Evaluation Of A Hands-On Cooking Class And Its Effects On Self-Efficacy In Relation To Healthy Eating In Type 2 Diabetics, Codi A. Jenshak-Gorzinski

Doctor of Nursing Practice Scholarly Projects

The prevalence of Type 2 diabetes is alarming and poses a great threat to U.S. national health. Chronic diabetes can lead to serious conditions such as heart attack and stroke, and can result in premature mortality (World Health Organization, 2018). Diabetes can be prevented or treated by eating a healthy diet. Cooking classes are a potential way to improve American’s knowledge of nutritional principles and help them become confident that they have the capacity to eat a healthy diet. The purpose of this DNP project was to determine if participation in cooking classes enhanced self-efficacy as it pertains to healthy …

Investigating Students’ Perceptions Of Screencasting Style Of Video Feedback In Online Courses, Patrick R. Lowenthal, Holly S. Fiock, Dana L. Shreaves, Eric S. Belt

Educational Technology Faculty Publications and Presentations

Feedback is an essential part of the learning process. Asynchronous online courses are marked by an abundance of text-based feedback. Yet, video feedback in asynchronous online courses is a nascent field of inquiry. This study investigated student perceptions of screencasting style of video feedback in online courses. During this course, students received video feedback from their instructor, and provided and received video feedback to their peers. A total of 84 graduate students completed an end-of-course survey between 2018 and 2020 that focused in part on student satisfaction and perceived learning with video feedback and overall perceptions of social presence. Results …

Impact Of Gamification On An Online Middle School Classroom, Jeremy R. Hein Mar 2022

Impact Of Gamification On An Online Middle School Classroom, Jeremy R. Hein

Masters Theses

Gamification is defined as the use of game elements in non-game contexts. The gamified element explored in this thesis is a leaderboard with various forms of engagement being tabulated. This study investigates the impact a leaderboard has on the behavioral engagement of an online middle school classroom. Research has revealed that elements of gamification can increase engagement but there is a gap in research that focuses solely on a leaderboard as an intervention to increase engagement. Also missing from the literature were studies conducted in middle school settings. The study presented in this thesis addresses these limitations and provides value …

The Evolution Of Participatory Culture Through Interactive Storytelling On Tiktok, Kristina Chapman Mar 2022

The Evolution Of Participatory Culture Through Interactive Storytelling On Tiktok, Kristina Chapman

Postgraduate

In 2006 Henry Jenkins commented how the media landscape will be reshaped by a bottom-up energy of media created by amateurs (Jenkins, 2006). This prediction can be seen when comparing traditional screen productions with the user-created content on platforms such as TikTok. Social media continues to prove Jenkins’s foresight, stating in 2012 how stories are shaped by teenagers “… wanting the media they want, where they want, how they want it, in the form they want it when they want it,” (Jenkins, 2012). TikTok shows a current platform evolved from the predictions Jenkins saw regarding participatory culture since the mid-2000s. …

The Start Here Module: Creating A First Day Impression In An Online Language Class, Sabrina Wengier Mar 2022

The Start Here Module: Creating A First Day Impression In An Online Language Class, Sabrina Wengier

Dimensions

Students gain a lasting impression of a course and of the instructor on the first day of class (Lang, 2019). In asynchronous online or hybrid classes, the equivalent of the first day of class is the Start Here module. This orientation module should contain essential information about class expectations and technology requirements and provide help and accessibility resources. However, it is also the first opportunity for the instructor to establish a community of inquiry (Garrison et al., 2000) through a strong teaching presence, social presence, and cognitive presence. The Start Here module in an online language class is also fertile …

Honors College Retention In The College Of Agriculture, Food And Environmental, Sadie Vander Wal

Honors Capstone Projects

The College of Agriculture, Food and Environmental Sciences (CAFES) at South Dakota State University (SDSU) has the second lowest Honors College student enrollment compared to all other colleges in the university. This study explores factors that deter CAFES students from enrolling or continuing with Honors and potential opportunities to encourage enrollment and retention. A QuestionPro survey and focus groups were utilized in collecting responses from first-year CAFES students on their awareness of the Honors College’s automatic enrollment, factors that deter students from pursuing Honors, and opportunities. Survey responses (n=59) were reported as percentages. Randomized focus groups were created from the …

Clash And Cooperation Of Ecofeminism And Postmodern Feminism: The Intersection Of Two Theories In Dystopic Literature, Ashton Koch Mar 2022

Clash And Cooperation Of Ecofeminism And Postmodern Feminism: The Intersection Of Two Theories In Dystopic Literature, Ashton Koch

Honors Program: Senior Projects (Public)

