The effect of Quartermate pre-milking teat sanitation on milk quality was investigated in twelve dairy herds over a period of eight weeks. Pre-milking teat sanitation was carried out on all cows for six weeks on each of six farms and mesophile and thermophile bacteria counts of raw milks were compared before the milk line (“cluster” samples), and at various points within milking plants. Rates of mastitis, vat milk iodide levels and specific bacteria were also monitored.

In Bolivia we have three very valuable Andean grains: amaranth (Amaranthus caudatus), quinoa (Chenopodium quinua), and canihua (Chenopodium pallidicaule), which combined with cereals and legumes can become a complete and balanced food in order to combat the malnutrition that is so widespread in our region. In this study, various nutritional mixes were formulated, based on amaranth and other Andean crops, and the three best were chosen according to nutrition, palatability, and cost. They were: Andean Baby Food, Mixicereal, and Amaranth Cookie, which have an amino acid complement between 79% and 100% and give satisfactory amounts of protein, energy, and minerals …

This report summarizes the initial findings of a survey of 500 households in the states of Nebraska, Iowa, Missouri and Wisconsin. The primary grocery shopper in the household was surveyed for their attitudes and opinions on locally grown and produced food, organic and all-natural food and meat purchasing behaviors.
To access a respondent’s purchasing behavior, each respondent was asked to rank the importance of twelve attributes in determining the product or brand they purchase. The attributes most important to consumers in the region* include taste, quality, nutrition/healthfulness, and price. Seven in ten respondents said that it was very or extremely …

There appears to be considerable opportunity for the development of organic vegetable production in Western Australia for either fresh or processed product. While a number of growers are successfully producing relatively small quantities of organic vegetables for both domestic and export markets, few large scale commercial growers have sought to capitalise on this opportunity.
Consumer interest in organically grown vegetables has increased rapidly in recent years due largely to concerns relating to food safety, health and the environment. The paper examines the extent of involvement of women in food crop production, processing and marketing in a typical African locality. Appropriate statistical techniques were employed in the data analyses. The findings show that women are greatly involved in the production, processing and marketing of food crops, especially cassava, which is one of the staple foods in sub-Saharan Africa.

The formation of composite films of double-stranded DNA and cationic lipid molecules (octadecylamine, ODA) and the hybridization of complementary single-stranded DNA molecules in such composite films are demonstrated. The immobilization of DNA is accomplished by simple immersion of a thermally evaporated ODA film in the DNA solution at close to physiological pH. The entrapment of the DNA molecules in the cationic lipid film is dominated by attractive electrostatic interaction between the negatively charged phosphate backbone of the DNA molecules and the protonated amine molecules in the thermally evaporated film and has been quantified using quartz crystal microgravimetry (QCM). Utilizing empirical data from studies conducted mainly by international organizations, such as the UNAIDS and the Food and Agriculture Organization , the thesis aims to strengthen the hypothesis that the higher the frequency of HIVIAIDS, mainly in rural African farm communities, the higher the impact there is on food production. This paper discusses the maternal and neonatal risk factors associated with multiple birth pregnancies. Nutrition implications associated with nutritional care of the high-risk infant and obstetric population are emphasized. Statistical information was gathered concerning the population growth of multiple births over the past twenty years. Literature to identify both maternal and neonatal risk factors associated with multiple gestation pregnancies was also reviewed. Studies conducted over the past twenty years have shown that there has been an increase (25%-50%) in the amount of twin births throughout the world. Objectives: Define phytochemicals as currently recognized in the United States and discuss food sources. Identify aims and challenges of current research. Review touted health effects of phytochemicals in cancer, cardiovascular disease (CVD), immune function, and other benefits. Present dietary recommendations. Methods: A literature search was conducted through Medline to find peer-reviewed journal articles from the past five years. Articles were found that identified the compounds and highlighted recent research relating phytochemicals to disease. This study sought to investigate the role of the C55 undecaprenol lipid carrier in the production of exopolysaccharide (EPS), the effect of exopolysaccharide producing (EPS+) starter cultures on the viscosity of Mozzarella cheese whey, and the possible protective characteristics of capsular EPS against freezing and freeze drying. Efforts to investigate the role of the lipid carrier in EPS production employed pAMbacA, a plasmid that encodes an enterococcallipid kinase that confers bacitracin resistance by increasing intracellular levels of undecaprenol phosphate lipid carrier. Eating disorders are a debilitating mental illness that affects young people including those in the field of dietetics. Literature suggests that dietetic students have a higher prevalence of eating disorders than other students. Seventy-seven college student in Southern West Virginia enrolled in either dietetics or another major were included in a sample to determine if dietetic students have higher prevalence of disordered eating attitudes and behaviors. The participants completed a survey that included a general information section, a 26-item questionnaire concerning eating attitudes, and a behavioral information section. Hybridization of complementary oligonucleotides mediated by a cationic surfactant at the water/hexane interface leads to hydrophobic, double-helical DNA which may be readily phase transferred to the organic phase and cast into thin films on solid substrates.

