Phytosterols are natural health-promoting bioactive compounds; however, phytosterols have very limited bioavailability due to their crystalline lipophilic structure. With the aim of improving bioaccessibility, low-crystallinity phytosterol nanoparticles were generated by supercritical carbon dioxide (SC-CO2) impregnation of phytosterols into nanoporous starch aerogels (NSAs). The in vitro bioaccessibility of the phytosterol nanoparticles (35%) was significantly higher than that of the crude phytosterols (3%) after sequential oral, gastric, and intestinal digestion. The percentages of starch hydrolysis were not different among the various NSA preparations and reached to 64% after sequential digestion. The use of solid fats is challenging due to difficulty in incorporating into foods, handling during industrial food production, and relatively high-calorie contributions. The objective of this study was to form free-flowing and low-density hollow microparticles from nonhydrogenated fats, namely, butter and fractionated palm oil, using a novel method based on atomization of a carbon dioxide (CO2)- expanded lipid mixture. The melting point of the fractionated palm oil decreased from 66.2 to 47.3°C above 120 bar in the presence of pressurized CO2. The density of the particles decreased five-folds compared to that of the original oils. …

Natural astaxanthin, a high-value carotenoid that is currently extracted mainly from marine organisms, was extracted from engineered camelina seed using ethanol-modified supercritical carbon dioxide (SC-CO2) for the first time, and compared with hexane and accelerated solvent extraction using hexane and ethanol. Response surface methodology (RSM) based on central composite rotatable design was employed to investigate the effect of pressure (30–45 MPa), temperature (40–60 °C), and ethanol concentration (10–35%, w/w). RSM-optimized conditions (41.6 MPa, 36.6 °C and 42.0% ethanol concentration) predicted the astaxanthin concentration as 437 μg/g oil, whereas the actual concentration was 421 ± 14 μg/g oil. Novel treatments are needed to prevent candidiasis/candidemia infection due to the emergence of Candida species resistant to current antifungals. Considering the yeast-to‐hyphae switch is a critical factor to Candida albicans virulence, phenols common in plant sources have been reported to demonstrating their ability to prevent dimorphism. Therefore, phenols present in many agricultural waste stress (ferulic (FA) and gallic (GA) acid) were initially screened in isolation for their yeast‐to‐hyphae inhibitory properties at times 3, 6, and 24 hr. The rheological behavior of gluten-free flour dispersions from four pulse market classes, including great northern, navy, red kidney (Phaseolus vulgaris L.), and garbanzo beans (Cicer arietinum) were evaluated and compared to soft wheat as a gluten-containing control. Their starches were isolated and the relationships between flour behavior and starch characteristics were studied. Soft wheat (56%) and garbanzo (39%) flours presented higher starch contents than the Phaseolus vulgaris beans (33–35%), which resulted in the development of stronger gel network structures. It was found that starch amylose content and granule size affected the swelling and pasting properties of both starches and flours. …

Complex, indigestible free oligosaccharides as well as conjugated glycans are found in milk that shape the gut microbiome of infants. The activity of an endo-β-N-acetylglucosaminidase from B. longum subsp. infantis (B. infantis) is known to release N-glycans from native milk glycoproteins under physiological conditions. We investigated whether this enzyme is active in vivo in breastfed infants fed B. infantis EVC001. Using mass spectrometry, we found 19 N-glycans related to human milk glycoproteins increased in abundance, similar to previous work using bovine milk glycoproteins, and these 19 N-glycans matched unique specificities of this enzyme. Crystalline structure of phytosterols leads to poor bioavailability and makes their incorporation into foods challenging. Bioaccessibility of first-of-their-kind low-crystallinity phytosterol nanoparticles impregnated in nanoporous starch aerogels (PS-NSA) was evaluated in non-, low-, and regular-fat solid and aqueous food formulations, namely, granola bars and puddings for the first time. Bioaccessibility of the phytosterol nanoparticles was significantly higher than that of crude phytosterols in all food formulations (p < .05); it was 88.2 and 91.8% for low- or regular-fat granola bars, respectively, whereas bioaccessibility of crude phytosterols was ca. 30% in those formulations. However, decreasing the lipid content to zero resulted in lower phytosterols' bioaccessibilities from both PS-NSA (53%) and crude phytosterols (ca. 16%) in non-fat granola bars. Bioaccessibility of crude phytosterols (2%) was significantly enhanced with PS-NSA (19%) in the pudding formulation. PS-NSA allows preparation of low- and non-fat foods enriched with phytosterols while enhancing the health benefits of phytosterols with smaller doses.

