The primary objective of this research was to investigate the beneficial use of seaweed in bread and the broader food industry. The author began the thesis by reviewing Japan’s consumption of seaweed (the highest, per capita, in the world, with the lowest incidence of obesity and cancer). The author introduced a new Irish seaweed product and examined how seaweed could be integrated more effectively into the Western diet. This paper explores Kenya’s ambitious Konza Technology City. In 2008 the Kenyan government unveiled its plan to construct a city from scratch 60 kilometers outside of the nation’s capital, Nairobi. Konza Technology City is a flagship project for Kenya Vision 2030, the country’s development program covering the period 2008 to 2030. The new city is expected to relieve Nairobi of some of its traffic and overcrowding issues, and also support the country’s growing technology sector. The use of social media, specifically Instagram, of 305 Bryant University students ages 18-28 was investigated through student completion of an online survey to examine how following exercise and food related Instagram accounts impacts behavior. Both male and females use Instagram fairly equally, though males are more responsive to food Instagram accounts than females, who have no significant difference in behavior. Both males and females who follow exercise Instagram accounts are significantly more active than those who do not follow exercise Instagram accounts. The purpose of this study was to examine the utilization of Front of House and Back of House technology applications by U.S. restaurants across different types of restaurants along with their level of IT management style, and the importance of these technology applications to the restaurants' operations. This study used secondary data. The survey data collected from 500 randomly selected restaurant technology managers who are current subscribers of Hospitality Technology Magazine as of January 2013. The avocado market in the United States has grown immensely over the past two decades, and numerous foreign regions import avocados into the United States in order to keep up with domestic consumer demand. This study was conducted to primarily determine if point of origin is a factor consumers take into consideration when purchasing avocados. Executive Compensation And Regulation Imposed Governance: Evidence From The California Non-Profit Integrity Act (2004), Sandip Dhole, Saleha B. Khumawala, Sagarika Mishra, Tharindra Ranasinghe

This study examines the impact of the California Nonprofit Integrity Act of 2004 on CEO compensation costs in affected organizations. Contrary to the stated objective of the Act that executive compensation is “just and reasonable,” we find that CEO compensation costs for affected nonprofits during the post-regulation periods have increased by about 6.3 percent when compared with a control group of comparable unaffected nonprofits. In addition, the relative increase in CEO compensation appears to come from nonprofits that have experienced greater regulatory cost increases. We do not find evidence that the Act resulted in a change in CEO pay performance …

In 2013 nearly 8.6 million U.S. children lived in households in which one or more child was food insecure. The National School Lunch Program (NSLP) is one of the largest federally funded food and nutrition assistance programs that aims to provide nutritious, well-balanced lunches for school-age children. Given the important role this program plays on food and nutrient intake of school-age children, we examined the relationship between participation in NSLP and children's food security status. After controlling for the endogeneity of the program participation we found that program participation have positive effect on food insecure and marginally food secure children, …

Acknowledging Individual Responsibility While Emphasizing Social Determinants In Narratives To Promote Obesity-Reducing Public Policy: A Randomized Experiment, Jeff Niederdeppe, Sungjong Roh, Michael A. Shapiro

This study tests whether policy narratives designed to increase support for obesity-reducing public policies should explicitly acknowledge individual responsibility while emphasizing social, physical, and economic (social) determinants of obesity. We use a web-based, randomized experiment with a nationally representative sample of American adults (n = 718) to test hypotheses derived from theory and research on narrative persuasion. Respondents exposed to narratives that acknowledged individual responsibility while emphasizing obesity’s social determinants were less likely to engage in counterargument and felt more empathy for the story’s main character than those exposed to a message that did not acknowledge individual responsibility.
