Growing Healthy Habits: Impacts Of A Youth Community Garden For Children In Rural Mississippi, Olivia G. Degravelle

This study examines the implementation and outcomes of a Youth Garden Program conducted in Pontotoc, Mississippi. Funded by the Allstate Community Service Project Grant, the Youth Garden was constructed within the previously established Pontotoc Community Garden. The initiative comprised four weekly workshops designed for participants ranging from preschool to adolescence. Each session incorporated hands-on fruit and vegetable (FV) planting or harvesting, an educational lesson, and a complementary craft activity. Children’s FV consumption patterns, nutritional knowledge, and attitudes toward FV were assessed through pre- and post-program surveys. Ellagic Acid Reduces Inulin's Adverse Effects: A Combined Approach To Enhance Therapeutic Potential In Nonalcoholic Steatohepatitis, Tharani Senavirathna, Shafaei, Ricky Lareu, Lois Balmer

This mouse study investigates the efficacy of ellagic acid (EA), a potent antioxidant in fruits and nuts, and inulin, a prebiotic known for gut microbiota benefits, in nonalcoholic steatohepatitis (NASH). A Western-style diet (WD) was used to induce NASH in C57BL/6J male mice for 16 weeks. Mice then received EA (100 mg/kg/day, oral gavage, 5 days/week) and/or 5% inulin (w/w in diet) for 12 weeks while continuing WD. Inulin increased energy intake and trended toward higher body weight and fasting glucose. EA reduced liver weights and restored the liver-to-body weight ratio. Background: Hispanic youth are disproportionately impacted by obesity and subsequent type 2 diabetes (T2D) yet remain underrepresented in diabetes prevention research. Digital health interventions hold promise for increasing the accessibility to and engagement in disease prevention programming, particularly among high-risk populations. However, there is a significant gap in the literature regarding digital T2D prevention programs for adolescents or Hispanic youth.

Objective: The objective of this article is to describe the protocol for examining the feasibility of a 12-week digital diabetes prevention program among Hispanic adolescents with obesity.

Cytoreductive surgery (CRS) with hyperthermic intraperitoneal chemotherapy (HIPEC) is a high-risk, but potentially curative, treatment for peritoneal surface malignancies. This retrospective analysis was conducted between March 2023 and September 2025 at Sultan Qaboos Comprehensive Cancer Care and Research Centre, Muscat, Oman, with the objective of analysing perioperative outcomes and challenges in patients undergoing CRS with HIPEC. Data on demographics, intraoperative variables and postoperative outcomes were collected and statistically analysed. A total of 25 consecutive patients were included. Background/aim: Acute lymphoblastic leukemia (ALL) treatment is frequently complicated by infections, emergency visits, and therapy interruptions, yet early prediction of short-term clinical deterioration remains challenging. Traditional prognostic markers rely on static laboratory values, whereas dynamic hematologic fluctuations may provide earlier warning signals. This study presents and internally validates a clinically applicable prediction model based on dynamic hematologic parameters and clinician-documented symptoms for predicting short-term (7-day) clinical events in children with ALL.

Background/aim: Osteoporosis is a multifactorial skeletal disease that predominantly affects postmenopausal women and is characterized by reduced bone mass and an increased risk of fractures. Growing evidence suggests that the gut microbiota plays a pivotal role in bone metabolism through immunological, endocrine, and metabolic pathways, forming the basis of the so-called gut– bone axis. This study aimed to characterize gut microbiota composition in postmenopausal women with osteoporosis compared with healthy controls.

Ready-to-use therapeutic and supplementary foods (RUTF/RUSF) are a primary treatment for childhood malnutrition in Community Management of Acute Malnutrition (CMAM) programs. However, measuring intervention compliance is labor intensive and unreliable. We applied FoodSeq, a fecal genomic dietary assessment biomarker, in malnourished infants (3-15 months) from Matiari, Pakistan. FoodSeq identified a significant increase in the abundance of DNA from chickpea, a primary RUSF ingredient, during RUSF administration and captured region-specific complementary feeding practices, including age-inappropriate feeding practices such as wide-spread tea consumption. Gummy candies have emerged as one of the most popular dosage forms for multivitamins and nutraceutical supplements, including those for brain health. Gelatin is the primary gelling agent used to achieve the gummy texture; however, the influence of different gelatin sources on the physicochemical properties of gummies has not been systematically examined. This study investigated the physicochemical characteristics of gummies prepared with porcine, bovine, and fish gelatin. Glucagon-like peptide-1 (GLP-1) receptor agonists are effective for short-term weight reduction in adults with obesity, yet weight regain is frequent after discontinued use of the medication. Identifying sustainable dietary approaches that support long-term weight maintenance is imperative. The Mediterranean diet has been associated with improving metabolic health and resistant weight control, suggesting it may be an effective strategy for the transition off GLP-1 therapy. Amyotrophic lateral sclerosis (ALS) is a fatal neurodegenerative disorder characterized by progressive motor neuron loss. Emerging evidence suggests that alterations in gut microbiota—particularly reductions in butyrate-producing bacteria—may contribute to neuroinflammatory pathways involved in disease progression. Observational studies in patients with ALS and preclinical findings from transgenic mouse models demonstrate gut microbial dysbiosis, intestinal barrier dysfunction, and improved survival following butyrate supplementation, suggesting the potential role of butyrate availability in ALS pathophysiology. Dietary nitrate supplementation can improve blood pressure and contractile function of type II (fast twitch) muscle fiber contraction and force production. However, limited data are available for  women and dosing guidelines for women. The purpose of this study is to investigate if nitrate ingestion, provided as nitrate-rich beetroot juice, improves blood pressure and countermovement jumps and cycling sprint performance compared to nitrate-depleted beetroot juice placebo in women. The Role of the "Indulgent Mindset" as a Modulator for Neuropsychiatric Biomarkers and Self-Reported Mental Wellbeing

Objective: Limited understanding persists regarding how an "indulgent mindset" about food shapes neuropsychiatric outcomes. Building on the "milkshake study" demonstrating that mindset modulates ghrelin response independent of nutritional content, this pilot study examines whether an indulgent mindset intervention affects neuropsychiatric biomarkers and mental wellbeing.

Traditional metabolism instruction often leaves students struggling with pathway interconnectedness and metabolite flux. To foster systems thinking, we are developing an educational board game where students manipulate tokens to navigate physiological constraints and achieve target energy goals. Grounded in Design-Based Research (DBR), the game undergoes iterative refinement based on player feedback. The design utilizes constructivism by allowing students to "fail safely" and revise strategies in real-time, while leveraging embodied cognition to externalize abstract flux into the physical trading of resource tokens.

The rising prevalence of type 2 diabetes among adolescents highlights the need for early prevention-focused interventions. This capstone project developed and implemented an occupation-based educational program for middle school students targeting body awareness, nutrition, movement, and stress management. The program consisted of five interactive workshops addressing energy awareness, meal planning, social and environmental influences on health, movement-based regulation strategies, and coping skills. Hands-on activities, including energy check-ins, meal logs, movement stations, and coping toolbox development, were used to promote engagement and support the development of healthy routines.

Many individuals receiving cancer directed therapy are at risk of developing hyperglycemia and new, or worsening of, diabetes due to location of their cancer, treatment regimen, and/or prolonged use of steroids. Research shows that uncontrolled hyperglycemia can have detrimental effects on individuals’ response to cancer therapy, treatment associated toxicities, quality of life and overall mortality. Potassium is an essential macronutrient for plant growth and development, yet excessive potassium fertilization can induce salt stress with detrimental consequences for crop productivity and nutritional quality. Despite its agricultural relevance, potassium chloride induced stress remains significantly understudied compared to classical sodium-based salinity. This thesis investigates the physiological, biochemical, and molecular responses of Raphanus sativus to KCl stress using an integrated approach that combines germination assays, mineral profiling, and gene expression analysis.

This scoping review aimed to explore health interventions that address excessive caffeine consumption in college students aged 18–23 years. Excess caffeine intake is associated with a range of health concerns, including neurological, cardiovascular, and behavioral issues, highlighting the need for effective interventions to mitigate its impact on overall wellness. The literature exploring interventions aimed at modifying health behaviors among the college student population is notably limited. Furthermore, there has been a lack of studies replicating interventions aimed at reducing caffeine intake.