Micellar casein is a high-protein ingredient that can be used in process cheese products (PCP) formulations. PCP is a dairy food prepared by blending dairy ingredients (such as natural cheese, protein concentrates, butter, non-fat dry milk NFDM, whey powder, and permeate) with nondairy ingredients (such as sodium chloride, water, emulsifying salts, color, and flavors) and then heating the mixture with a continuous agitation to produce a homogeneous product with an extended shelf-life. In this study, a new pre-treatment method based on novel non-thermal plasma technology was developed to improve the enzymatic hydrolysis of brewer’s spent grain (BSG) and subsequent bioethanol production. A submerged dielectric barrier discharge plasma reactor system was applied for this purpose. Pre-treatments were performed by taking into account variables including; voltages (22 kV, 25 kV and 28 kV), solvent (acid, alkali and water) and time (5, 10, 15 min). This research is aimed to develop healthy processed cheese for Thai consumers by studying consumer needs, the physicochemical and sensory properties of the developed processed cheese. Thai consumers who concerned about their health in Bangkok (n=422) participated in a survey and 72.7% of the consumers had positive intention to the healthy cheesed product in sliced type. ความนิยมของกลุ่มผู้บริโภคที่ใส่ใจต่อสุขภาพในปัจจุบันส่งผลให้แนวโน้มการตลาดของผลิตภัณฑ์เกษตรอินทรีย์เพิ่มสูงขึ้น น้ำนมดิบและผลิตภัณฑ์นมที่ได้จากฟาร์มโคนมอินทรีย์ซึ่งเน้นรูปแบบการเลี้ยงที่เป็นธรรมชาติ เลี้ยงโคด้วยพืชอาหารสัตว์ที่เป็นอาหารหยาบมากขึ้น ปลอดจากการใช้สารเคมีและยาปฏิชีวนะ จัดเป็นหนึ่งกลุ่มสินค้าที่มีมูลค่าสูง ส่งผลให้มีความต้องการพัฒนาวิธีการตรวจสอบคุณภาพ โดยเฉพาะการเปลี่ยนแปลงขององค์ประกอบทางเคมีในน้ำนมที่เป็นผลมาจากกระบวนการจัดการฟาร์มแบบอินทรีย์ เพื่อใช้ระบุอัตลักษณ์ของผลิตภัณฑ์กลุ่มดังกล่าว ปัจจุบันมีการนำเทคโนโลยีเมตาโบโลมิกส์ (metabolomics) มาประยุกต์ใช้เพื่อวิเคราะห์ข้อมูลสารชีวโมเลกุลขนาดเล็กที่เป็นองค์ประกอบในระบบอาหารอย่างกว้างขวาง อย่างไรก็ตามงานวิจัยที่ประยุกต์ใช้เทคโนโลยีดังกล่าวเพื่อศึกษาข้อมูลแบบแผนทางชีวโมเลกุลของน้ำนมและผลิตภัณฑ์นมในประเทศไทยยังมีอยู่อย่างจำกัด ดังนั้นงานวิจัยนี้จึงมีวัตถุประสงค์เพื่อ (i) วิเคราะห์ข้อมูลสารเมตาบอไลต์ชนิดระเหยยากและกรดไขมันในน้ำนมดิบที่ได้จากฟาร์มโคนมอินทรีย์และฟาร์มโคนมทั่วไปโดยใช้เทคนิค 1H-NMR และ GC-FID (ii) เปรียบเทียบความแตกต่างระหว่างข้อมูลดังกล่าวในน้ำนมดิบทั้งสองกลุ่มด้วยวิธีการวิเคราะห์ทางสถิติหลายตัวแปร และ (iii) วิเคราะห์หาสารเมตาบอไลต์และกรดไขมันที่สามารถใช้เป็นตัวบ่งชี้ทางชีวภาพเพื่อระบุอัตลักษณ์ทางชีวโมเลกุลของน้ำนมอินทรีย์ ผลการวิจัยพบว่าสามารถระบุชนิดของสารเมตาบอไลต์ชนิดระเหยยากและกรดไขมันในน้ำนมได้ทั้งหมด 47 และ 22 สาร ตามลำดับ ผลจากการวิเคราะห์แบบจัดกลุ่ม (HCA) และการวิเคราะห์จำแนกกลุ่มด้วยการถดถอยกำลังสองน้อยที่สุด (PLS-DA) แสดงให้เห็นว่าสามารถแยกข้อมูลสารเมตาบอไลต์ชนิดระเหยยากและข้อมูลกรดไขมันของกลุ่มตัวอย่างน้ำนมดิบที่ได้จากฟาร์มโคนมอินทรีย์ออกจากฟาร์มโคนมทั่วไปได้ โดยสามารถใช้ค่าปริมาณสัมพัทธ์ของสารเมตาบอไลต์ชนิด 1,6-anhydro-β-D-glucose, betaine, N-acetylaminoacid, histidine, acetoacetate, formate, 4-pyridoxate, acetylcarnitine, N-acetylglutamate, hippurate และกรดไขมันชนิด undecanoic acid, myristoleic acid, caprylic acid, lauric acid, capric acid, tridecanoic acid, cis-8,11,14-eicosatrienoic acid, linolenic acid, caproic acid และ myristic acid เป็นตัวบ่งชี้ทางชีวภาพเพื่อแยกความแตกต่างระหว่างน้ำนมดิบที่ได้จากฟาร์มโคนมอินทรีย์และฟาร์มโคนมทั่วไปได้ ผลการวิจัยดังกล่าวแสดงให้เห็นถึงการประยุกต์ใช้เทคโนโลยีเมตาโบโลมิกส์ในการระบุอัตลักษณ์ทางชีวโมเลกุลของน้ำนมอินทรีย์ได้อย่างมีประสิทธิภาพ

