Although ready meals have recently increased their market share in the Korean food industry, a literature review found that the use of ready meals triggers feelings of guilt in homemakers. Such guilt arises as a result of several factors apparently related to consumers’ health. Consequently, levels of guilt might be expected to vary depending on consumers’ perceived health locus. Health-related quality of life (HRQoL) describes a person’s subjective evaluation of his health and well-being. The HRQoL and its associated factors have not been investigated among Lebanese adolescents. The aim of this study is to examine the association between socio-demographic characteristics, eating habits, physical activity, adherence to Mediterranean diet, and HRQoL among Lebanese adolescents. A total of 283 students (158 males, 125 females), between ages 11 to 18, were randomly chosen from private schools in the city of Tripoli, North Lebanon. In 2012, 14.1 million patients were diagnosed with cancer worldwide of which 385,700 estimated new cases of non-Hodgkin lymphoma (NHL). Also, 81,080 new cases of lymphoma were reported in the United States (US) among both genders in 2016. In Lebanon, Lymphoma represents the fifth most frequent cancer, nonetheless, little is known regarding its epidemiological attributes. This study was conducted to investigate the antimicrobial effect of thiamine dilaurylsulfate (TDS) on Hummus Dip, a traditional Lebanese food. A heat shock step was introduced after hummus cooking and before dip preparation. Lower bacterial counts were obtained even in the absence of any preservative and with better texture compared to non-heat shocked dip. Supplementing the dip with 2% TDS and 1% Malic acid completely inhibited bacterial growth over a period of one month at 4oC. Halt in bacterial growth was confirmed by growth curves. TDS induced DNA degradation in different bacterial stains. It induced stress on the growth of …

Evaluation Of Phenolic Content, Antiradical And Antibacterial Activities Of Orange And Carrot Pomace Extracts, Dina Cheaib, Karim Raafat, Nada El Darra

Orange and carrot pomace are considered as food wastes, despite their high content in beneficial health compounds. The comparison of phenolic extracts from orange and carrot pomace, showed higher values for Orange pomace, with a polyphenols concentration (130 mg/L), flavonoids (8.67 mg/L) and tannins (2.5 mg/L). A higher antiradical activity was also noted for orange pomace. However, carrot pomace presented a higher anti-bacterial activity. The beneficial activities of these extracts were owed to their high content in phenolic acids. Our study exhibited that orange and carrot pomace might be utilized as natural preservatives for many industrial applications.

This dissertation consists of three essays that contribute to the research on local food purchase and consumers’ preferences and willingness-to-pay. Essay I examines whether there are differences in consumers’ willingness-to-pay for local food across alternative restaurant formats and provides a justification for using a system to legitimate local sourcing in restaurants. Essay II studies consumers’ preferences for local sourcing in restaurants in rural and urban communities and elaborates on where there is a significant willingness-to-pay for local food in rural communities. The present work utilizes research on context effects and color psychology to investigate how background color can enhance the effectiveness of positive and negative charity appeals. Five experiments measuring both actual donations and donation intention examine the hypothesis that a negative charity appeal against an orange (vs. blue) background and a positive charity appeal against a blue (vs. orange) background will increase donations. We propose that this is because blue and orange colors are incongruous with positive and negative charity appeals, respectively, due to the affective valences of the appeals and the perceptions of warmth and coldness cued by the …

Most fishery regulations aim to control angler harvest. Yet, we lack a basic understanding of what actually determines the angler’s decision to harvest or release fish caught. We used XGBoost, a machine learning algorithm, to develop a predictive angler harvest–release model by taking advantage of an extensive recreational fishery data set (24 water bodies, 9 years, and 193 523 fish). We were able to successfully predict the harvest–release outcome for 99% of fish caught in the training data set and 96% of fish caught in the test data set. Objective: To test the nutrition transition hypothesis of global dietary convergence to a ‘Western diet’.
Design: Consumer-waste-adjusted FAO Food Balance Sheets are used to construct for each country a Western Diet Similarity Index (WSI), expressed as a ratio of calories from animal-sourced foods, oils, fats and sweeteners to total per capita calories. β-Convergence and associated speed are estimated by growth regressions using 1992–2013 panel data. Speed of convergence, a non-linear function of income per capita, globalisation and urbanisation, determines the steady-state or long-term global WSI. In this research, we tested the effect of a novel method of presenting calorie information—highlighting relative differences in calories among ingredients. We conducted an online hypothetical food choice experiment where 633 participants selected the ingredients for a sandwich from five categories: meat/protein, cheese, spread/ dressing, bread, and vegetables. Social media platforms facilitate user interaction and impact decision making. Users prefer to use hashtags while sharing posts. Knowing the sentiment towards diabetes, bloodpressure, and obesity is fundamental to understanding the impact of these information on patients and their families. The study seeks to determine the relevance of health-related hashtags on Twitter and analyze sentiments about diabetes, obesity, blood pressure.
METHOD
