In a cross-sectional pilot study, we examined eating behaviors in patients (N= 24) approximately 6 years after gastric bypass surgery. Anthropometric measures, personal interviews, and 7 days of food records were collected. A mean body mass index of 33.7±8 was reported, with 75%(18/24) sustaining a weight loss 50% or more of their excess body weight. A mean total caloric intake of 1429±411 cal was reported: 43% carbohydrate, 17% protein, and 39% fat. Subjects reported “returning to old eating habits” with a diet high in liquid calories (soda, coffee drinks, sports drinks, alcohol), sweets (chocolate, cookies), convenience foods, and fast food …

Understanding The Behavior And Attitude Of Professional Athletes In Saudi Arabia Toward Dietary Supplements, Sulaiman O. Aljaloud Jan 2013

Understanding The Behavior And Attitude Of Professional Athletes In Saudi Arabia Toward Dietary Supplements, Sulaiman O. Aljaloud

Dissertations

A dietary supplement is defined as a product taken orally that contains a "dietary ingredient" (vitamins, minerals, herbs, amino acids, enzymes, etc.), and is intended to supplement one's diet. Dietary supplements include plant extracts and concentrates from foods. Supplements help provide required nutrients to fulfill nutritional levels for daily training or competitive performance, and can help remedy nutritional deficiencies. Therefore, it is important that sports professionals have a thorough knowledge of these supplement products. However, athletes need to be informed about the use and possible benefits, side effects, and risks associated with the use of dietary supplements. Four objectives guided …

Disordered Eating Habits And Behaviors Among Elite Collegiate Athletes, Ann M. Armes

Theses and Dissertations--Nutrition and Food Systems

Eating disorders and disordered eating habits and behaviors were measured using the Eating Disorders Inventory-3 Referral Form (EDI-3 RF). The sample consisted of 159 elite, collegiate student athletes, males and females, aged 18 to 22. Five sports were represented, including basketball, gymnastics, soccer, swimming & diving, and volleyball. Overall, findings support the position that athletes, as a distinct population, and specifically female athletes and those that participate in lean sports, are at an increased risk for disordered eating behaviors and diagnosable eating disorders. Of the 159 total athletes that completed the questionnaire, 33% (n=53) of the athletes sampled met one …

Food Webs And Food Sovereignty: Research Agenda For Sustainability, Charles A. Francis, Michelle Miller, Molly Anderson, Nancy Creamer, Michelle Wander, Jacob Park, Thomas Green, Brent Mccown

Department of Agronomy and Horticulture: Faculty Publications

Future food production will be constrained by the scarcity of fossil fuel and fresh water as well as increasing intensity and unpredictability of weather events and climate changes. The assurance of food security and equity for many consumers is complicated by concentration of ownership of land and other production resources, as well as a global corporate food systems model that is driven by profit at the expense of people and the environment. To assess potential alternatives to the contemporary global food chain, well focused research is needed on local food production and food webs where small- and midscale family farms …

Polyphenols, Inflammation, And Cardiovascular Disease, Christy Tangney, Heather E. Rasmussen Jan 2013

Polyphenols, Inflammation, And Cardiovascular Disease, Christy Tangney, Heather E. Rasmussen

Department of Nutrition and Health Sciences: Faculty Publications

Polyphenols are compounds found in foods such as tea, coffee, cocoa, olive oil, and red wine and have been studied to determine if their intake may modify cardiovascular disease (CVD) risk. Historically, biologic actions of polyphenols have been attributed to antioxidant activities, but recent evidence suggests that immunomodulatory and vasodilatory properties of polyphenols may also contribute to CVD risk reduction. These properties will be discussed, and recent epidemiological evidence and intervention trials will be reviewed. Further identification of polyphenols in foods and accurate assessment of exposures through measurement of biomarkers (i.e., polyphenol metabolites) could provide the needed impetus to examine …

Rats Acquire Stronger Preference For Flavors Consumed Towards The End Of A High-Fat Meal, Kevin P. Myers Jan 2013

Rats Acquire Stronger Preference For Flavors Consumed Towards The End Of A High-Fat Meal, Kevin P. Myers

Faculty Journal Articles

Rats learn to prefer flavors associated with postingestive effects of nutrients. The physiological signals underlying this postingestive reward are unknown. We have previously shown that rats readily learn to prefer a flavor that was consumed early in a multi-flavored meal when glucose is infused intragastrically (IG), suggesting rapid postingestive reward onset. The present experiments investigate the timing of postingestive fat reward, by providing distinctive flavors in the first and second halves of meals accompanied by IG fat infusion. Learning stronger preference for the earlier or later flavor would indicate when the rewarding postingestive effects are sensed. Rats consumed sweetened, calorically-dilute …

Microbiology Of Cheddar Cheese Made With Different Fat Contents Using A Lactococcus Lactissingle-Strain Starter, Jeff Broadbent, C. Brighton, D. J. Mcmahon, N. Farkye, M. E. Johnson, J. L. Steele