กลิ่นรสในอาหาร (flavor) ถือเป็นปัจจัยสำคัญที่ทำให้ผู้บริโภคยอมรับผลิตภัณฑ์อาหาร สารให้กลิ่นรสที่เติมลงไปในผลิตภัณฑ์อาหารสามารถเกิดอันตรกิริยากับโปรตีนที่เป็นส่วนประกอบในอาหารได้ ซึ่งอาจทำให้เกิดปัญหากลิ่นรสในอาหารจางลง (flavor fade) งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาผลของการดัดแปรโปรตีนด้วยวิธีดีแอมิเดชันโดยเอนไซม์โปรตีนกลูทามิเนส (PG) ต่อสมบัติด้านการจับกลิ่นรสของโปรตีนจากมะพร้าวด้วยเทคนิค equilibrium dialysis โดยใช้วานิลลินเป็นตัวแทนสารให้กลิ่นรส โดยนำโปรตีนมะพร้าวที่ไม่ผ่านการดัดแปร (untreated coconut protein; CP) และโปรตีนมะพร้าวที่ผ่านการดัดแปร (deamidated coconut protein; DCP) ความเข้มข้น 3% (w/v) ในสารละลายฟอสเฟตบัฟเฟอร์ความเข้มข้น 0.05 โมลาร์ (pH = 7.0) ทำอันตรกิริยากับวานิลลินที่ ความเข้มข้นต่าง ๆ (10 - 100 ppm) ที่อุณหภูมิ 5, 15, และ 25 °C ตัวแปรการจับได้แก่ จำนวนพื้นที่ที่โปรตีนจับกับสารให้กลิ่นรส (n) และค่าคงที่ของการจับกัน (K) หาได้จากกราฟ Klotz plots จากผลการศึกษาแสดงให้เห็นว่าการดัดแปรด้วยวิธีดีแอมิเดชันโดยเอนไซม์ PG (36.12 % degree of deamidation) ลดความสามารถในการจับกลิ่นรสโดยรวมของโปรตีนมะพร้าวต่อวานิลลินลง นอกจากนี้การจับกลิ่นรสโดยรวมของโปรตีนมะพร้าวกับวานิลลินลดลงเมื่ออุณหภูมิเพิ่มขึ้น ตัวแปรทางอุณหพลศาสตร์ของการจับกันบ่งชี้ว่าการเกิดอันตรกิริยาระหว่างวานิลลินกับโปรตีนมะพร้าวเป็นปฏิกิริยาที่สามารถเกิดขึ้นได้เอง (- ∆G°) และอันตรกิริยาขับเคลื่อนโดยเอนทาลปี กลไกของการจับกันของ CP และ DCP กับวานิลลินเป็นการเกิดผ่านแรง van der Waals หรือพันธะไฮโดรเจน นอกจากนี้ยังพบว่าความเข้มข้นต่ำสุดที่รับรู้ได้ของวานิลลินในตัวอย่าง DCP ต่ำกว่าในตัวอย่าง CP จากผลการศึกษาบ่งชี้ว่าการดัดแปรโปรตีนมะพร้าวด้วยวิธีดีแอมิเดชันโดยเอนไซม์โปรตีนกลูทามิเนส สามารถลดการจับของโปรตีนมะพร้าวกับวานิลลินลงได้ และยังพบว่าโปรตีนมีโมเลกุลขนาดเล็กเพิ่มขึ้นหลังจากดัดแปรด้วยดีแอมิเดชัน

The aims of this research were to study the effect of different cooking conditions on bioactive compounds and biological activities of cooked adzuki beans and cooking water. The different encapsulation methods to entrap adzuki beans hydrolysate were investigated. The release characteristics of different freeze-dried alginate particles were investigated after in vitro simulated gastrointestinal digestion. The results showed that all cooking conditions (60-min boiling, 10-min autoclaving and 60-min autoclaving) caused a significant reduction in crude protein, TCA-soluble peptides, free amino groups, total phenolic content (TPC) and total flavonoid content (TFC) in cooked adzuki beans (p ≤ 0.05). Selenium (Se) biofortification of plants has been suggested as a method for enhancing dietary Se intake. Popular herbs such as basil (Ocimum basilicum), cilantro (Coriandrum sativum), and scallions (Allium fistulosum) are