A School Lunch Menu Planning Guide For Meals Adequate In Vitamin A, Vitamin C, And Iron, Kathleen E. Cahn

Recent nutritional surveys suggest that diets in the United States are often inadequate in one or more nutrients. In the West Virginia Nutrition Survey, 1969, unacceptable nutrient levels were most prevalent in children under seventeen years of age. Preliminary biochemical data resulting from the survey suggest that iron, vitamin A, and ascorbic acid are inadequately consumed. School lunches, as defined by the National School Lunch Program, are supposed to contribute a significant portion of the nutrients required daily by children.

In order to obtain proper muscle development in tissue culture, certain conditions must prevail. There is a delicate balance of factors, and elimination of even one of these factors leads to poor and improper development. Muscle cells grown in the absence of fibroblasts usually fail to differentiate. Therefore, proper development depends upon the presence of two cell types: myoblasts and fibroblasts. Investigators have demonstrated that the fibroblasts are necessary in that they produce collagen which is necessary for proper muscle development. A study was conducted on the alga Chlamydomonas reinhardtii to determine the range and optimum growth concentrations of phosphate and nitrate. There are only a few species of algae for which this type of data is known. Inorganic nutritional data is basic to the understanding of the complexities of phytoplankton ecology and eutrophication.
The "plus" strain of this heterothallic alga was cultured in a TRIS-buffered inorganic medium with various concentrations of sodium phosphate and potassium nitrate and adjusted to a pH of 7.4. The axenic cultures were evaluated at the end of 6 days with a spectrophotometer, at a wavelength …

It has become apparent in recent years that many centrally active agents possess potential anti-inflammatory capabilities. The central or peripheral mechanisms of action for these agents have not been delineated nor has their clinical efficacy baan established or refuted. The centrally active drugs, cryogenine and tetrabenazine (a benzoquinolizine derivative), previously have been shown in this laboratory to inhibit certain models of induced inflammation. The present study in rats verifies the anti-inflammatory properties of cryogenic and established that a structurally related series of benzoquinolizine derivatives possessed the capability of inhibiting both exudative (carrageenan-induced pedal edema) and proliferative (cotton pellet granuloma) models …

In order to determine the duration of the effect of glucose, fructose, sucrose, honey, starch, and orange juice on neutrophilic phagocytosis, 10 subjects underwent a complete series of carbohydrate tolerance tests. Blood samples were drawn at specific time periods following ingestion of 100 grams of each carbohydrate. Blood was then analyzed for glucose and phagocytic index (the mean number of bacteria engulfed per leukocyte); a red blood cell and white blood cell count and differential white cell count were done also on about 1/2 of the samples. Gastrocolic And Duodenocolic Fistulas: An Experimental Study, Joseph L. Ponka, A. Karim Shaalan, P. C. Pesaros

In an experimental study of gastrocolic and duodenocolic fistulas, it was clearly seen in 10 animals that duodenocolic fistulas result in the most serious loss of nutrition. Death from starvation occurred in all 42 animals in 30 days. Gastrocolic fistulas similarly resulted in weight loss and death of the animals in an average of 42 days. Lengthy fistulas between the stomach and colon caused no obvious disturbances in the physiology of the gastrointestinal tract. The significant microscopic changes included destruction of the mucous membrane and a decrease in size of the villi. The other noteworthy observation was that fistulous aggregations …

Available evidence indicated that the deficiency of a specific nutrient in the diets adversely affect antibody production from a mild to severe degree. Studies of the effects of diet partially deficient in various essential nutrients on antibody response is meagre.
Twelve groups of weanling rats were fed with diets prepared by diluting the basal diet with 0 to 75 percent sucrose for 46 days and their antibody response was measured on the 28th, 40th and 46th day using Salmonella pullorum as the antigen. An experimental study was conducted on thirty primiparae during the postpartum period to determine if individualized instruction regarding infant feeding would result in a lower level of maternal concern in this area. The study sample was randomly and evenly divided into a control and an experimental group. It was statistically determined that the two groups were homogeneous in regard to age, education, occupation, previous information (prenatal classes and reading) and help at home. The study was to provide an approach to help teen-age unwed mothers increase their feelings of self-esteem and thereby attain a conceptual buffer for better coping with life. Self-esteem was defined as individual perception of the worth of oneself relative to that of significant others. The hypothesis tested was that the participating relationship a community health nurse has with a teen-age unwed mother will significantly increase the mother's self-esteem as measured by statistical Q-Sort analysis.

