5 …

The Effects Of Nitrate-Rich Beetroot Juice Supplementation On Nonverbal Executive Function In Healthy Recreationally Active Females, Chandler F. Riley, Alyssa Riley, Maya A. Hammer, Ryan Kenney, Katie Price, Courtney Merrill, Adam Pennell, Rachel Tan
Seaver College Research And Scholarly Achievement Symposium
Nitrate-rich beetroot juice (BR) supplementation has been reported to preserve executive function (i.e. decision making and reaction time) before and after a simulated soccer match in recreationally active males, which may be due to enhanced cerebral blood flow. However, the literature examining the physiological response following BR ingestion in females is scarce, which hampers the extrapolation of results since physiological sex-differences may exist. Therefore, the purpose of this study was to assess if BR ingestion influenced executive function in an unfatigued and fatigued state in healthy recreationally active females. In a double-blind, randomized crossover design, 20 females consumed 140 mL …

Using in vivo muscle stem cell (satellite cell)-specific extracellular vesicle (EV) tracking, satellite cell depletion, in vitro cell culture, and single-cell RNA sequencing, we show satellite cells communicate with other cells in skeletal muscle during mechanical overload. Early satellite cell EV communication primes the muscle milieu for proper long-term extracellular matrix (ECM) deposition and is sufficient to support sustained hypertrophy in adult mice, even in the absence of fusion to muscle fibers. Satellite cells modulate chemokine gene expression across cell types within the first few days of loading, and EV delivery of miR 206 to fibrogenic cells represses Wisp1 expression …

Obesity during pregnancy increases the risk for maternal complications like gestational diabetes, preeclampsia, and maternal inflammation. Maternal obesity also increases the risk of childhood obesity, intrauterine growth restriction (IUGR) and diabetes to the offspring. Increased circulating free fatty acids (FFAs) in obesity due to adipose tissue lipolysis induces lipoapoptosis to hepatocytes, cholangiocytes, and pancreatic-β-cells. During the third trimester of human pregnancy, there is an increase in maternal lipolysis and release of FFAs into the circulation. It is currently unknown if increased FFAs during gestation as a result of maternal obesity cause placental cell lipoapoptosis. Increased exposure of FFAs during maternal …

The health effects of omega-3 fatty acids have been controversial. Here we report the results of a de novo pooled analysis conducted with data from 17 prospective cohort studies examining the associations between blood omega-3 fatty acid levels and risk for all-cause mortality. Over a median of 16 years of follow-up, 15,720 deaths occurred among 42,466 individuals. We found that, after multivariable adjustment for relevant risk factors, risk for death from all causes was significantly lower (by 15-18%, at least p < 0.003) in the highest vs the lowest quintile for circulating long chain (20-22 carbon) omega-3 fatty acids (eicosapentaenoic, docosapentaenoic, and docosahexaenoic acids). Similar relationships were seen for death from cardiovascular disease, cancer and other causes. No associations were seen with the 18-carbon omega-3, alpha-linolenic acid. These findings suggest that higher circulating levels of marine n-3 PUFA are associated with a lower risk of premature death.

Preceptorship Within Accredited Nutrition And Dietetics Programs: A Pragmatic Mixed Methods Study, Angela K. Brekken
Dissertations, Theses, and Projects
The purpose of this pragmatic mixed-methods study was to identify the factors that impact a nutrition professional’s preceptorship decision and potential solutions to combat preceptor shortages within accredited nutrition and dietetics programs. Homan’s social exchange theory provided the theoretical framework that if perceived costs of preceptorship outweigh the perceived benefits, then the activity will cease.
Phase one of the study included an online mixed-methods questionnaire. Phase two included a qualitative focus group and interview with self-identified volunteers from phase one. Quantitative analysis through SPSS included descriptive statistics (means and standard deviations) and inferential statistics (one-way ANOVA). Qualitative data for both …

