Blockchain In The Food Industry: Integrating Machine Learning In A Systematic Literature Review, Juan M. Gómez, Omar H. Fares, Myuri Mohan, Seung Hwan Lee

Journal of International Technology and Information Management

This study provides a systematic literature review of blockchain technology in the food industry with a supply chain lens. We identify primary and sub-themes, discuss implications and applications in terms of delivering value and propose literature-informed future research directions. This review uncovered three primary themes: a) Value Creation; b) Supply Chain Digitization; and c) Transformation. It demonstrates that digitalizing food networks with blockchain technology may benefit from increased stakeholder involvement and data visibility to gain competitive advantage. Beyond the theoretical contributions, this research provides a methodological contribution by demonstrating the uses of machine learning techniques to perform systematic literature reviews.

The metaverse, which is the next iteration of the internet--an immersive, virtual world--poses a threat to the essential human need for healthy relationship and identity development. Coming out of the COVID-19 pandemic, the effects of isolation and virtual socialization led many to prefer physical experiences, despite society’s overall dependency on and connectedness to the internet and technological devices. งานวิจัยนี้วิเคราะห์และศึกษาความเป็นไปได้เชิงพาณิชย์ของการพัฒนาเครื่องดื่มโปรตีนที่ผ่านกระบวนการไกลเคชั่นจากพืชรสช็อกโกแลต เนื่องจากปัจจุบันผู้บริโภคหันมาบริโภคเครื่องดื่มโปรตีนจากพืชเพื่อสุขภาพเพิ่มสูงขึ้น ผู้วิจัยจึงพัฒนาผลิตภัณฑ์นี้ด้วยเทคโนโลยีการไกลเคชั่น และประเมินศักยภาพทางการตลาดผ่านการสัมภาษณ์ผู้เชี่ยวชาญ ผู้ผลิต ผู้ว่าจ้างผลิตและผู้บริโภค ในทุกกระบวนการ กลุ่มตัวอย่าง 15 ท่าน ผลการศึกษานำมาใช้ออกแบบกลยุทธ์ทางการตลาดเพื่อให้ผลิตภัณฑ์สามารถพัฒนาเข้าสู่ตลาดได้อย่างมีประสิทธิภาพและได้รับการยอมรับ จากการสัมภาษณ์เชิงลึก ผู้ผลิตได้ยอมรับนวัตกรรมการผลิตนี้ เพื่อนำมาพัฒนาคุณภาพของผลิตภัณฑ์มากยิ่งขึ้น โดยมุ่งเน้นพัฒนาเนื้อสัมผัสของเครื่องดื่มโปรตีนจากพืช และ คุณภาพให้เพิ่มสูงขึ้นมากกว่าในปัจจุบัน เนื้อสัมผัสกลืนง่าย แต่ยังคงมุ่งเน้นรสชาติตอบสนองรสชาติตามที่ผู้บริโภคต้องการ ผู้บริโภคคาดหวังถึงคุณค่าทางโภชนาการที่สูงและเป็นเครื่องดื่มเพื่อสุขภาพอย่างแท้จริง รสชาติและราคาเหมาะสมเพื่อการบริโภคได้อย่างต่อเนื่องสม่ำเสมอ การศึกษาความเป็นไปได้ทางการเงิน โดยการผลิตแบบจ้างผลิต (OEM) การวิเคราะห์ผลตอบแทนทางการเงิน เมื่อจำหน่าย ผลิตภัณฑ์ในราคา 59 บาท คาดการณ์ส่วนแบ่งตลาดที่ 5 % พบว่าเป็นการลงทุนที่คุ้มค่า มีมูลค่า ปัจจุบันสุทธิของธุรกิจ (NPV) เป็นบวก อัตราผลตอบแทนที่แท้จริง (IRR) สูง ระยะเวลาคืนทุน (Payback Period) อยู่ที่ 2.4 ปี ถือว่าเป็นระยะเวลาที่สั้นและเหมาะสมแก่การลงทุน จากการศึกษางานวิจัยนี้ สรุปได้ว่า เครื่องดื่มโปรตีนที่ผ่านกระบวนการไกลเคชั่นจากพืชรสช็อกโกแลต เป็นผลิตภัณฑ์ที่มีศักยภาพได้รับการยอมรับและมีความเป็นไปได้ในการพัฒนาผลิตภัณฑ์เข้าสู่ตลาดเชิงพาณิชย์

บทความวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาปัจจัยที่มีผลต่อการแบ่งปันอาหารส่วนเกินในครัวเรือนมุสลิมเพื่อลดปัญหาขยะอาหาร และเสนอแนะเป็นแนวทางการแบ่งปันอาหารส่วนเกิน กรณีศึกษา ชุมชนสวนหลวง 1 ประกอบด้วยปัจจัยด้านความรู้ ด้านทัศนคติ ด้านการปฏิบัติ ด้านความเชื่อทางศาสนา และด้านแนวทางการแบ่งปันอาหารส่วนเกินของชุมชน โดยใช้เทคนิคการวิจัยเชิงปริมาณทำการเก็บแบบสอบถามปลายปิดจากครัวเรือนมุสลิมในชุมชนสวนหลวง 1 จำนวน 92 ครัวเรือน ที่คำนวณจากโปรแกรม G*Power ทำการสุ่มตัวอย่างแบบเฉพาะเจาะจงในครัวเรือนมุสลิมและอาศัยการเก็บแบบสอบถามตามความสะดวกหรือความบังเอิญ สถิติที่ใช้ในการวิเคราะห์ข้อมูล แบ่งออกเป็น 2 ส่วน ประกอบด้วย (1) สถิติเชิงพรรณนา ได้แก่ ค่าความถี่ ค่าร้อยละ ค่าเฉลี่ย และส่วนเบี่ยงเบนมาตราฐาน เพื่อวิเคราะห์ข้อมูลครัวเรือนและลักษณะทางประชากรศาสตร์ (2) สถิติเชิงอนุมาณ ใช้วิธี Stepwise Multiple Regression Analysis เพื่อวิเคราะห์ข้อมูลปัจจัยที่มีผลต่อการแบ่งปันอาหารส่วนเกินในครัวเรือนมุสลิม ชุมชนสวนหลวง 1 ผลการศึกษาปัจจัยที่มีผลต่อการแบ่งปันอาหารส่วนเกินในครัวเรือนมุสลิมทั้ง 5 ด้าน พบว่า ด้านความรู้เกี่ยวกับสาเหตุและแนวทางแก้ไขการเกิดอาหารส่วนเกินและขยะอาหาร กลุ่มตัวอย่างสามารถตอบถูกเกินร้อยละ 70 ในขณะที่ความหมายของอาหารส่วนเกินและผลกระทบของขยะอาหารต่อสิ่งแวดล้อมกลุ่มตัวอย่างสามารถตอบถูกได้ต่ำกว่าร้อยละ 50 ด้านทัศนคติและด้านการปฏิบัติโดยภาพรวมอยู่ในระดับมาก ด้านความเชื่อทางศาสนาและด้านแนวทางการแบ่งปันอาหารส่วนเกินของชุมชนอยู่ในระดับมาที่สุด สำหรับการวิเคราะห์เพื่อศึกษาปัจจัยที่มีอิทธิพลต่อการแบ่งปันอาหารส่วนเกิน พบว่าปัจจัยที่มีอิทธิพลมากที่สุด 2 ด้าน ได้แก่ (1) การเพิ่มปัจจัยด้านแนวทางการแบ่งปันอาหารส่วนเกินของชุมชน เรื่องการจัดกิจกรรมให้ความรู้เกี่ยวกับอาหารส่วนเกินและขยะอาหาร (2) การลดปัจจัยด้านทัศนคติ เรื่องการแยกขยะอาหารก่อนทิ้งไม่ช่วยแก้ปัญหาขยะอาหาร โดยมีค่าสัมประสิทธิ์ถดถอย (β) เท่ากับ 2.125 ที่ระดับนัยสำคัญทางสถิติ .01

Purpose – Blockchain technology offers numerous venues for supply chain applications and research. However, the connections between specific blockchain features and future applications have been unclear to date in its evolution. The purpose of this study is to fill this void.

