The lemurs of Madagascar include numerous species characterized by folivory across several families. Many extant lemuriform folivores exist in sympatry in Madagascar’s remaining forests. These species avoid feeding competition by adopting different dietary strategies within folivory, reflected in behavioral, morphological, and microbiota diversity across species. These conditions make lemurs an ideal study system for understanding adaptation to leaf-eating. Most folivorous lemurs are also highly endangered. The significance of folivory for conservation outlook is complex. Though generalist folivores may be relatively well equipped to survive habitat disturbance, specialist folivores occupying narrow dietary niches may be less resilient. An expert panel was convened in September 2019 by The International Scientific Association for Probiotics and Prebiotics (ISAPP) to develop a definition for fermented foods and to describe their role in the human diet. Although these foods have been consumed for thousands of years, they are receiving increased attention among biologists, nutritionists, technologists, clinicians and consumers. Despite this interest, inconsistencies related to the use of the term ‘fermented’ led the panel to define fermented foods and beverages as “foods made through desired microbial growth and enzymatic conversions of food components”. Background: A higher intake of dietary fiber is associated with a decreased risk of chronic inflammatory diseases such as cardiovascular disease and inflammatory bowel disease. This may function in part due to abrogation of chronic systemic inflammation induced by factors such as dysbiotic gut communities. Data regarding the detailed influences of long-term and recent intake of differing dietary fiber sources on the human gut microbiome are lacking.

The goal of this study was to determine how the date of harvest impacts the quality characteristics of Aronia mitschurinii (A. K. Skvortsov and Maitul.) ‘Viking’ and ‘Galicjanka’ berries. Aronia berries were collected from farms in the Midwestern and Northeastern United States over seven weeks of harvest during 2018, 2019 and 2020. The berries were analyzed for total phenol, anthocyanins, proanthocyanins, sugar, and acid. Aronia berry composition modestly deviated between each year of the study. Berries harvested in 2018 had the highest total phenols and proanthocyanidins, both increasing in content from weeks 1–5 from 15.90 ± 3.15–19.65 mg gallic acid …

Two handheld near infrared (NIR) spectrometers were used to quantify crude protein (CP) content of mixed forage and feedstuff composed of Sweet Bran, distiller’s grains, corn silage, and corn stalk. First was a transportable spectrometer, which measured in the visible and NIR ranges (320–2500 nm) with a spectral interval of 1 nm (H1). Second was a smartphone spectrometer, which measured from 900–1700 nm with a spectral interval of 4 nm (H2). To improve the rough texture and hypoglycemic ability of sea buckthorn insoluble dietary fiber (IDF), a novel combined modification method was developed in this study. The IDF was treated with ball milling and cellulase treatment to obtain co-modified insoluble dietary fiber (CIDF). The physicochemical and functional properties of IDF, milled insoluble dietary fiber (MIDF), and CIDF were studied. After treatments, MIDF had smaller particle sizes and a looser structure, and CIDF exhibited a wrinkled surface and sparse porous structure according to scanning electron microscopy (SEM) and X-ray diffraction. Coriandrum sativum (Coriander) or Chinese parsley is a culinary herb with multiple medicinal effects, which is widely used in cooking and traditional medicine. It is enriched with essential oils and anti-oxidant compounds with unknown significance. To explore the untapped reservoir of Coriander, we studied the transcriptome and metabolic profiles from three developmental stages. Here, we identified 10 tyrosine metabolic pathway-related genes (TMPRGs), six porphyrins and chlorophyll metabolic pathway-related genes (PCMPRGs), and five Vitamin E metabolic pathway-related genes (VEMPRGs). Background: Oral microbiota is believed to play important roles in systemic diseases, including cancer. Methods: We collected oral samples (tongue, buccal, supragingival, and saliva) and pancreatic tissue or intestinal samples from 52 subjects, and characterized 16S rRNA genes using high-throughput DNA sequencing.

