[Objective] To comprehensively compare and screen glycoprotein preparation processes for six representative medicinal materials from the genus Panax. [Methods] Glycoprotein yield, DPPH radical scavenging capacity, hydroxyl radical scavenging capacity, and Fe2+ chelation inhibition rate were used as evaluation indicators. Glycoprotein extraction rates and antioxidant activities of six medicinal materials, including P. ginseng, P. notoginseng, P. quinquefolius, P. japonicus (T. Nees) C. A. Mey., P. stipuleanatus H. T. [Objective] To investigate the effects of probiotic fermentation conditions and drying methods on the quality of fermented sea buckthorn leaf products. [Methods] Lactiplantibacillus plantarum is used for fermentation. The fermentation process of sea buckthorn leaves is optimized through single-factor experiments combined with response surface methodology. Fermented sea buckthorn leaf extract is prepared under the optimal fermentation conditions and subsequently processed into freeze-dried powder by direct freeze-drying and spray freeze-drying, with or without low-voltage electrostatic field assistance. [Objective] To improve the utilization rate of porcine blood and the safety of ham sausage. [Methods] Under specific conditions, hemoglobin in porcine blood is modified to produce glycosylated nitrosohemoglobin (GN-Hb). Different amounts of GN-Hb are added to replace sodium nitrite in heat-treated ham sausages. The quality characteristics of the sausages are evaluated through texture analysis, nutritional testing, color difference assessment, color acceptability, elasticity, chewiness, and overall acceptability. [Objective] To optimize the extraction process of flavonoids from Xinyang Camellia sinensis and to compare the in vitro antioxidant activities of total flavonoids before and after purification. [Methods] Using Xinyang C. sinensis as raw material, a one-factor test is conducted to investigate the effects of ethanol volume fraction, ultrasonic time, ultrasonic power, and material–liquid ratio on the yield of flavonoids. Dictyophora rubrovalvata, a valuable edible fungus in China, is rich in active components such as polysaccharides, proteins, amino acids, and vitamins, exhibiting significant efficacy in antioxidant, anti-fatigue, antitumor, immunomodulatory, hepatoprotective, and anti-inflammatory activities. This paper systematically reviews recent research progress on the nutritional components, functional activities, and utilization status of D. rubrovalvata, both in China and elsewhere, with an outlook on its future development directions and application prospects.

In the context of contemporary food consumption, food packaging has gradually shifted from a tool for product protection and information transmission to an important cognitive interface that influences consumer perception, judgment, and choice. Existing studies in this field mainly focus on functional optimization, behavioral guidance, and cultural expression, while insufficient attention has been paid to how packaging design affects consumer cognitive processes. [Objective] This paper aims to investigate the effects of microwave and roasting pretreatment methods on volatile compounds and active ingredients in flaxseed oil. [Methods] Flaxseeds were pretreated by microwave (720 W, 2–8 min) and roasting (140–200 ℃, 30 min), and then flaxseed oil was prepared by cold pressing. Using untreated cold-pressed flaxseed oil as a control, the differences in volatile compounds were analyzed by headspace gas chromatography–ion mobility spectrometry (HS-GC-IMS) and an electronic nose. Additionally, the contents of tocopherols, phytosterols, and total phenolics were determined. Hepatocellular carcinoma (HCC) remains a leading cause of cancer-related deaths worldwide. Although advanced oral anticancer drugs, such as sorafenib and lenvatinib, are available for treating HCC, their effectiveness is limited by significant side effects and the requirement for optimal liver function, restricting their broader use. Furthermore, these drugs cannot be used in combination, leading to suboptimal treatment outcomes. Metabolomics provides direct insights into cellular physiology, yet it faces greater analytical challenges compared to genomics and transcriptomics due to the chemical diversity, instability, and environmental sensitivity of metabolites. Conventional bulk metabolomics averages signals across cell populations, thereby masking cellular heterogeneity critical for understanding disease mechanisms. Recent breakthroughs in single-cell metabolomics (SCM), driven by advances in mass spectrometry, microfluidics, isotope tracing, and spatial omics, have enabled the detection of metabolic diversity at unprecedented resolution. Enriched or “designer” chicken eggs have emerged as an important category of functional foods aimed at improving human nutrition through dietary manipulation of laying hens. This mini-review summarizes recent advances in egg enrichment strategies, focusing on omega-3 fatty acids, vitamins, minerals, and antioxidant compounds. Omega-3 enrichment remains the most widely adopted approach, achieved through supplementation with flaxseed, fish oil, or microalgae, resulting in significant increases in eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) in egg yolk. This study aimed to determine the effect of adding parts of gowok fruit (Syzygium polycephalum) on the physical properties of goat’s milk yogurt. A completely randomized design was applied with treatments consisting of fruit parts (rind, flesh of fruit, and whole seedless fruit) and addition levels (1, 2, and 3%) with three replications. Data were analyzed using analysis of variance followed by Duncan’s multiple range test (DMRT). The results showed that gowok addition had a significant effect (P<0.05) on viscosity, syneresis, and color parameters, but no significant effect (P>0.05) on firmness and work of penetration. This study aims to develop a functional ice cream based on dangke whey pro‐ tein with the addition of butterfly pea flower extract. Four formulations were pre‐ pared by varying milk and whey proportions: P1 (100% milk), P2 (60% milk + 40% whey), P3 (40% milk + 60% whey), and P4 (100% whey), with 5% butterfly pea ex‐ tract added to each treatment. The results showed that higher whey substitution decreased pH and overrun values but prolonged the melting resistance of ice cream. The effect of hydroponic soilless substrates and microbial biocontrol agents on the persistence of foodborne pathogens in indoor lettuce production is variable depending on substrate type, pathogen species, and biocontrol formulation. This study addressed key gaps by first characterizing the ability of different substrates to support Salmonella and Listeria monocytogenes survival and then evaluating the ability of pine biochar and Bacillus subtilis to suppress pathogen persistence in selected substrates under controlled conditions. The improper management of sewage sludge poses a significant global risk to environmental and public health. In this study, the valorization of sludge as an organic fertilizer for lettuce cultivation was evaluated, offering a sustainable waste-to-resource solution. Sludge from two wastewater treatment plants (Mazouna and El Kerma) were collected between 2019 and 2021. Comprehensive physicochemical analysis was conducted to determine its nutrient value and contaminant levels. [Objective] To clarify the comprehensive functional characteristics and processing adaptability of different chestnut varieties.[Methods] The microscopic morphology of starches prepared from eight chestnut varieties was observed, and their amylose content, transparency, freeze-thaw stability, solubility, swelling power, and gel texture properties were determined. Correlation analysis, principal component analysis (PCA ),and cluster analysis were employed to comprehensively evaluate starch quality.[Results] The starch granules from the eight chestnut varieties exhibited similar morphologies, mainly including round, oval, and polygonal shapes. Correlation analysis revealed significant correlations among the quality indexes of different varieties (P<0.05). PCA reduced the eight indexes to two principal components, with a cumulative variance contribution rate of 84.373%.Cluster analysis classified the starches from the eight chestnut varieties into four categories: high-elasticity, high-swelling, low-hardness, and high-gel types.[Conclusion] Significant differences in the functional properties of chestnut starches were observed among the different categories (P<0.05).
