Modern societies have significantly transformed people's lifestyles, leading to a substantial increase in physical inactivity, which concerns 23% of adults and 81% of adolescents worldwide. Physical inactivity is a major factor contributing to the emergence of chronic diseases, most prominently Type 2 Diabetes (T2D), which exhibits a high prevalence in many countries. T2D is characterized by elevated blood glucose levels due to cells’ responsiveness to insulin. The shift towards inactivity likely occurred more rapidly than the genome's capacity to adapt, resulting in the metabolic dysfunctions underlying the development of T2D. Revisiting The Master Food Volunteer Program: Examining How To Enhance Nutrition Education In The United States, Stacey Viera, Lindsey Haynes-Maslow

America’s diet-related illness crisis intersects with a lack of nutrition literacy, nutrition security, and systemic inequities. The Cooperative Extension Service’s (CES) national infrastructure could potentially provide equitable access to quality nutrition education in the US utilizing a Master Food Volunteer (MFV) model. This research brief examined preliminary evidence for the MFV model as a support for CES agents and paraprofessionals, and results show a paucity of evidence. Further research and a pilot program with pre-established measures for health-related knowledge and behaviors could elucidate the model’s potential to increase equitable access to evidence-based programming, nutrition, and implementation guidance.

The portion size of common food items consumed at home, restaurants and fast-food establishments in the United States (US) has increased since the 1970s, with the portion size of meals and beverages in several restaurants exceeding the US Department of Agriculture (USDA) and Food and Drug Administration recommendations. Portion size has continued to grow in parallel with increasing body weights and food waste. According to USDA, 35% of the US population suffers from obesity while 40 million people are food insecure. In this correspondence, we explain the reasoning for invalidity of the analysis choices by Kolberg et al., and provide the results produced using correct statistical procedures for their study design. Reassuringly, we could verify the original conclusions. That is, results of the corrected statistical models are similar to the results of the original analysis. Regardless of the magnitude of difference that corrected statistical methods make, results and conclusions that are derived from invalid methods are unsubstantiated. By verifying the results, we allow the readers to be assured that the published conclusions in the study by Kolberg et al. now rest …

Background: Accurate estimation of dietary intake is challenging. However, whilst some progress has been made in high-income countries, low- and middle-income countries (LMICs) remain behind, contributing to critical nutritional data gaps. This study aimed to validate an objective, passive image-based dietary intake assessment method against weighed food records in London, UK, for onward deployment to LMICs.
Methods: Wearable camera devices were used to capture food intake on eating occasions in 18 adults and 17 children of Ghanaian and Kenyan origin living in London. Participants were provided pre-weighed meals of Ghanaian and Kenyan cuisine and camera devices to automatically capture images …

Time, Money, Or Knowledge: What Factors Are Associated With Implementing Youth Cooking Programs?, Alison C. Berg, Nancy O. Taylor, Courtney S. Brown, Silvia Q. Giraudo

Research suggests participating in youth hands-on cooking programs, like those offered by Extension and 4-H, can improve nutrition behaviors and reduce the risk for obesity. We surveyed [STATE] Extension professionals (n = 127) to explore factors (e.g., employee characteristics, resources, county demographics) related to offering youth hands-on cooking programs and curricula used. Over 2/3 of participants offer programs and reported creating their own curriculum. More years of experience, having received Extension Specialist training, and increased confidence were positively related to offering these programs. Results suggest training could increase confidence and program implementation and standard curricula may be needed.

Background The relationship between alcohol consumption and ectopic fat distribution, both known factors for cardiovascular disease, remains understudied. Therefore, we aimed to examine the association between alcohol consumption and ectopic adiposity in adults at risk for cardiovascular disease. Methods and Results In this cross-sectional analysis, we categorized alcohol intake among participants in MESA (Multi-Ethnic Study of Atherosclerosis) as follows (drinks/day): <1 >(light drinking), 1 to 2 (moderate drinking), >2 (heavy drinking), former drinking, and lifetime abstention. Commercial feed formulation is typically based on linear programming (LP) algorithms that derive a least-cost solution for a blend of ingredients that meet specific nutrient criteria. Broiler production has evolved significantly over the years to meet a constant growing demand for animal protein. Rooted on major advances in genetics, facilities and environmental conditions, management, and specially, in nutrition and health, the U.S. broiler industry improved tremendously in productivity and efficiency, clearly demonstrated by a marked reduction of the average market age (i.e., days to market), while significantly increasing average market weight, breast meat yield and feed efficiency (National Chicken Council, 2023). Essential trace minerals (Zn, Cu, Fe, Mn, Se and I) are traditionally included as supplements through mineral premixes in poultry feeds. In comparison to other essential nutrients, as well as energy, they are scarcely studied. The essentiality of a nutrient, by definition, refers to the nutrient role in normal body function, such as growth or egg production, and considers that they cannot be synthesized by the body and, therefore, must be supplied from the feed.