Results: Bray–Curtis plot showed clear separations between bacterial communities in the oral cavity and those in intestinal and pancreatic tissue samples. PERMANOVA tests indicated that bacterial communities from buccal samples were similar to supragingival and saliva samples, and pancreatic duct samples were similar to pancreatic tumor samples, but all other samples were significantly different from each …

The gut microbiome plays an important role in early life, protecting newborns from enteric pathogens, promoting immune system development and providing key functions to the infant host. Currently, there are limited data to broadly assess the status of the US healthy infant gut microbiome. To address this gap, we performed a multi-state metagenomic survey and found high levels of bacteria associated with enteric inflammation (e.g. Escherichia, Klebsiella), antibiotic resistance genes, and signatures of dysbiosis, independent of location, age, and diet. In Honduras, corn is the most important staple food for the majority of the population. This high-demand crop is susceptible to biological contamination with mycotoxins, which could represent a latent hazard for consumers. To assess the incidence of aflatoxins and fumonisins in grain, masa and tortilla, and the dietary exposure to these substances among consumers, a study was conducted in four municipalities in the department of Lempira. Total aflatoxin and fumonisin content were quantified by fluorometry in 144 samples from 48 farmers. Electrodialysis with bipolar membrane (EDBM) is promising to recover phospholipids (PLs) from sweet whey and whey protein concentrate (WPC), as it promotes lipoprotein complex formation following a decrease in pH and ionic strength. The aim of this work was to study the impact of dilution factor (without dilution, with a 2X, 4X and 6X dilution) after EDBM on the process performances. For both products, a 4X dilution, which cor- responds to a decrease in ionic strength of 81.4 ± 1.5 % for sweet whey and 79.4 ± 0.4 % for WPC, seemed sufficient to maximize lipoprotein complex formation as a …

