Sustaining Community Health Through Impactful Snap-Ed Initiatives In Utah, Lacee Jimenez, Kristi Strongo, Lea Palmer, Lendel K. Narine, Heidi Leblanc

Outcomes and Impact Quarterly

Create Better Health (CBH), Utah’s SNAP-Ed program, addresses food insecurity and chronic disease prevention through nutrition education, policy, systems, and environmental (PSE) initiatives, and social media marketing. From 2024 to 2025, CBH reached over 13,500 Utahns through direct education and 81,000 through community interventions. Evaluation results showed significant improvements in nutrition behaviors, including increased fruit and vegetable intake, food resource management, and label use. Follow-up surveys showed sustained behavior change. CBH’s comprehensive approach demonstrates measurable public health impact and points to the importance of continued investment in nutrition education and food access programs to build healthier, food-secure communities.

The number of Hispanic students in Texas public schools has significantly increased over the past 20 years, yet their level of academic success continues to lag. Hispanic, emergent bilingual, low-socioeconomic, early elementary students face educational challenges related to barriers surrounding language and culture differences, limited resources, unmet needs, feelings of isolation, and an underprepared educational support system. America’s mental health crisis uniquely impacts rural areas. Challenges surrounding intention and accessibility to engage in mental health-fostering behaviors exacerbate disparities in rural mental healthcare. In this study, Cooperative Extension personnel assess rural Mississippians’ intention to engage in mental health-fostering behaviors, accessibility to mental health-fostering behaviors, and helpfulness of increased access to resources for mental health challenges to determine if relationships exist between these variables. Rural Mississippi adults were recruited via an online survey panel to complete a 147-item web-based questionnaire (n = 274). The number of single adult households has increased over the previous decades, and few health education interventions address these unique living situations, which come with various economic challenges. The Cooking for One curriculum is a cooking-based intervention designed to improve nutrition, food safety, food resource management, and physical activity (PA) behaviors among single adults. This curriculum includes six lessons, each with an educational and hands-on cooking component. Participants included 1,546 adults recruited through Supplemental Nutrition Assistance Education programs in the state of Michigan. Natural disasters are expected to become more frequent and severe, increasing the need for effective disaster management. Governments are emphasizing community awareness and local self-reliance, with the Cooperative Extension Services (CES) playing a vital role in distributing science-based knowledge and supporting preparedness efforts. This qualitative content analysis (QCA), guided by Framing Theory, examined how CES disseminated weather-related disaster preparedness and response information from 2003 to 2023 on Extension Service websites. Background: Physical activity (PA) engagement in youth is associated with numerous health benefits. However, youth PA behaviors are influenced by a complex set of factors including school and community environments and broader societal influences. Rec-ConnectTM is a community-based intervention that aims to impact PA behavior in youth. Purpose: To assess changes in youth PA behavior across multiple years of Rec-ConnectTM implementation. Methods: SNAP-eligible youth [aged 8 to 17 (n=261, matched)] who participated in Rec-ConnectTM completed a pre and post survey to assess PA knowledge and behavior change. Chatgpt In Teaching English As A Foreign Language: Teacher And Learner Perspectives, Sameiha Alhussain N Khawaji

University of Tabuk Journal for Humanities and Social Sciences

This study investigates ChatGPT as a supplementary tool in English as a Foreign Language (EFL) education through surveys of 150 teachers and 350 learners in Asia, Europe and Latin America. Results show that ChatGPT improves language proficiency by providing personalized feedback, conversational fluency (72% of users reported improvement), writing scores by 22% and vocabulary through contextualized practice. Teachers found it useful for lesson planning and administrative tasks. However, challenges such as plagiarism risks (15% of cases), occasional inaccuracies and cultural insensitivities especially in idiomatic and formal language use require ethical guidelines and human oversight. Does curriculum in Illinois high schools have evidence of National and State Health and Physical Education Standards? This study consisted of a quantitative descriptive content analysis to examine the extent to which Illinois high school curriculum material included National and State physical education and health standards. The researcher utilized a rubric that was aligned to the three sets of standards: SHAPE America’s National Physical Education Standards; the National Health Education Standards; and the Illinois Learning Standards for Physical Development and Health. Ethiopia is one of the largest countries in Africa, with a fast-growing economy, rich history, diverse agroecology, more than 70 languages, and a population exceeding 130 million. However, the country continues to face serious internal conflict, high malnutrition, and economic hardship, while the study of leadership effectiveness remains limited and lacks consistent longitudinal research. Utah State University Extension conducted a needs assessment in the Tri-County area of Utah, encompassing Uintah, Duchesne, and Daggett Counties, to identify key community priorities. Using a three-phased approach, the assessment identified mental health, strengthening relationships, and financial literacy as top concerns. These findings will inform resource allocation to Extension programming to address the region’s most urgent needs.