Creatine (Cr) is a ubiquitous molecule that is synthesized mainly in the liver, kidneys, and pancreas. Most of the Cr pool is found in tissues with high-energy demands. Cr enters target cells through a specific symporter called Na+/Cl--dependent Cr transporter (CRT). Once within cells, creatine kinase (CK) catalyzes the reversible transphosphorylation reaction between [Mg2+:ATP4-]2- and Cr to produce phosphocreatine (PCr) and [Mg2+:ADP3-]-. We aimed to perform a comprehensive and bioinformatics-assisted review of the most recent research findings regarding Cr metabolism. Specifically, several public databases, repositories, and bioinformatics tools were utilized for this endeavor. Topics of biological complexity ranging from structural …

Liver regeneration is critical to survival after traumatic injuries, exposure to hepatotoxins, or surgical interventions, yet the underlying signaling and metabolic pathways remain unclear. In this study, we show that hepatocyte-specific loss of the mitochondrial deacetylase SIRT3 drastically impairs regeneration and worsens mitochondrial function after partial hepatectomy. Sirtuins, including SIRT3, require NAD as a cosubstrate. We previously showed that the NAD precursor nicotinamide riboside (NR) promotes liver regeneration, but whether this involves sirtuins has not been tested. Here, we show that despite their NAD dependence and critical roles in regeneration, neither SIRT3 nor its nuclear counterpart SIRT1 is required for …

Selected Honors Theses
Osteoarthritis (OA) is a prevalent joint disease that results from the degradation of articular cartilage, leading to inflammation, pain, and eventual joint failure. At one time, it was thought that OA was only the result of the natural decline experienced in old age; however, various risk factors have now been identified that may contribute to an increased risk for developing OA. Risk factors may include joint loading, altered biomechanics, obesity, and joint injury, to which athletes are exposed at a high rate. NFL athletes are one group of athletes that have continued to show a high prevalence of arthritis in …

Rejection Of African Indigenous Food: The Case Of Rwanda, Eugene Baraka
NUTR/GLST 498b: Global Research Experiences in Nutrition and Health
Rwanda has one of the highest stunting rates among children globally, and malnutrition remains one of the most pressing public health issues. Lack of diversified diets, due to colonialization and nutrition transition, is the leading cause of the double burden of malnutrition in the country where the progress to reduce undernutrition is slow and obesity rates are rapidly rising. Consumption of indigenous foods has proven to diversify diets, but very few studies have been conducted to assess which ones are available for consumption in Rwanda. The purpose of this study was to assess the availability and use of indigenous foods …

Purification And Functional Characterization Of The Iron-Responsive Transcription Factor Aft1 From C. Glabrata, Jade Ikahihifo-Bender
Senior Theses
Due to its unique ability to serve as both an electron donor and acceptor, iron is utilized as a co-factor for many biological processes, including electron transfer, oxygen binding, and vitamin synthesis. Iron is also a key factor during fungal infections as the human host and invading pathogens battle over limited iron pools. The primary iron-responsive transcription factor Aft1 in the opportunistic pathogenic yeast Candida glabrata responds to iron deficiency by activating expression of iron acquisition genes. However, the mechanisms for sensing intracellular iron levels and regulating Aft1 activity in response to iron are unknown. The C. glabrata iron regulation …

The Importance Of Nutrition And Preventing Malnutrition In Older Adults: A Literature Review And Informational Booklet, Sophie Johnson
Honors Program: Senior Projects (Public)
Over years of studying nutrition science and gerontology, there was very little information in classes that combined these two important topics. Older adults are often classified as those above the age of 65 years old. There is a growing number of older adults in the United States, which increases the need for information on how nutrition and aging are interlaced. As humans age, multiple factors can impact nutrition. Nutrition involves consuming the proper amount of nutrients to maintain body function. There are physiological, physical, socioeconomic and medication factors that can all influence nutrition status. It is important to be aware …

Antioxidant intake has been suggested to be associated with a reduced osteoporosis risk, but the effect of dietary total antioxidant capacity (TAC) on bone health and the risk of osteoporosis remains unclear. We aimed to assess the hypothesis that dietary TAC is positively associated with bone mass and negatively related to the risk of osteoporosis in Korean women. This cross-sectional study was performed using data from the Korea National Health and Nutrition Examination Survey. Dietary TAC was estimated using task automation and an algorithm with 24-h recall data. In total, 8230 pre-and postmenopausal women were divided into four groups according …
