It is an original intellectual work created by Ashwini Wagle, Ed.D., MS, RD, FAND, Chair and Professor, Department of Nutrition, Food Science, and Packaging at San José State University (SJSU).

Microalgae are a sustainable protein source, yet few species are used for human nutrition. This study evaluated eight species for protein quality, digestibility, and peptide profiles after simulated gastrointestinal digestion using INFOGEST. Amino acid content, and intestinal-phase peptide mixtures were analysed by mass spectrometry. The methanol precipitation method was used to separate digested (supernatant) and undigested (pellet) peptides following in vitro INFOGEST digestion. The pellet was further separated by molecular weight into 3–10 kDa and >10 kDa fractions to isolate the lower molecular weight peptides from the higher ones. Mangoes (Mangifera indica L.) are notably susceptible to chilling injury (CI) when stored below 13 °C. This temperature threshold is too high for extended storage. Therefore, the influence of postharvest immersion in melatonin (MT) (50, 75, 100 µmol L− 1) for 120 min on CI in ‘Kensington Pride’ mangoes kept at 5 ± 1 °C for 21 or 28 d was investigated. The most effective MT concentration was 75 µmol L− 1 causing 36.3% reduction in CI incidence compared to control. This study evaluated the effect of incorporating chia seed gel powder (CSGP) as a natural, clean-label stabilizer on the physicochemical, functional, microbiological, microstructural, antioxidant, and sensory properties of probiotic low-fat yogurt (PLFY) during 21 days of refrigerated storage. Six formulations were prepared using 0–2.5% CSGP, including Control (0% CSGP), YOG1 (0.5% CSGP), YOG2 (1.0% CSGP), YOG3 (1.5% CSGP), YOG4 (2.0% CSGP), and YOG5 (2.5% CSGP). Results showed that increasing CSGP levels noticeably enhanced the total solids, protein content, viscosity, hardness, and water-holding capacity of the PLFY (p < 0.05), while consistently reducing syneresis. Antioxidant activity also rose with higher CSGP concentrations, with YOG5 exhibiting the greatest DPPH scavenging activity (35.12%). Confocal laser scanning microscopy revealed a denser and more uniform protein network in PLFY fortified with CSGP, consistent with rheological measurements showing increased storage (G′) and loss (G″) moduli. Probiotic viability significantly increased (p < 0.05) in CSGP-added samples, indicating a potential prebiotic effect of CSGP. Sensory results demonstrated that although higher CSGP levels slightly darkened the yogurt color, body, texture, flavor, and total sensory scores improved markedly, with YOG5 gaining the highest total score (81.77). The results demonstrate that CSGP acts as a highly effective, multifunctional ingredient that enhances texture, stability, probiotic viability, and antioxidant capacity, making it a strong clean-label candidate for developing high-quality, functional probiotic low-fat yogurt.

The influence of substituting barley malt with milled rice on the sensory and chemical characteristics of nonalcoholic beers (NAB) was investigated. Physicochemical and volatile analyses were conducted on the NABs. Original gravities ranged from 6.71% w/w (100% barley malt) to 7.15% w/w (100% rice), with alcohol contents between 0.33% v/v (70% barley/30 %rice) and 0.45 % v/v (100% rice). Color decreased from 10.8 EBC (100% barley malt) to 3.3 EBC (100% rice). Fresh produce is highly perishable, necessitating various postharvest treatments to minimize quality loss, extend shelf-life, and facilitate international trade. This study investigated the potential of a single low-dose gamma irradiation treatment as an alternative to commercially used chemical treatments for protecting ‘Granny Smith’ apples against insect pests and postharvest disorders. ‘Granny Smith’ apples harvested in 2019 and 2020 were treated with gamma irradiation at doses of 240 or 860 Gray (Gy) or with commercial chemical applications of 1-methylcyclopropene (1-MCP), diphenylamine (DPA), or methyl bromide (MeBr). Color and fluorescence spectrometry were evaluated as rapid, objective tools for verifying the cleanliness of poultry-processing food-contacting surfaces contaminated with a model chicken solution across six common materials. Both techniques detected chicken residues at dilutions several orders of magnitude below human visual and olfactory thresholds, with stainless steel and blue plastic yielding the largest color differences between clean and contaminated states and fluorescence measurements remaining highly sensitive on all tested surfaces. Representative limits of detection were on the order of 1:50-1:100 dilution of chicken residue for color measurements on most surfaces and approximately 1:50 for fluorescence measurements, compared with human …

Introduction: The incidence of celiac disease and gluten sensitivity has increased, driving demand for gluten-free (GF) baked goods. Artificial intelligence (AI) technologies are increasingly integrated into healthcare, yet their economic value remains uncertain. Traditional economic evaluation methods may not adequately capture the unique features of AI, including dynamic model evolution, scalability, and broader societal impacts. This systematic review synthesized existing evidence on the cost-effectiveness of AI-based healthcare interventions and assessed the methodological rigor of published studies. Excessive fructose intake leads to fatty liver and kidney dysfunction, with associated inflammation and metabolic disturbances. This study evaluated the effects of fish oil rich in ω-3 fatty acid on these conditions in rats fed a high- fructose diet. Male Sprague Dawley rats were divided into three groups: normal diet, high-fructose (HF) diet, and high- fructose diet with 5% fish oil supplementation. The experiment lasted for 21 weeks. Fish oil supplementation significantly reduced blood levels of total cholesterol, triglycerides, and advanced glycation end products (AGEs) in HF-fed rat. [Objective ] This study aims to investigate the effects of aeration on the microbial community structure and metabolic functional genes in pickles.[Method ] Amplicon sequencing was carried out for the 16S rRNA and ITS rRNA gene fragments from three groups (aerated group,sealed group,and the initial group ) within the same pickle system.The EasyAmplicon pipeline and PICRUSt 2 were employed to assess bacterial and fungal community diversity,composition,and functional gene variations.[Result ] Compared with the initial group,the sealed group showed only minor changes in microbial diversity,whereas the aerated group exhibited significant microbial divergence from the initial group.After aeration,the number of rare taxa …

[Objective ] This study aimed to investigate the impact of curcumin-loaded ovalbumin (OVA )-carboxymethylcellulose (CMC ) (OVA -CMC-Cur ) colloidal particles on the stability of fish oil emulsions.[Method ] The OVA -CMC-Cur colloidal particles were prepared with OVA and CMC at varying mass ratios and pH.The colloidal particles were then used as the stabilizer to prepare fish oil emulsions.The structural characteristics,stability,and digestive behaviors of the emulsions were investigated.[Result ] At the OVA -CMC mass ratio of 2∶1,the OVA -CMC-Cur particle-stabilized fish oil emulsions exhibited smaller particle sizes.These particles formed a dense,compact interfacial film at the oil-water interface,resulting in more uniform …

The Sletr1-2 allele, which reduces ethylene sensitivity in tomatoes, offers a promising approach to extending fruit shelf life by slowing ripening-related metabolism. However, the trait’s success depends on compatibility with the recipient cultivar’s genetic background. This study evaluated fruit characteristics of F1 near-isogenic line (NIL) hybrids carrying Sletr1-2 in the commercial backgrounds ‘Costoluto’, ‘Oxheart’, and ‘Sart Roloise’.