Ineffective corporate social responsibility (CSR) strategies can negatively impact a company’s competitive advantage. A lack of competitive advantage may lead a business leader to experience poor performance and lost profits. Grounded in the stakeholder theory, the purpose of this qualitative multiple case study was to explore strategies some commercial banking, loan, and savings association leaders used to ensure successful CSR programs to enhance profitability. Participants comprised four leaders in Puerto Rico who successfully established CSR strategies to improve organizational profitability. การศึกษาในครั้งนี้มีวัตถุประสงค์เพื่อ 1) ศึกษาศักยภาพการตลาดของผลิตภัณฑ์รังนก 2) พัฒนาคิวอาร์โค้ดชีวภาพ ที่สามารถติดลงบนพื้นผิวรังนก มีความปลอดภัย สามารถตรวจสอบย้อนกลับแหล่งที่มาของรังนกด้วยการสแกนผ่านสมาร์ตโฟน และให้ผลในการตรวจสอบที่ถูกต้อง แม่นยำกว่า ซึ่งจะช่วยเพิ่มโอกาสในการขายรังนก 3) ศึกษาการยอมรับนวัตกรรมคิวอาร์โค้ดชีวภาพเพื่อระบบตรวจสอบย้อนกลับรังนก และ 4) ศึกษาความเป็นไปได้ในการนำต้นแบบคิวอาร์โค้ดชีวภาพมาใช้ประโยชน์เชิงพาณิชย์ จากการทบทวนวรรณกรรม ทำให้เกิดแนวคิดในการพัฒนา และการผลิตชุดต้นแบบระบบตรวจสอบย้อนกลับรังนกด้วยคิวอาร์โค้ดชีวภาพ ได้รับการพัฒนาโดยใช้กระบวนการ พัฒนาผลิตภัณฑ์ใหม่ (NPD) ตามขั้นตอน Stage Gate ระบบเลือกใช้ 7 เทคโนโลยีเป็นองค์ประกอบสำคัญในการพัฒนาระบบคือ เทคโนโลยีคิวอาร์โค้ด, เทคโนโลยีด้านวัสดุชีวภาพ, เทคโนโลยีการพิมพ์ Inkjet, เทคโนโลยี GPS, เว็ปเทคโนโลยีบนเครื่องข่ายอินเตอร์เน็ต, เทคโนโลยี Cloud และเทคโนโลยีสมาร์ทโฟน ทั้งหมดเพื่อผลิตเป็นระบบตรวจสอบย้อนกลับรังนกด้วยคิวอาร์โค้ดชีวภาพ ที่เพิ่มประสิทธิภาพด้านการป้องกันการปลอมแปลง และสามารถตรวจสอบย้อนกลับได้แม้รังนกไม่ถูกบรรจุในบรรจุภัณฑ์ จากแนวคิดของนวัตกรรมระบบตรวจสอบยัอนกลับรังนกด้วยคิวอาร์โค้ดชีวภาพ นำไปสู่การทดสอบการยอมรับนวัตกรรม ด้วยการวิจัยแบบผสมผสานคือ การวิจัยเชิงคุณภาพ โดยการสัมภาษณ์เชิงลึก กับกลุ่มตัวอย่างเกษตรกรฟาร์มนกแอ่น ซึ่งเป็นผู้นำเข้ารังนกสู่ห่วงโซ่อุปทานของอุตสาหกรรม และการวิจัยเชิงปริมาณด้วยการเก็บแบบสอบถามผ่านช่องทางออนไลน์ กับกลุ่มตัวอย่างผู้บริโภค ที่มีประสบการณ์ซื้อวัตถุดิบอาหารพรีเมียม ผลการวิจัยพบว่ากลุ่มตัวอย่างทั้งสอง แสดงความตั้งใจในการยอมรับนวัตกรรมระบบตรวจสอบย้อนกลับรังนกด้วยคิวอาร์โค้ดชีวภาพ การศึกษาเพื่อประเมินความเป็นไปได้ในการนำระบบตรวจสอบย้อนกลังรังนกด้วยคิวอาร์โค้ดชีวภาพ มาใช้งานเชิงพาณิชย์ โดยการประเมินด้านเทคโนโลยี การตลาด และการเงิน พบว่ามีความเหมาะสมที่ผู้ศึกษาจะนำนวัตกรรมมาใช้งานเชิงพาณิชย์ ด้วยการเลือกใช้วิธี Spin-off เพื่อทำตลาดเอง เนื่องจากผู้ถือครองนวัตกรรมมีความพร้อมในทุกด้านจากการประเมิน ทั้งนี้ระบบตรวจสอบย้อนกลับรังนกด้วยคิวอาร์โค้ดชีวภาพควรใช้วิธีการแจ้งลิขสิทธิ์ และจดทะเบียนเครื่องหมายทางการค้าเพื่อขอรับความคุ้มครองทรัพย์สินทางปัญญา จากการประเมินทางการเงินพบว่า ระยะเวลาคืนทุนของโครงการคือ 2 ปี 4 เดือนค่าปัจจุบันสุทธิ (NPV) เท่ากับ 4,914,697.73 บาท และอัตราผลตอบแทนที่แท้จริง (IRR) จากการลงทุนเท่ากับ ร้อยละ 186.8%