Ecofeminism and postmodern feminism are regarded as opposite theories in their attempts to solve for ecological and patriarchal oppression. This thesis argues that these two theories are not mutually exclusive, and must work together to effectively combat oppression faced by the environment and by women. It uses two works of literature, Our Life in the Forest by Marie Darrieussecq and Oryx and Crake by Margaret Atwood to argue for the combination of ecofeminist and postmodern feminist strategies. Both works are dystopic in nature, portraying the destruction of the environment and patriarchal discourse against women. Ultimately, this thesis analyzes the strategies …

Existence And Uniqueness Of Minimizers For A Nonlocal Variational Problem, Michael Pieper Mar 2022

Existence And Uniqueness Of Minimizers For A Nonlocal Variational Problem, Michael Pieper

Honors Program: Senior Projects (Public)

Nonlocal modeling is a rapidly growing field, with a vast array of applications and connections to questions in pure math. One goal of this work is to present an approachable introduction to the field and an invitation to the reader to explore it more deeply. In particular, we explore connections between nonlocal operators and classical problems in the calculus of variations. Using a well-known approach, known simply as The Direct Method, we establish well-posedness for a class of variational problems involving a nonlocal first-order differential operator. Some simple numerical experiments demonstrate the behavior of these problems for specific choices of …

The Effects Of Epistemic Beliefs On Undergraduate Students' Emotions And Attitudes Towards Genetically Modified Foods, David Andrew Lee Mar 2022

The Effects Of Epistemic Beliefs On Undergraduate Students' Emotions And Attitudes Towards Genetically Modified Foods, David Andrew Lee

Doctoral Dissertations and Projects

Much research has explored socio-scientific issues (SSIs) in science instruction, including the connections between conceptions and attitude. Studies have also shown that epistemic beliefs affect epistemic emotions, which are a key component of students’ reaction to complex scientific topics. Correcting misconceptions can also result in emotional and attitude change, particularly surrounding the topic of genetically modified foods (GMFs). However, the impact of epistemic beliefs on emotions and attitude towards GMFs has largely gone unexplored. The purpose of this study is to examine the effects of epistemic beliefs on epistemic emotions and attitudes towards GMFs. This quantitative correlational study sampled 78 …

Assessing Pre-Literacy Behaviors In Infants And Toddlers: Psychometric Evaluation Of The Infant Toddler Literacy Assessment (Itla-3), Barbara J. Jackson, Christine Marvin, Amy J. Encinger, Nicole Buchholz, Becky Zessin Mar 2022

Assessing Pre-Literacy Behaviors In Infants And Toddlers: Psychometric Evaluation Of The Infant Toddler Literacy Assessment (Itla-3), Barbara J. Jackson, Christine Marvin, Amy J. Encinger, Nicole Buchholz, Becky Zessin

Department of Special Education and Communication Disorders: Faculty Publications

Assessment of emerging literacy in young children is generally limited to either skill development in children over 3 years of age or the quality and context of young children’s early literacy experiences. Although there has been promotion of their early literacy experiences, assessment of emerging pre-literacy behaviors in children younger than 3 years has yet to be organized into a single tool.

Preliminary work on the Infant Toddler Literacy Assessment (ITLA) has progressed through initial steps of scale development and shown promise as a criterionbased, standardized assessment for tracking children’s pre-literacy behaviors and guiding practitioners in supporting development of those …

A Summer Program Goes Online: How Beam Served Students From Marginalized Backgrounds During Covid, Ramya Ramaswamy, Javier Ronquillo Rivera

Journal of Math Circles

Most summers, BEAM runs free summer programs for mathematically talented middle school students from low income, historically marginalized communities. Our programs are designed to deepen students' problem solving and mathematical reasoning skills, to foster their love of math, and to build a community centered around peers all interested in mathematics.

This summer, in response to the pandemic, we made the decision to shift our summer programming online and operate virtually for the first time. We crafted a program that we hoped would sustain many of our original programming goals.

This paper outlines the decisions made, the variables that affected implementation, …

Promoting Ecotourism To Millennials Through Social Media, Melissa Clark, Paul Clark, Michael Latta Feb 2022

Promoting Ecotourism To Millennials Through Social Media, Melissa Clark, Paul Clark, Michael Latta

The Coastal Business Journal

This paper explores how coastal ecotourism marketers can utilize social media to effectively market to millennials. Coastal Tourism is one of four types of ecotourism identified by Honey and Krantz (2007) in their study Global Trends in Coastal Tourism sponsored by the World Wildlife Fund. An online survey of university students from the millennial generation was utilized. Findings indicate that millennials are interested in ecotourism and gather information about it from friends and social media. They check their accounts several times a day and usually from their smartphones. They would choose an ecotourism destination if money were not an issue. …

