Plant protein has been progressively demanded as a new-trend, healthier-choice and bioeconomic ingredient. However, the fundamental and technical knowledge of plant-based protein to understand and improve their structural functions are limited. In this study, pea protein isolate (PPI) were selected to be evaluated its emulsifying role on the formation, stability and tribology of model oil-in-water emulsions. Since PPI is a functional ingredient with hypoallergenic property. Firstly, the emulsifying property of PPI were investigated with corn oil-in-water emulsion systems. The purpose of this experiment is to determine the thermal kinetic parameters of Salmonella in moisture-enhanced, reconstructed ground chicken patties as affected by temperatures and salt concentrations. Salmonella is responsible for 35% of the foodborne illnesses associated with poultry products (Batz et al., 2011). Nonintact reconstructed chicken meat is mixed with brine solutions containing various salt and polyphosphate concentrations to increase water-holding capacity, decrease cooking losses, improve sensory tasting scores, and maintain the good quality of completed chicken products (Gill et al., 2004). From the early twentieth century onward, much research has focused on improving infant milk formula (IMF). During the development of IMF, breast milk is commonly considered as the reference and IMF manufacturers are thriving to mimic the composition and/or to match the functionality of breast milk as closely as possible. Breastfeeding is recognised as the gold standard for feeding newborns and infants. However, infants who cannot be breast-fed or for whom breast milk is not available, can be fed with bovine infant milk formula (IMF) as a substitute. Researchers and producers of IMF strive to continually improve or “humanise” the composition and functionality of IMF. During production of IMF it must undergo several heat treatment steps, e.g. heat-sterilisation or spray-drying, in order to provide a safe product to the infant. Wastewater-recovered phosphorus (P), in the form of the mineral struvite (MgNH4PO4∙6H2O), may provide a sustainable alternative to decreasing rock-phosphate reserves. Struvite can be generated via precipitation methods, potentially reducing the amount of P runoff to aquatic ecosystems. Bilirubin levels in obese humans and rodents have been shown to be lower than in their lean counterparts. Some studies have proposed that the glucuronyl UGT1A1 enzyme that clears bilirubin from the blood increases in the liver with obesity. UGT1A1 clearance of bilirubin allows more conjugated bilirubin to enter the intestine, where it is catabolized into urobilin, which can be then absorbed via the hepatic portal vein. We hypothesized that when bilirubin levels are decreased, the urobilin increases in the plasma of obese humans, as compared to lean humans. Plant-based proteins, in particular pulse proteins, have grown in popularity worldwide. Germination, or sprouting, is an effective method to release peptides and other dietary compounds. However, the combination of germination and gastrointestinal digestion in enhancing the release of dietary compounds with potential health-beneficial biological activity has yet to be entirely elucidated. The present study illustrates the impact of germination and gastrointestinal digestion on the release of dietary compounds with antioxidant activity from chickpeas (Cicer arietinum L.). The Obese strain (OS) of chickens spontaneously develops autoimmune thyroiditis (SAT) and is a well-established biomedical model for Hashimoto’s thyroiditis in humans. Both conditions are characterized by the infiltration of thyroid glands with mononuclear immune cells resulting in the destruction of thyroid tissue and impairment of the thyroid’s endocrinological functions. Heat stress (HS) is a growing concern in broiler production. Little is known regarding the effect of HS on immune function. To examine the effects of HS on innate immunity, the local- and systemic-inflammatory responses to lipopolysaccharide (LPS) were examined in Cobb 500 male broiler chicks reared under thermoneutral (TN) or cyclic HS conditions. Spent coffee grounds (SCG) are a by-product from coffee brewing process. SCG contains a considerable amount of organic compounds and is a great source of antioxidants. This research aimed to evaluate the antioxidant activities of SCG and SCG extracts by comparing different solvent (hexane and 60 - 90% ethanol) extractions, together with determining the effect of different concentration (5, 10, 15, 20 and 25%) of SCG extracts (SCG) and comparing these extracts with commercial antioxidants (BHA (A), BHT (T), tocopherol (TO)) for application to vegetable oil. โคพีพอด Apocyclops royi เป็นแพลงก์ตอนสัตว์ในกลุ่มครัสเตเชียนที่มีบทบาทสำคัญต่อการอนุบาลสัตว์น้ำวัยอ่อนเนื่องจากมีคุณค่าทางโภชนาการที่โดดเด่นและสามารถสังเคราะห์กรดไขมันสายยาวไม่อิ่มตัวเชิงซ้อน (LC-PUFA) ในงานวิจัยนี้ได้ศึกษาหน้าที่และการแสดงออกของยีน Fatty acid-binding protein (FABP) ซึ่งเป็นโปรตีนที่มีหน้าที่สำคัญในการขนส่งกรดไขมัน ผลจากการศึกษาลักษณะสมบัติของยีน ArFABP ของโคพีพอดสายพันธุ์ไทย A. royi-TH พบว่าประกอบด้วยบริเวณ open reading frame จำนวน 465 คู่เบส ซึ่งสามารถแปลรหัสเป็นโปรตีนขนาด 154 กรดอะมิโน โดยโปรตีน ArFABP ประกอบด้วยบริเวณ Lipocalin_7 domain ซึ่งมีความเหมือนกับโปรตีน