การศึกษานี้เพื่อจำลองตัวแทนเสมือนสัตว์เลี้ยง เพื่อตอบโจทย์ความรู้สึกผูกพันและความคิดถึงสำหรับผู้ที่เลี้ยงสัตว์ โดยใช้เทคโนโลยีปัญญาประดิษฐ์ (Artificial Intelligence : AI) ที่หลากหลาย ตั้งแต่การประมวลผลภาพ การสร้างภาพเสมือน การรู้จำอารมณ์ไปจนถึงการประมวลผลภาษาธรรมชาติ สามารถใช้ร่วมกันเพื่อสร้างโมเดลสัตว์เสมือนจริงที่มีลักษณะสมจริงทั้งรูปลักษณ์ภายนอก พฤติกรรม บุคลิก การแสดงออกทางอารมณ์ และการสื่อสารกับมนุษย์ ซึ่งจากวิวัฒนาการของเทคโนโลยีที่รวดเร็วและพัฒนาในทุกวันจะทำให้เราสามารถมีปฏิสัมพันธ์กับสัตว์เลี้ยงเสมือนได้ราวกับว่าเป็นสิ่งมีชีวิต งานวิจัยนี้ได้กล่าวถึงการสํารวจและวิเคราะห์พฤติกรรม รวมถึงความต้องการ ในการใช้แอปพลิเคชันของกลุ่มตัวอย่าง ได้แก่ กลุ่มคนเลี้ยงสุนัขและแมวในประเทศไทยที่มีความรักและความผูกพันกับสัตว์เลี้ยง ที่ต้องการมีตัวแทนสัตว์เลี้ยงที่สามารถมีปฏิสัมพันธ์ได้ในทุกที่ทุกเวลา จำนวนทั้งสิ้น 347 คน โดยกลุ่มตัวอย่างได้ให้ความสนใจใช้แอปพลิเคชันเพื่อจำลองตัวแทนเสมือนสัตว์เลี้ยง เพื่อตอบโจทย์ความรู้สึกผูกพันและความคิดถึงสำหรับผู้ที่เลี้ยงสัตว์ที่ระดับปานกลางถึงมากที่สุด คิดเป็นร้อยละ 72.2

The Securities and Exchange Commission encourages the presentation of information or data in graphical form to improve users’ ability to understand financial disclosures. We find a dramatic increase in the disclosure of both qualitative and quantitative infographics in 10-K filings over time and substantial cross-sectional variation in firms’ choices regarding image types, data content, and the placement of infographics within 10-Ks. We provide evidence on factors associated with firms’ use of infographics and explore the persistence with which they are disclosed over time. Finally, we investigate the relation between the use of infographics and uncertainty in capital markets.

Because prudent corporate governance often requires managers to take risks based on statistically expected outcomes, corporate failures that have a small but finite chance of occurring cannot always be prevented. This Article makes three related claims about risk-taking in corporate governance.

This Article’s first claim is that managers should not automatically be presumed to be at fault for corporate failures that result from risk-taking decisions based on statistical methodologies that reasonably justify the decisions ex ante. This study determined the effectiveness of rosemary extract on the shelf life of ground beef patties under different retail display conditions. Ground beef patties were produced from an 85%:15% blend (lean:fat). Patties were formed from batches of control or amended with rosemary extract. Patties were individually packaged using overwrap. Groups were assigned into one of two lighting groups (3000K and 3500K). Patties were placed in a simulated retail display for 5 d under continuous lighting and rotated once a day. Should brokers have the unfettered right to restrict investor trading? GameStop, a brick-and-mortar video game retailer, had been experiencing declining revenues since 2016. However, GameStop saw its share price climb almost 1000 percent in the span of a one- week period from January 21, 2021 to January 27, 2021 due to retail investors buying significant amounts of GameStop shares during that period. In order to facilitate fast, equitable, and effective sublicensing to University of Akron technology startups, spinoffs, and spinouts, an express license was developed. This expresses license was developed by benchmarking existing terms in order to determine market rates. Universities, venture capital firms, and nonprofits were interviewed in order to establish a set of best practice guidelines for the creation of the express license. These results were then tabulated and statistically analyzed in order to determine a series of startup friendly terms that support the University of Akron’s interests. Chapter 1. This research examines whether the use of blockchain technology to back a brand’s claims (i.e., blockchain augmented claims) influences consumer preference for sustainable products. Consumers are demanding higher levels of transparency from brands and are also showing keen interest in consuming sustainable products, which includes products that promote social, environmental and economic sustainability. Chapter 1. Many consumer decisions – from trying a new brand to trying a new recipe – involve some risk. However, although consumers’ appetite for risk has received over fifty years of investigation, the impact of situational variables (e.g., atmospherics) on consumer decision making involving risk remains relatively unexplored. To address this gap, the current work examines the influence of temperature, a ubiquitous situational influence, on consumers’ inclination toward risk. Across four studies, we find evidence for a positive relationship between temperature and risk taking, using multiple manipulations of temperature and measurements of risk.
