Food waste is a pervasive global issue with many environmental and social repercussions. While about one-third of all food produced for human consumption goes to waste, many people in the United States and the world are affected by food insecurity. Food recovery, the process of rescuing edible food that would otherwise go to waste and delivering to hungry people, is an effective solution for both food waste and food insecurity. American Society for Microbiology. Escherichia coli O157:H7 (EcO157) infections have been recurrently associated with produce. The physiological state of EcO157 cells surviving the many stresses encountered on plants is poorly understood. EcO157 populations on plants in the field generally follow a biphasic decay in which small subpopulations survive over longer periods of time. We hypothesized that these subpopulations include persister cells, known as cells in a transient dormant state that arise through phenotypic variation in a clonal population. The Sam Israel site is a precontact archaeological complex with numerous fish bones at the north end of Soap Lake, Washington. Excavated in 1976, the fish remains recovered from there were never fully analyzed prior to this research. Since this inland Columbia Plateau site had thousands of fish bones, it contained untapped potential for our understanding of ancient local fish procurement. Milk spoilage is an inevitable occurrence, which generates waste and can result in food poisoning. When milk spoils, the off-flavor and curdling are due to excessive proliferation of various bacteria which causes pH changes. Time, temperature, environment,and previous handling practice all affects the spoilage rate. There is a need for a fast reliable and accurate method that can identify in situearly spoilage of milk. Water bloom development due to eutrophication constitutes a case of niche specialization among planktonic cyanobacteria, but the genomic repertoire allowing bloom formation in only some species has not been fully characterized. We posited that the habitat relevance of a trait begets its underlying genomic complexity, so that traits within the repertoire would be differentially more complex in species successfully thriving in that habitat than in close species that cannot. The gastrointestinal microbiome plays an important role in limiting susceptibility to infection with Clostridioides difficile. To better understand the ecology of bacteria important for C. difficile colonization resistance, we developed an experimental platform to simplify complex communities of fecal bacteria through dilution and rapidly screen for their ability to resist C. difficile colonization after challenge, as measured by 􏰀100-fold reduction in levels of C. difficile in challenged communities. We screened 76 simplified communities diluted from cultures of six fecal donors and identified 24 simplified communities that inhibited C. difficile colonization in vitro. The role by which the gut microbiome influences host health (e.g., energy equilibrium and immune system) may be partly mediated by short-chain fatty acids, which are bacterial fermentation products from the dietary fibers. However, little is known about longitudinal changes in gut microbiome metabolites during cohabitation alongside social contact. In common marmosets (Callithrix jacchus), the gut microbiome community is influenced by social contact, as newly paired males and females develop convergent microbial profiles. Background: The gut microbiome harbors trillions of bacteria that play a major role in dietary nutrient extraction and host metabolism. Metabolic diseases such as obesity and diabetes are associated with shifts in microbiome composition and have been on the rise in Westernized or highly industrialized countries. Background: Early infant feeding with intact or extensively hydrolyzed (EH) proteins or free amino acids (AA) may differentially affect intestinal microbiota composition and immune reactivity. Abstract: Only 5% of Americans consume the recommended amount of dietary fiber. In an online simulated shopping experiment, we examined whether a fiber-focused point-of-decision prompt (PDP) would influence consumers to choose food products that were higher in this important nutrient. We hypothesized that participants exposed to the dietary fiber PDP would choose products with more dietary fiber/serving than those who were not exposed to the PDP. The experiment was completed by 753 participants. Participants were randomly assigned to a condition in which they were not exposed to a PDP (the no-PDP condition), a personalized PDP, or PDP without personalization. Choices …

In May 2019, the International Scientific Association for Probiotics and Prebiotics (ISAPP) convened a panel of nutritionists, physiologists and microbiologists to review the definition and scope of synbiotics. The panel updated the definition of a synbiotic to “a mixture comprising live microorganisms and substrate(s) selectively utilized by host microorganisms that confers a health benefit on the host”. The panel concluded that defining synbiotics as simply a mixture of probiotics and prebiotics could suppress the innovation of synbiotics that are designed to function cooperatively. Scope: Previous studies have suggested that diets rich in omega-3 and low in omega-6 long- longchain polyunsaturated fatty acids (PUFAs) can limit the development of metabolic syndrome (MetS). Transgenic soybeans yielding oils enriched for omega-3 PUFAs represent a new and readily-available option for incorporating omega-3 PUFAs into diets to provide health benefits. Methods and Results: Transgenic soybean oils, enriched for either stearidonic acid (SDA) or eicosapentaenoic acid (EPA), are incorporated into diets to test their effects on limiting the development of MetS in a mouse model of diet-induced obesity. Polyphenol extracts from red raspberry (RR) whole fruit or pulp, but not seed, attenuate high-fat (HF) dietinduced obesity in mice. Because host metabolism is linked to the microbiota, we investigated the effects of polyphenols from RR fruit, pulp, and seed on the microbiome. RR polyphenols significantly decreased the abundance of specific taxa that were increased during HF feeding relative to a low-fat diet, including Ruminococcus and an unclassified genus from Clostridiales. Compared to a HF diet, pulp and seed polyphenols increased Roseburia abundance and decreased levels of an unclassified genus from Mogibacteriaceae. Two cosegregating single-nucleotide polymorphisms (SNPs) in human TLR4, an A896G transition at SNP rs4986790 (D299G) and a C1196T transition at SNP rs4986791 (T399I), have been associated with LPS hyporesponsiveness and differential susceptibility to many infectious or inflammatory diseases. However, many studies failed to confirm these associations, and transfection experiments resulted in conflicting conclusions about the impact of these SNPs on TLR4 signaling. Cassava starch was mixed with hydrochloric acid solution to obtain the final acid concentration of 0.04-0.10% dry starch basis, dried at 50oC until having <5% moisture, and dextrinized at 100-120oC for 60-180 min. As acid concentration, heating temperature and time increased, water solubility, reducing sugar content, total dietary fiber (TDF) content and proportion of high molecular weight fiber fraction of RDs increased while their whiteness decreased. For the solution containing RDs produced under mild conditions (0.04-0.08% HCl, 100°C, 60 min), an endothermic peak at 45-70oC, having enthalpy of 1.66-2.14 J/g was detected. However, no endotherm was detected from the solution of RDs processed under extreme conditions. Harsher dextrinization conditions resulted in the RDs with slightly higher molecular weight but containing shorter branched chains. Dextrinization resulted in the formation of α-1,2, α-1,6, β-1,2, β-1,4 and β-1,6 in RDs. Lower proportion of α-1,4 linkage and α-/β-reducing ends with higher proportion of β-1,2, β-1,4, α-/β-1,6 linkages and degree of branching (DB) were found in RDs prepared under stronger dextrinization conditions. Although indigestible portion was enhanced by dextrinization, TDF of the RDs were only 7-47%. To increase the TDF content, RDs prepared from 5 different conditions (0.04% and 0.06% HCl, 120oC, 60-180 min), having >30% TDF, were selected for RMD production. The 30% RD solutions were treated with commercial α-amylase enzyme at 70oC, pH 6, for 90 and 120 min, to obtain the final dextrose equivalent of 8 and 12, respectively.
