In its entirety this dissertation intended to address the impact of feeding several forms of de-oiled corn distillers grains plus solubles and the effect of supplementing OmniGen-AF as a potential antioxidant source for extending beef shelf life. In study one we learned that despite the de-oiling process, greater inclusion levels (65%, DM basis) of de-oiled wet distillers grains plus solubles (WDGS) causes an increase in polyunsaturated fatty acids (PUFA) similar to the levels obtained with full-fat WDGS. Lower inclusion levels (35 and 50%, DM basis) of de-oiled WDGS have intermediate PUFA content in comparison to 65% de-oiled WDGS, full-fat WDGS …

Postmortem aging has been extensively practiced in the meat industry for decades due to its beneficial impact on improving eating quality attributes. However, prolonged postmortem aging may adversely impact color and/or lipid oxidation stabilities of meat, leading to decreased display shelf-life and increased rancid off-flavor. As physical/biochemical changes occur during postmortem aging, metabolites that impart antioxidant or pro-oxidant activities are generated or consumed, which could be related to the oxidation stabilities of postmortem muscles with aging. Well-developed replacement heifers provide a central foundation for the continued success of the dairy industry. Emphasis on improving pre-weaned calf nutrition has predominated in the industry, but opportunities exist to improve post-weaning heifer nutrition and management. The objective of this study was to determine if using an intranasal zinc (Zn) solution would impact health and growth performance of high-risk stocker cattle. Male beef calves (n = 239; 3 arrival dates [block]; initial BW = 276 ± 2.4 kg) were stratified by arrival gender and BW and assigned to 1 of 2 treatments: 1) treated with 3 ml of a Zn solution containing 36.24 mg of Zn administered intranasally, or 2) control, in which calves were not treated. Dark cutting or high pH meat is found in all meat species, inducing significant losses to the meat industry. Dark cutting meat is a direct consequence of low muscle glycogen at slaughter, which affects the normal acidification of meat during rigor development, hence, the ultimate pH remains high. The ultimate pH of the meat has a great influence on certain meat quality parameters, such as color, water holding capacity, and tenderness. Two experiments were conducted to evaluate effects of inoculum source on in vitro and in situ digestion procedures performed on grass hay and corn residue samples. Steers were fed 70% brome or 70% corn residue. Inoculum from each steer was used to perform in vitro procedures to determine IVDMD, organic matter digestibility (OMD), and neutral detergent fiber (NDF) digestibility and for in situ procedures to determine NDF digestibility. There were no interactions for inoculum source and IVDMD, OMD, or NDF digestibility.

An increase in the consumption of poultry has generated an increase in demand for higher yielding broilers. This has led to an increase in atypical meat and issues with appearance. Color is a direct result of a pH decline as meat goes through rigor mortis with meat generally becoming lighter. If the pH declines too rapidly or too slowly, meat quality can suffer. Experiment 1, 83, newly weaned, fall-born crossbred heifer calves were allocated randomly to 1 of 3 anthelmintic treatments: 1) control (CON); 2) combination pour-on moxidectin and oxfendazole (MO); and 3) long-acting eprinomectin (LAE). