The Effectiveness Of Nutrition Education: Comparing Registered Dietitian Educators With Dietetic Interns, Amy Gannon

The Department of Dietetics at Marshall University is a subcontracting agency with the West Virginia University Extension Service for the purposes of delivering nutrition education to children in low-income schools in a six-county radius in southwestern West Virginia through the Marshall University Nutrition Education Program (NEP). The method of lesson delivery includes an educational model that utilizes both registered dietitians (RD) and dietetic interns. The NEP is evaluated through several methods, including pre-/post-tests, teacher focus groups, and parental feedback surveys. To date, no evaluation has been completed to determine the effectiveness of dietetic interns’ delivery of nutrition education lessons compared …

Not-So-Neutral: An Exploration Of The Relationship Between Smartphones And Student Quality Of Life, Talis Rudzitis

As smartphones grow in purpose and function, they become more pervasive in the average college student’s life. Consequently, the more students integrate smartphones into their lives, the more consideration must be taken to understand the impact smartphones have on human life. This correlation study explored the relationship between smartphones and student quality of life. For the purpose of the study, “smartphone consumption” best communicated the variable “smartphones” and was measured by the average number of minutes participants spent on their smartphones per day. This essay explores the imperative to embrace a new model of education that will engage students in learning about the interconnectedness of our multi species world, sustainability, and global solidarity -- the belief "that unity of humankind can be established on the basis of some basic or core human values" (Korab-Karpowicz 305). Foreign language courses -- in particular advanced-level offerings that address literacy, critical thinking, and cultural comparisons -- are ideal settings for educating for sustainability literacy. Examining University Food Systems: Understanding Student Food Insecurity Levels And Food Waste At Minority-Serving Institutions, Amy Louise Gootee-Ash

Graduate Research Theses & Dissertations

This quantitative study investigated food insecurity levels and attitudes and behaviors towards food waste at minority-serving colleges (MSIs). A validated survey from the United States Department of Agriculture’s (USDA) Adult Food Security Survey Modules (AFSSM) was used to assess food security population levels. Paper 1 of the three included is a case study at a MSI (n = 229) that examined food security levels. No significant relationships at the p < .05 were found between food security and student ethnicity, living arrangements, meal plan enrollments, or grade-point averages. Paper 2 examined food security at three MSIs (n = 449) and two traditional, diverse schools (TDUs; n = 236). Food security levels between MSIs and TDUs were shown to be statistically significant (p < .05), while levels of student financial aid participation between MSIs and TDUs were not statistically significant. A comparison of food security levels at regional-state colleges in Delaware and Maryland reveal a significant difference in levels of food security (p < .05). The third paper found no significant relationship between students (n = 222) who were exposed to food waste education campaigns and reported levels of food waste behaviors. No statistical significance could be discerned between meal plan offerings and reported plate waste, which is food thrown away by consumers after a meal.