This project presents the development and implementation of a standardized SAE project framework designed to support equitable, work-based learning experiences across a secondary agricultural education department. The North Monterey County Unified School District (NMCUSD) in Castroville, California, serves a student population in which 87.5% are identified as low-income and nearly half are designated as English Language Learners. Families face significant barriers to accessing educational and community resources, barriers worsened by limited digital literacy and technology access. The NMCUSD Castro Plaza Family Resource Center serves as a vital hub supporting families in the predominantly rural and socioeconomically disadvantaged region. This dissertation explored how participation in a flexible blended learning (FBL) program relates to high school students’ sense of well-being, as defined by self-determination theory (SDT). SDT suggests that fulfilling three basic psychological needs is considered essential for well-being and optimal functioning. Using a mixed-methods approach, this study investigates how an FBL program affects high school students’ perceptions of the fulfillment of psychological needs — autonomy, competence, and relatedness. The purpose of this study was to identify the perceptions of educators with respect to student enrollment in voluntary pre-kindergarten classes provided through the Tennessee Department of Education in public schools. The data collection strategy used to gain teacher perspectives was through conducting one-on-one interviews with 15 educators in three Tennessee school districts. Introduction: Children in the United States face declining physical activity, poor nutrition, and increasing mental health concerns. As school time for wellness declines, out-of-school programs offer an alternative to promote healthy habits to students. A community-driven, multi-component after-school wellness camp was developed in response to a small-town needs assessment and implemented at a local elementary school to determine whether it would change participants’ beliefs held towards healthy habits.

Food insecurity is a persistent public health concern among college students that has been associated with student’s academic and mental health outcomes. This thesis examined the associations between food insecurity, academic performance (measured by GPA) and mental health (using Kessler 6 psychological distress and self-perceived mental health impacts on academic performance), among full-time undergraduate students within the California State University (CSU) system. Cross-sectional analyses were conducted using data from the Spring 2021 CSU National College Health Assessment, administered across all 23 campuses. Youth development professionals working in non-formal educational settings face the persistent challenge of translating evidence-based frameworks into effective practice. This explanatory sequential mixed-methods study examines how South Carolina 4-H agent/educators perceive and adopt the 4-H Thriving Model following mandatory statewide training. The study investigates the roles of professional identity, change readiness, and organizational factors in shaping innovation adoption decisions among Extension professionals who work with considerable autonomy within diverse community contexts.

Seasonal employment in outdoor programs—encompassing camps, guiding services, and similar organizations—plays a vital role in delivering structured outdoor experiences, yet little research has explored its enduring effects on staff over the course of their lives. This dissertation examined the long-term significance and influence of seasonal outdoor work during emerging adulthood. Guided by Significant Life Experience and Life Course Theory, an exploratory sequential mixed-methods design was used. In the qualitative phase, interviews revealed that seasonal work influenced life trajectories by contributing to identity formation, career discovery, ways of relating to others, and the navigation of trade-offs. The National Priorities and Industry Linkage Fund (NPILF), introduced in 2021 and piloted from 2022 to 2024 with an extension year in 2025, significantly expanded and diversified Work-Integrated Learning (WIL) across Australian higher education. The fund aimed to increase WIL opportunities for students, grow the pipeline of STEM-skilled graduates and improve their employment outcomes, and support universities to develop and strengthen partnerships with industry.