used for enhancing flavors. Microgreens are young seedlings harvested with one to two true leaves and are increasingly popular in the consumer marketplace. Traditional lipid extraction methods are labor intensive and time-consuming so interest in one-step methods using various organic solvents are gaining in popularity. Extraction efficiency depends heavily on the solvents used yet comparisons between different solvents are lacking. Defatting techniques are commonly used to concentrate crude protein and may be useful for enhancing protein content in food sources. This thesis details the history of Claremont Market Shares, a Community Sourced Agriculture (CSA) project based out of Claremont, California. By using this project as a jumping off point for discussing local food networks, buzzwords such as "organic" and "local" are analyzed and re-defined. I argue for a people-based food network model over the currently popular 'place-based' that prioritizes producer-consumer relationships. The CSA functions as a sustainable model of this ideology.

Seeds of the legume lupin (Lupinus spp.) are becoming increasingly important as human food. The seed coat, at ~25% of the whole seed of Lupinus angustifolius (Australian sweet lupin, ASL), is the main by-product of lupin kernel flour production. The primary market for lupin seed coat is low value feed with very limited use in foods. This study examines food safety knowledge and practices of food service staff in Al Madinah hospitals, Saudi Arabia. A total of 163 food service staff participated voluntarily from 10 hospitals across the city of Al Madinah. The participants completed a questionnaire composed of threeparts: Generalcharacteristics,foodsafetyknowledge,andfoodsafetypractices. Resultsshowed that respondents generally had good food safety knowledge with the highest pass rate of 77.9% for knowledge of cross contamination followed by 52.8% for knowledge of food poisoning, and 49.7% of knowledge of food storage. Recent reports indicate that atmospheric cold plasma (ACP) treatment of seeds can enhance their germination, however, the mechanisms of action are not yet entirely clear. In the present work, we report on the effects of plasma treatment on wheat seed germination and seedling growth. Additionally, changes in the surface chemistry and characteristics of the wheat seeds exposed to plasma were investigated. Treatments of 30–60 s significantly enhanced the germination rate and showed positive effects on seedling growth. Pulse grains were identified as a key resource for food innovation during the International Year of the Pulse (IYP), 2016. Pulse flour offers a sustainable source of plant protein for innovation in protein enriched cereal based foods. Fava-bean (Vicia faba), green- and yellow-pea (Pisum sativum) flour were analysed for proximate composition, minerals, amino acids, phenolic content, phytic acid and trypsin inhibitory activity. Fava-bean flour had the highest protein content (28 g/100 g), while green-pea flour had the highest total dietary fibre content (15 g/100 g).