Small Business Identity And Entrepreneurial Identity In A Destination Resort Town: Are Birds Of A Feather Flocking To The Beach?, Janice A. Black, Carol Megehee, Frances H. Fabian Feb 2022

Small Business Identity And Entrepreneurial Identity In A Destination Resort Town: Are Birds Of A Feather Flocking To The Beach?, Janice A. Black, Carol Megehee, Frances H. Fabian

The Coastal Business Journal

Identities can be considered an intangible resource when they support the competitive advantage of a firm. Some work has shown that the context of an organization matters but will that hold true at a beach location filled with large numbers of micro-businesses and small businesses where entrepreneurs and small business owners engage their world both as individuals and as organizations? We examine the literature on identity and utilize a zoomorphic metaphor to elicit unbiased understandings of the coherence or dissonance of entrepreneurial and organizational identities. We found some intriguing results showing unexpected similarities and an affinity for coherent identities.

Distribution And Movements Of Bottlenose Dolphins (Tursiops Truncatus) Along The Northern South Carolina Coast: A Research Partnership With Ecotourism, Courtney N. Dunn, Dani C. Silva, Emily P. Deborde, Robert F. Young Feb 2022

Distribution And Movements Of Bottlenose Dolphins (Tursiops Truncatus) Along The Northern South Carolina Coast: A Research Partnership With Ecotourism, Courtney N. Dunn, Dani C. Silva, Emily P. Deborde, Robert F. Young

The Coastal Business Journal

Assessments of bottlenose dolphin stocks rely on current information about the distribution and abundance of specific populations. We partnered with two ecotourism dolphin watch businesses to investigate bottlenose dolphins along the northern South Carolina coast. The temporal and spatial distribution of dolphins was examined by comparing dorsal fin images from research-based surveys with photo-identification efforts from commercial dolphin watch groups. Matches between survey locations and times revealed patterns of seasonal residency, potential migratory dispersal between seasons, and variable patterns for home range size. An enhanced understanding of the structure of local populations will contribute to the management of local fisheries, …

Importance-Performance Analysis Of Relocation Attributes In The Coastal Carolina Region, Bomi Kang, Kimberly Warne, Kay Keels Feb 2022

Importance-Performance Analysis Of Relocation Attributes In The Coastal Carolina Region, Bomi Kang, Kimberly Warne, Kay Keels

The Coastal Business Journal

Domestic migration to the Carolina coastal region has increased dramatically between 2005 and 2009. This influx has spurred substantial increases in the demand for housing, support services, employment and infrastructure. The continued increase in such services is dependent upon on-going financial support which, in turn, is contingent upon the stability and/or continued growth of the population in this region. This study identifies the social and economic factors considered to be important by these in-migrants as well as their perceptions of how well these factors perform. In addition, the study addresses the relationship between community attachment and individual migration intent. The …

Sebastian Faulks’ Human Traces:A Journey Into The Depths Of The Human Psyche, Essam Fattouh Feb 2022

Sebastian Faulks’ Human Traces:A Journey Into The Depths Of The Human Psyche, Essam Fattouh

BAU Journal - Society, Culture and Human Behavior

Sebastian Faulk’s novel, Human Traces (2006), embarks on a new trend in contemporary English fiction. Through its representations of two main protagonists, pioneers in the field of psychology between the 1870s and 1918, Faulks traces the formative years of the development of the young discipline of psychiatry. Even though Faulks works in the realist traditions of Charles Dickens and George Eliot, yet he delves into such major questions as the role of unconscious motivations in human individual behaviour, the causes of mental illness, and the very attempt to understand the nature of the human being. The time frame of the …

Assessing Awareness And Competence Of Best Practices In Synchronous Online Instruction During The Covid-19 Pandemic For Clemson Cooperative Extension Professionals, Christopher J. Eck, K Dale Layfield, Catherine A. Dibenedetto, Jacqueline K. Jordan, Sarah O. Scott, Weatherly Thomas, Michelle Parisi, Thomas Dobbins

Journal of Extension

Traditional delivery of Extension programming changed overnight in March 2020, when the COVID-19 outbreak forced switching traditional methods to virtual delivery. Extension professionals across South Carolina quickly adapted to online delivery. Concerns over instructor preparedness to use online tools, including functions to assure accessibility, did arise. Findings from this non-experimental, descriptive research study suggested Extension professionals used online tools (primarily Zoom). The majority were not comfortable using many of the features that would enhance instruction, including polling, file transfer, and live-streaming media platforms. Additionally, Microsoft Word and PowerPoint skills to assure accessibility for clientele were lacking.