The objective of this research was to investigate the physical, chemical, and functional properties of tapioca starch subjected to solid-state modification by using nonthermal dielectric barrier discharge (DBD) plasma treatment using different gases (helium and argon), voltage levels (10 kV and 15 kV), and treatment times (5, 10, and 15 minutes). After treatment, an increase in L* value and a marginal decrease in pH value of all treated samples were noted. Scanning electron micrographs showed dented starch granules after the plasma treatment but showed birefringence. โคพีพอดจัดอยู่ในกลุ่มของครัสเตเชียนขนาดเล็กที่มีบทบาทสำคัญในการเป็นอาหารมีชีวิตในการอนุบาลสัตว์น้ำวัยอ่อน โคพีพอดเป็นแหล่งของกรดไขมันไม่อิ่มตัวเชิงซ้อน (polyunsaturated fatty acid, PUFA) ซึ่งมีความสำคัญต่อพัฒนาการของสัตว์น้ำวัยอ่อน งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาองค์ประกอบของกรดไขมันในแต่ละระยะพัฒนาการของโคพีพอด Apocyclops royi สายพันธุ์ไทย (A. royi-TH) โดยศึกษาในโคพีพอดระยะนอเพลียส (NP) โคพีโพดิด (CD) และตัวเต็มวัย (AD) ที่เลี้ยงด้วยสาหร่ายสีเขียว Tetraselmis sp. ซึ่งเป็นสาหร่ายที่ไม่พบกรดไขมัน DHA จากการวิเคราะห์ด้วยแก๊สโครมาโตรกราฟี-แมสสเปกโตรเมทรี (GC/MS) พบว่าโคพีพอด A. royi-TH มีกรดไขมัน PUFA, EPA และ DHA ในปริมาณสูงกว่าอาหารสัตว์น้ำชนิดอื่น ๆ โดยพบกรดไขมัน PUFA สูงในโคพีพอดระยะ CD (38.53%) และ AD (41.85%) ในขณะที่พบกรดไขมัน PUFA ปริมาณต่ำที่สุดในโคพีพอดระยะ NP (22.50%) นอกจากนี้พบว่าโคพีพอดทุกระยะพัฒนาการมีกรดไขมัน LC-PUFA ปริมาณสูง (5.27-10.36%) โดยพบกรดไขมัน DHA มากที่สุดในระยะ AD (4.85%) รองลงมาระยะ CD (3.54%) และระยะ NP (2.78%) จากการเปรียบเทียบองค์ประกอบของกรดไขมันในโคพีพอดที่เลี้ยงด้วยสาหร่ายTetraselmis sp. ที่มีกรดไขมัน EPA ต่ำ (ArTet) และ Chaetoceros sp. ที่มีกรดไขมัน EPA สูง(ArChaeto) พบว่าโคพีพอด ArChaeto มีกรดไขมัน DHA ปริมาณสูงกว่าโคพีพอด ArTet จึงสามารถคาดการณ์ได้ว่าองค์ประกอบของกรดไขมันในสาหร่ายที่แตกต่างกันส่งผลต่อปริมาณกรดไขมัน DHA ที่พบในโคพีพอด จากนั้นได้ศึกษาการแสดงออกของยีนดีแซททูเรส ArD6D ที่มีความสำคัญต่อการสังเคราะห์กรดไขมัน DHA พบว่าระดับการแสดงออกของยีน ArD6D เพิ่มขึ้นอย่างมีนัยสำคัญในโคพีพอดระยะ AD (p<0.05) สอดคล้องกับปริมาณกรดไขมัน DHA ที่เพิ่มขึ้นในโคพีพอดระยะ AD ซึ่งแสดงให้เห็นว่ายีน ArD6D อาจมีหน้าที่เกี่ยวข้องกับการสังเคราะห์กรดไขมัน DHA ในแต่ละระยะพัฒนาการของโคพีพอด และเมื่อศึกษาการแสดงออกของยีน ArD6D ในโคพีพอด ArTet และ ArChaeto พบว่าระดับการแสดงออกของยีน ArD6D ในโคพีพอด ArChaeto มีการแสดงออกที่สูงอย่างมีนัยสำคัญเมื่อเทียบกับโคพีพอด ArTet (p<0.05) ซึ่งสอดคล้องกับปริมาณกรดไขมัน DHA ที่เพิ่มขึ้นในโคพีพอด ArChaeto ผลจากการวิจัยบ่งชี้ว่าโคพีพอด A. royi-TH ทั้ง 3 ระยะพัฒนาการสามารถสังเคราะห์กรดไขมัน DHA ผ่านวิถีการสังเคราะห์กรดไขมัน LC-PUFA และกรดไขมันในสาหร่ายส่งผลต่อปริมาณ DHA ของโคพีพอด โดยข้อมูลจากงานวิจัยนี้มีประโยชน์ต่อการเพิ่มคุณค่าทางโภชนาการของโคพีพอด A. royi-TH เพื่อใช้เป็นอาหารสัตว์น้ำวัยอ่อนในอุตสาหกรรมการเพาะเลี้ยงสัตว์น้ำของไทย

Lysine is the most limiting essential amino acid in cereals, and efforts have been made over the decades to improve the nutritional quality of these grains by limiting storage protein accumulation and increasing lysine content, while maintaining desired agronomic traits. Shiga toxigenic E. coli (STEC) are an important cause of foodborne disease globally with many outbreaks linked to the consumption of contaminated foods such as leafy greens. Existing methods for STEC detection and isolation are time-consuming. Rapid methods may assist in preventing contaminated products from reaching consumers. This proof-of-concept study aimed to determine if a metabolomics approach could be used to detect STEC contamination in spinach. In this regard, we studied the change in caloric content and the content of trans-acids in margarines with a change in their fat content. Creating dietary margarines using biologically valuable substances is the purpose of the work. According to the results of the experiments, it was found that the use of soybean oil, edible vegetable phospholipids and a Jerusalem artichoke extract in the margarine, allowed reducing the amount of fat and enriching the margarine with omega-3 and omega-6 fatty acids, dietary fibre, inulin and other water-soluble substances. Based on these studies prepared margarine enriched inulin and essential fatty acids, which provide not only a preventive property of the finished product, but also high flavor indicators, as well as, original and attractive appearance.
