Time, Money, Or Knowledge: What Factors Are Associated With Implementing Youth Cooking Programs?, Alison C. Berg, Nancy O. Taylor, Courtney S. Brown, Silvia Q. Giraudo
Journal of Extension
Research suggests participating in youth hands-on cooking programs, like those offered by Extension and 4-H, can improve nutrition behaviors and reduce the risk for obesity. We surveyed [STATE] Extension professionals (n = 127) to explore factors (e.g., employee characteristics, resources, county demographics) related to offering youth hands-on cooking programs and curricula used. Over 2/3 of participants offer programs and reported creating their own curriculum. More years of experience, having received Extension Specialist training, and increased confidence were positively related to offering these programs. Results suggest training could increase confidence and program implementation and standard curricula may be needed.

Print Versus Electronic: A Mixed-Method Exploration Of Student Preferences At Marathon University, Jennifer King Matthews
Print Versus Electronic: A Mixed-Method Exploration Of Student Preferences At Marathon University, Jennifer King Matthews
Theses and Dissertations
Academic libraries have been adapting and changing their collections with technology. Often, this technology has accompanied a conversion from physical collections, such as print books to electronic collections and electronic books. This mixed methods case study aimed to understand how first-generation college students at a public research university use print books versus electronic books. Data was collected using a survey based on the Academic Reading Questionnaire (Mizrachi, 2015) to assess the attitudes of both first-generation college students and continuing-generation college students towards these materials in the Marathon University Library collection. A qualitative semi-structured interview was also conducted, which focused on …

Faculty Of Color In The Academy: A Perspective On Cross-Cultural Mentoring, Sherrise Y. Truesdale-Moore
Faculty Of Color In The Academy: A Perspective On Cross-Cultural Mentoring, Sherrise Y. Truesdale-Moore
The Journal of Advancing Education Practice
Research has indicated that students’ race and their experiences and sense of belonging are associated with the racial characteristics of the faculty. This highlights the importance of recruitment and retention for faculty of color (FOC) in higher education. A formal faculty mentoring program is essential to providing an academic atmosphere that nurtures, supports, and develops faculty members’ teaching and research skills to assist them in feeling a sense of belonging within the university community is essential. However, finding the right mentoring program that addresses the daunting challenges among FOC is challenging. Upon reviewing the higher education faculty data and literature …

Merrimack College is a Catholic Augustinian College. This single institutional case study shares the work of faculty and the College to institutionalize community engaged research through the development of a Community Engaged Action & Research Cluster (CERC). Through the case study, we elucidate the sphere of influence of faculty with regard to community engagement and the ways in which that sphere of influence can add value to individual careers and the institution as a whole. This case study also demonstrates the impact of institutional engagement initiatives on faculty research and civic engagement in food justice.

Mapping The Way Forward For Post Pandemic Digitalization Of Higher Education Administration,Teaching And Learning: A Systematic Literature Review, Barbara Tsverukayi, Sam Takavarasha
African Conference on Information Systems and Technology
The post COVID—19 era signals an epoch that arose after the crisis of the pandemic. This therefore requires higher education institutions (HEIs) to embrace digitalization in administration, teaching and learning as a contingency measure in case of future disruptions. This systematic literature review paper explores the challenges and opportunities presented to HEIs by the pandemic with a view to mapping the way forward through digitalization. The study applied a literature search strategy on seven electronic databases which yielded a total of 5 462 articles. Following an inclusion and exclusion process, 36 articles were found eligible for this study. The findings …

ETSU News
For years, East Tennessee State University’s Department of Theatre and Dance has provided students with exceptional opportunities that boost social awareness, self-confidence, communication skills and more.
Another important role of the department: enriching the university and the Appalachian Highlands with regular performances in the ETSU Martin Center for the Arts.
That tradition continues in the 2023-24 academic year.
“We are thrilled to announce our lineup, and I am so proud of the work our faculty, staff and students have already put in,” said Karen Brewster, chair of the department. “We truly believe that the arts help us make sense of …

East Tennessee State University devotes considerable resources into uplifting the mental health not only of faculty, staff and students, but the Appalachian Highlands region, as well.
And earlier this month, ETSU President Dr. Brian Noland signed a proclamation designating September as “Suicide Prevention Awareness Month.”
“Nationally, campuses are witnessing a mental health crisis,” said Noland. “The recognition is not just an acknowledgment of the seriousness of the issue but a call to action for each one of us.”
The university promotes a range of activities and steps to achieve better mental health. That includes physical activity, …

Innovations in Health Sciences Education Journal
The purpose of the study was to examine experiences of students transitioning into graduate allied health programs within a public university in the United States. Researchers assessed students’ occupational adaptation as well as factors that facilitated and inhibited their transition. Researchers collected data using the Relative Mastery Scale (RMS) (George-Paschal, Krusen, & Fan, 2022) and a researcher-developed transition survey. Participants included 129 students from three allied-health professions. Researchers conducted a mixed ANOVA to explore differences in RMS ratings across three disciplines. There was a statistically significant increase in RMS ratings over time for all disciplines and statistically significant differences between …

Experiences Of African Women In Stem Careers: A Systematic Literature Review., Kaluwa Siwale, Gwamaka Mwalemba, Ulrike Rivett
African Conference on Information Systems and Technology
The discourse on women's underrepresentation in science, technology, engineering, and mathematics (STEM) mainly centres on the global north, leaving a gap in understanding the perspectives of African women in STEM. To address this, a systematic literature review was conducted to explore African women's experiences in STEM careers and education. After applying inclusion and criteria, 18 published articles were analysed. 8 key issues emerge: work environment, education system, work-life balance, gender-based stereotypes, racial bias, sexual harassment, inadequate support/mentorship, and self-imposed limits. These themes intertwine, with some aspects influencing others. Grasping the complexities and interactions of these factors provides insights into challenges …