FABP ในโคพีพอด Caligus rogercresseyi 55% จากการศึกษาหน้าที่ของยีน ArFABP ต่อความเกี่ยวข้องในการสังเคราะห์กรดไขมัน PUFA ในโคพีพอด ได้ทำการตรวจสอบการแสดงออกของยีน ArFABP ในตัวอย่างโคพีพอด A. royi-TH กลุ่มที่เลี้ยงด้วย Tetraselmis sp. (TET) เปรียบเทียบกับ Thalassiosira sp. (THA) พบว่าโคพีพอดกลุ่มที่เลี้ยงด้วย THA มีระดับการแสดงออกของยีน ArFABP สูงกว่าโคพีพอดกลุ่มที่เลี้ยงด้วย TET อย่างมีนัยสำคัญทางสถิติ ซึ่งสอดคล้องกับผลการวิเคราะห์องค์ประกอบของกรดไขมัน พบว่าโคพีพอดกลุ่มที่เลี้ยงด้วย THA มีสัดส่วนของกรดไขมัน LC-PUFA และกรดไขมัน arachidonic acid (ARA) สูงกว่ากลุ่มที่เลี้ยงด้วย TET อย่างมีนัยสำคัญทางสถิติ นอกจากนี้ผลจากงานวิจัยยังพบว่าระดับการแสดงออกของยีน ArFABP มีการแสดงออกสูงในโคพีพอดที่เลี้ยงในสภาวะความเค็ม 15 พีพีที (ความเค็มต่ำ) เปรียบเทียบกับกลุ่มโคพีพอดที่เลี้ยงในสภาวะความเค็ม 25 พีพีที (กลุ่มควบคุม) โดยพบว่าโคพีพอดกลุ่มความเค็ม 15 พีพีที มีสัดส่วนของกรดไขมัน ARA สูงกว่ากลุ่มความเค็ม 25 พีพีที อย่างมีนัยสำคัญทางสถิติ โดยจากผลการศึกษานี้แสดงให้เห็นว่ายีน ArFABP อาจมีบทบาทเกี่ยวข้องกับการขนส่งกรดไขมันในการสังเคราะห์กรดไขมัน LC-PUFA ในโคพีพอด และจากการศึกษาไมโครไบโอมพบว่าการเพาะเลี้ยงโคพีพอด A. …

This study aimed to investigate the impact of using dietary fibers inulin (IN) and pectin (PE) combined with maltodextrin (MD) as wall materials for betacyanin encapsulation on its physicochemical properties, storage stability, and in vitro release behavior. The objective of this study was to optimize the ultrasound-assisted extraction (UAE) conditions for tamarind seed extract (TSE) using response surface methodology (RSM). Subsequently, microcapsules were produced via spray drying using various wall materials and ratios. The extraction conditions were temperature levels (30, 40, and 50 °C), exposure periods (5, 10, and 15 minutes), and ethanol concentrations (30, 40, and 50 % v/v). The optimization criteria focused on maximizing the total phenolic compound, total flavonoid content, and antioxidant activity, assessed using DPPH free radical scavenging and FRAP assays. Thua nao is a fermented soybean product that is widely consumed, especially in the northern part of Thailand. Thua nao can be used as a condiment to enhance the aroma and flavor of foods. In this study, stir bar sorptive extraction (SBSE) coupled with gas chromatography‒mass spectrometry/olfactometry (GC‒MS/O) was used to analyze volatile aroma compounds in thua nao products. Thua nao fermented with commercial Bacillus subtilis under controlled conditions exhibited the presence of compounds such as 2-methyl butanoic acid, phenylethyl alcohol, benzaldehyde, 2,5-dimethylpyrazine, 2,6-dimethylpyrazine, and 2-methoxy phenol. The weight changes, survival/mortality rates, and proximate compositions of Tenebrio molitor (yellow mealworm) larvae whose diets were supplemented with apple pomace were analyzed after a 4-week feeding study to examine the nutritional quality of the insects for use as a future potential food source. Background: Recent foodborne illness outbreaks have been linked to fresh fruits and vegetables. For public safety, awareness of the risks of contamination from foodborne pathogens that can occur during post-harvest farming practices is essential to prevent foodborne outbreaks. A massive amount of crustaceans and bivalves are consumed each year, leading to millions of tons of processing side streams from the seafood industry. Considering the current trend of (bio)circular and zero-waste food production, crustacean and bivalve processing side streams (CBPS) seem a promising and emerging resource for producing high-value-added products. This paper highlights the general composition of CBPS with high commercial values, namely, protein, lipids, carotenoids, minerals and chitins. This study characterized the physicochemical, technofunctional, and in vitro antioxidant properties along with the AA profile and score of a sprat protein enzymatic hydrolysate (SPH). Furthermore, the impact of the SPH on the growth, proliferation, and muscle protein synthesis (MPS) in skeletal muscle (C2C12) myotubes was examined. The SPH displayed good solubility and emulsion stabilization properties containing all essential and non-essential AAs. Limited additional hydrolysis was observed following in vitro-simulated gastrointestinal digestion (SGID) of the SPH. Lacprodan PL20, a dairy ingredient that is rich in protein and polar lipids, was added into set yoghurts produced from nonhomogenized raw milk. The set yoghurts were prepared using concentrations of 2%, 4%, and 6% Lacprodan PL20, while the control sample was only supplemented with skim milk powder. The effect of Lacprodan PL20 concentrations on the physical and chemical properties, rheology, and microstructure of set yoghurt was thoroughly investigated to determine some likely improvement or changes in quality. Consequently, Lacprodan PL20 showed a gradual improvement in the set yoghurt nutritive values, water holding capacity, and apparent viscosity. The results indicated …

Algae-derived protein has immense potential to provide high-quality protein foods for the expanding human population. To meet its potential, a broad range of scientific tools are required to identify optimal algal strains from the hundreds of thousands available and identify ideal growing conditions for strains that produce high-quality protein with functional benefits.