Sprouting of soybeans can enhance the release of health-beneficial bioactive compounds, especially peptides, and metabolites, while gastrointestinal (GI) digestion alters their biotransformation and bioaccessibility. The present study aimed to evaluate the effect of soybean sprouting and GI digestion in modulating its anti-inflammatory activity. Soybeans were soaked in water overnight (Day 0) and sprouted for two and four days, subjected to simulated GI digestion, and human intestinal epithelial cells (Caco-2) were pretreated (2 h) with soybean sprout digest (SSD: 1000 μg/mL) before inflammation induction with IL-1β. Pre-treatment with Day 4 SSD specifically reduced the secretion of cytokine IL-8 by 19.5%. Sprouting …

Fifty-six percent of school-aged children participate in team sports, yet there is limited evidence on how participation in youth sports impacts the dietary behaviors of participants and their families. Our team surveyed parents and caregivers of children participating in recreation league youth sports (n = 178) to assess the foods and beverages offered as team snacks and factors that influence team snack choices. Juice was the most popular beverage, and crackers were the most popular snack reported by parents. The experiment was conducted to determine the digestible energy (DE), metabolizable energy (ME), and apparent total tract digestibility (ATTD) of gross energy in ground yellow corn, rice bran, and copra meal when fed to Philippine native pigs. There are previous epidemiological studies reporting associations between antibiotic use and psychiatric symptoms. Antibiotic-induced gut dysbiosis and alteration of microbiota-gut-brain axis communication has been proposed to play a role in this association. In this systematic review and meta-analysis, we reviewed published articles that have presented results on changes in cognition, emotion, and behavior in rodents (rats and mice) after antibiotic-induced gut dysbiosis. We searched three databases—PubMed, Web of Science, and SCOPUS to identify such articles using dedicated search strings and extracted data from 48 articles. Introduction
The treatments and prognosis of bacterial meningitis differ greatly from those of aseptic meningitis, making early identification and differentiation essential. Several different clinical prediction rules have been developed to distinguish bacterial meningitis from aseptic meningitis. We sought to validate one clinical prediction rule for pediatric patients utilizing a centralized data warehouse that collects daily data from 184 hospitals across the United States.
Methods
We retrospectively collected data on all patients aged 29 days to 14 years who presented to Hospital Corporation of America (HCA) Healthcare hospitals from January 1, 2016, to May 31, 2021, with a diagnosis of meningitis. …

While near-infrared spectroscopy has been used in research and athletic development for some time, recent technological advances have made it accessible as an undergraduate learning tool. This teaching resource describes how near-infrared spectroscopy (NIRS) can be used in an in-person kinesiology laboratory. This activity illuminates nutrition principles, including issues with using supplements, deceptive marketing and labeling practices, and the value of nutrient-dense whole foods by observing vasodilation as a result of nitrate consumption in the form of whole beets and a beetroot supplement. Background: Most adolescents have an excessive sodium intake associated with hypertension and cardiovascular disease (CVD). Parents have an important role in controlling adolescents’ nutritional intake, including sodium, through healthy eating. Mindful eating is considered healthy eating with the potential to control nutritional intake. This study aims to analyze the association of parenting style and mindful eating with sodium intake among adolescents.

Histamine from our diet or gut microbes can trigger gastrointestinal disturbances, and resistant potato starch (RPS) has previously been shown to alleviate these symptoms while increasing levels of health-associated bacteria such as Akkermansia through unknown mechanisms. Post hoc exploratory metabolomic analysis of serum amino acid, amine, and carnitine metabolites in participants consuming 3.5 g/day RPS or placebo (n = 48) was performed using liquid chromatography-mass spectrometry to determine whether RPS positively influences histamine metabolism and related parameters. Aim of this comprehensive review is to document the up-dated data about pharmaceutical potential of Stevia rebaudiana Bertoni with special focus on its antioxidant activity. A total of 184 research articles were reviewed and five research engines were used to collect the data. The S. rebaudiana (Asteraceae) is indigenous to South America, now cultivated in many countries worldwide to be used as a natural bio-sweetener.