Submerged And Solid-State Phytase Fermentation By Aspergillus Niger: Effects Of Agitation And Medium Viscosity On Phytase Production, Fungal Morphology And Inoculum Performance, Maria Papagianni, Sue E. Nokes, Keith Filer

Qualitative relationships between agitation levels and medium viscosity, Aspergillus niger morphology and phytase production were investigated in submerged and solid-state fermentations. Overall phytase production increased with increasing shaker speeds from 150 to 300 rpm, although specific growth rates and phytase production rates were higher at 150 rpm for 72 h from inoculation. Fungal morphology was greatly influenced by agitation with the morphological forms of small pellets and entangled mycelia predominating at 150 rpm, while the free filamentous form was obtained at 300 rpm. Upon inoculation of SSF, increased productivities were obtained from inocula grown at 150 rpm. A shift towards …

Objectives: For effective healthy eating promotion, it is necessary to understand the attitudes towards and beliefs about nutrition of the general public. The objective of this study was to provide data on attitudes towards eating a healthy diet and the perceived need to alter eating habits from a random sample of adults in the Republic of Ireland and in Northern Ireland, using a self-administered questionnaire. The activity of σB in Listeria monocytogenes is stimulated by high osmolarity and is necessary for efficient uptake of osmoprotectants. Here we demonstrate that, during cold shock, σB contributes to adaptation in a growth phase-dependent manner and is necessary for efficient accumulation of betaine and carnitine as cryoprotectants.

The hybridization of DNA by sequential electrostatic and hydrogen-bonding immobilization of single-stranded complementary oligonucleotides at the air-water interface with cationic Langmuir monolayers is demonstrated. The complexation of the single-stranded DNA molecules with octadecylamine (ODA) Langmuir monolayers was followed in time by monitoring the pressure-area isotherms. A large (and slow) expansion of the ODA monolayer was observed during each stage of complexation in the following sequence: primary single-stranded DNA followed by complementary single-stranded DNA followed by the intercalator, ethidium bromide. Langmuir-Blodgett (LB) films of the ODA-DNA complex were formed on different substrates and characterized using quartz-crystal microgravimetry (QCM), Fourier transform infrared …

The purpose of this study is to determine the practicality of using extra large zip-lock mylar bags with oxygen absorber packets to store corn and beans in Chyulu, Kenya. Weevil usually gets in the food after about 5 months, so if the oxygen can be maintained at a low level, the corn and beans could be stored for longer than that. The goal is to be able to store the food for 18 months. Irrigation practices employed by five commercial strawberry growers on sandy soils of the Swan Coastal Plain near Perth Western Australia were monitored for two consecutive seasons, 1995 and 1996 during the Spring production period.
Nutritional practices for the same grower group plus one Albany grower were monitored by plant, soil and sap analysis at 14 day intervals throughout the 1996 season.
Irrigation records showed that market quality strawberries could be produced at this time of year (August to December in Perth) on soils with very poor water retention properties with an average crop factor(E Pan) for the season of 0.7 …

Lactic acid bacteria and bifidobacteria were screened of their ability to ferment fructooligosaccharides (FOS) on MRS agar. Of 28 strains of lactic acid bacteria and bifidobacteria examined, 12 of 16 Lactobacillus strains and 7 of 8 Bifidobacterium strains fermented FOS. Only strains that gave a positive reaction by the agar method reached high cell densities in broth containing FOS.

Low fat Mozzarella cheese was made using exopolysaccharide-producing starter cultures consisting of single strains of Streptococcus thermophilus MR-1C and Lactobacillus delbrueckii ssp. bulgaricus MR-1R with or without the addition of mesophilic exopolysaccharide-producing adjunct mixed culture consisting of Lactococcus lactis ssp. lactis and Lactococcus lactis ssp. cremoris. A control cheese was made using a non-exopolysaccharide-producing starter culture consisting of S. thermophilus TA061 and Lactobacillus helveticus LH100. Cheeses were analyzed for moisture, melt, fat, and protein. Cheeses made with the addition of the mesophilic exopolysaccharide-producing adjunct culture showed significant differences in moisture, but not in melting properties when compared to cheeses …

Bovine lactoferrin (BLF) and bovine transferrin (BTF) are major-iron transport and regulation proteins found in bovine whey. BLF and BTF must interact with the eukaryotic cell surface to mediate their biological function of iron delivery and cellular functions of inflammatory and immunological modulation. As common components of the eukaryotic cell surface, gangliosides were used for affinity purification of BLF and BTF.
Bovine gangliosides were isolated from fresh buttermilk and covalently immobilized onto controlled-pore glass beads (66 μg/g beads). After the matrix was loaded with whey protein (WPI or WPC), lactoferrin was eluted with 1 M NaCl and identified by N-terminal …