Nutrition, Dietetics, and Food Sciences Faculty Publications

Flavor development in low-fat Cheddar cheese is typified by delayed or muted evolution of desirable flavor and aroma, and a propensity to acquire undesirable meaty-brothy or burnt-brothy off-flavor notes early in ripening. The biochemical basis for these flavor deficiencies is unclear, but flavor production in bacterial-ripened cheese is known to rely on microorganisms and enzymes present in the cheese matrix. Lipid removal fundamentally alters cheese composition, which can modify the cheese microenvironment in ways that may affect growth and enzymatic activity of starter or nonstarter lactic acid bacteria (NSLAB). Additionally, manufacture of low-fat cheeses often involves changes to processing protocols …

The Mediating Role Of Dietary Patterns On The Relation Between Acculturation, Psychosocial Factors, And Cardiovascular Disease Risk Factors In The U.S. - Mexico Border, Ximena Burgos

Open Access Theses & Dissertations

Chronic diseases affect both, developed and developing countries around the world. In the U.S., cardiovascular diseases (CVD) are the leading cause of death for all groups including Hispanics (Heron, 2009). Hispanics are disproportionally affected by CVD and experience risk factors at higher rates than non-Hispanic whites (Swenson, 2002). Although CVD are among the most expensive and widespread health problems, they are among the most preventable. Evidence shows that diet plays a very important role in the development of chronic diseases; current dietary changes are partially responsible for the increasing epidemic of chronic diseases worldwide. It is well established that the …

Variations Of Ghrelin, Growth Hormone, And Insulin-Like Growth Factor I In The West Indian Manatee (Trichechus Manatus), Rachel Lynn Cimino

UNF Graduate Theses and Dissertations

The metabolic hormones ghrelin, growth hormone, and insulin-like growth factor I are influenced by developmental age, sex, and nutritional status in domestic and free-ranging species. However the role these hormones play has not previously been explored in sub-tropical/ tropical mammals. Furthermore, the seasonality of species with less dynamic environmental cues, such as the West Indian manatee, have not been studied. The West Indian manatee is and endangered species distributed in the southeastern United States and throughout the Caribbean basin, and its nutritional physiology is influenced by environmental factors. Understanding the hormone response to nutritional status in this species and its …

An Independent Audit Of The Australian Food Industry's Voluntary Front-Of-Pack Nutrition Labelling Scheme For Energy-Dense Nutrition-Poor Foods, Owen B. Carter, Brennen W. Mills, Tina Phan, Elanie Lloyd

Research outputs 2013

Background/Objective: Since 2006, the Australian food industry has promoted its front-of-pack (FOP) food labelling system-the Daily Intake Guide (DIG)-as a success story of industry self-regulation. With over 4000 products already voluntary featuring the DIG, the industry argues that government regulation of FOP nutrition labelling is simply unnecessary. However, no independent audit of the industry's self-regulation has ever been undertaken and we present the first such Australian data.

Subjects/Methods: Energy-dense nutrient-poor (EDNP) snacks were audited at nine Australian supermarkets, including biscuits, candy, ice creams, chocolates, crisps, sports drinks, energy drinks, flavoured milks, sweetened juices and soft drinks. In these categories nutrition …

Malnutrition In Sickle Cell Anemia: Implications For Infection, Growth And Maturation, Hyacinth I. Hyacinth, Oluwatoyosi A. Adekeye, Christopher S. Yilgwan

Journal of Social, Behavioral, and Health Sciences

Sickle cell anemia (SCA) is a genetic disease that affects mostly individuals of African and/or Hispanic descent, with the majority of cases in sub-Saharan Africa. Individuals with this disease show slowed growth, delayed sexual maturity, and poor immunologic function. These complications could partly be explained by the state of undernutrition associated with the disease. Proposed mechanism of undernutrition include protein hypermetabolism, decreased dietary intake possibly from interleukin-6-related appetite suppression, increased cardiac energy demand/expenditure, and increased red cell turnover. All the above mechanisms manifest as increased resting energy expenditure. Nutritional intervention utilizing single or multiple nutrient supplementation has led to improved …

Disaster has many faces: earthquake, fire, hurricane, tornado, severe thunderstorm, winter storm, financial uncertainty, and more. Disasters can disrupt the normal services we come to expect and sometimes take for granted. Examples are electricity, food, and water. FEMA, the Federal Emergency Management Agency, advocates disaster preparedness. They advise people to be informed, make a plan, and prepare an emergency kit. A major part of that emergency kit is food and water for you and your family. But, what types of food should you store? How much food should you store? How will you cook it?  Does it need to be …

Microflora Of Traditional Mexican Corn Masa And Its Effect On Folic Acid Degradation, Stephen J. Adolphson Dec 2012

Microflora Of Traditional Mexican Corn Masa And Its Effect On Folic Acid Degradation, Stephen J. Adolphson

Theses and Dissertations

Many Mexican women consume inadequate amounts of folic acid. Fortification of the corn tortilla could be an effective way to help increase the folic acid levels among the Mexican population. Previous studies have shown significant folic acid losses in fortified tortilla dough (masa) as it is held before baking. This loss in folic acid could be due to degradation by lactic acid bacteria naturally present in the masa. The microflora of traditionally made nixtamalized corn masa from six tortilla mills in Guadalajara, Mexico were isolated and characterized, and their effect on folic acid content was evaluated. Isolated bacteria were identified …