The purpose of this study was to evaluate the histopathological and clinical changes that occurred when a continuous supply of exogenous acid or base, at varying pH, was delivered adjacent to the gingival crest of the monkey. A related goal was to develop a monkey model system which would deliver test solutions continuously and atraumatically, to the experimental gingival sites.

Maximal amounts of prodigiosin were synthesized in either minimal or complete medium after incubation of cultures at 27 C for 7 days. Biosynthesis of prodigiosin began earlier and the range of temperature for formation was greater in complete medium. No prodigiosin was formed in either medium when cultures were incubated at 38 C; however, after a shift to 27 C, pigmentation ensued, provided the period of incubation at 38 C was not longer than 36 hr for minimal medium or 48 hr for complete medium. Washed, nonpigmented cells grown in either medium at 38 C for 72 hr could synthesize …

The purpose was to find the adjustments needed to make acceptable pies, cookies and muffins baked in the electronic oven. The products were evaluated by a taste panel and by objective tests. The results of both tests supported each other.
The best bottom pie crust had an extra tablespoon of liquid added to the pastry and was precooked before the filling was added. It was both flaky and tender.
No leavening and one-fourth more liquid produced the most acceptable cookies. They were more like standard cookie in height, texture, moisture and tenderness.

The influence on eating quality of beef of cooking method, sires, mineral (Fe, Mg, Zn, Na, K, and P), lipid, and nitrogen content was determined by objective measurements, sensory evaluations, cooking losses, and chemical analysis. Two adjacent arm and two adjacent rib roasts from 18 Herford animals were used. The arm and rib (sixth to eighth ribs) roasts were deboned, cut in half, and randomly assigned to the conventional or electronic ovens for dry roasting to the medium-rare stage (145 F, 147 F). Barley, cornstarch, crested wheatgrass, glucose, molasses and solka floc were fermented with rumen fluid obtained from sheep that were adapted or unadapted to feed grade biuret (Kedlor) in their diet. Each rumen fluid and substrate combination was subjected to three nitrogen treatments: (1) control, (2) nitrogen added as feed grade biuret and (3) reagent grade biuret in a factoral arrangement of treatments. In vitro fermentations were terminated at 0, 12, 24, and 36 hours and the protein nitrogen insoluble in trichloroacetic acid (TCA) was determined.

Growth and enterotoxin production by Staphylococcus aureus strains, in the presence of different starter [2:1 (V/V) blend of AM2:ML8 strains of Streptococcus lactis] levels was investigated. Sterile, 10 per cent non-fat dry milk was inoculated with S. aureus strains capable of producing all types of enterotoxins, and reduced levels of starters; and was incubated at 32 C for 24 hours. The pH and S. aureus population were determined at 2 hour intervals until 8 hours and at 24 hours. The inhibitory response of lactic streptococci was studied by spot-tests on a lawn of S. aureus strains. …

The incorporation of 3-14C-,B-hydroxy-, B-methylglutaric acid (HMG) vii into carotenoids of excised etiolated maize shoots, crude cell free extracts and soluble extracts (20, 000 x g) of maize was investigated. HMG was effectively incorporated into carotenoids of excised shoots, crude extracts and soluble extracts. The excised shoots, crude extracts and soluble extracts incorporated 2-14C-mevalonic acid (MVA) into carotenoids as well. The results indicated the presence of HMG-CoA reductase in the plant as well as an HMG activating enzyme. The soluble extract showed a pH optimum of 7. 0 for incorporation of HMG into …

This study was undertaken to determine the effect of four different combinations of treatments and storage; i.e., controlled atmosphere (2.5 percent O2 and 2.5 percent CO2), controlled atmosphere in combination with phaltan (1,000 ppm), controlled atmosphere with packaging in polyethylene bags, controlled atmosphere with phaltan and packaging in polyethylene bags, as well as conventional refrigeration, on the chemical composition of lettuce heads (Cultivar "Great Lakes") during 75 days of storage. A considerable amount of research has shown that a severe dietary deficiency of protein or vitamins will markedly depress antibody synthesis. Very little work has been done with the effect of mineral deficiencies on antibody production, and no evidence has been presented showing the relationship of the effects of small changes in nutrient intake to the sensitivity of the antibody response to small degrees of malnutrition and the relationship of dietary iron, calcium and vitamin D to the production of antibodies.
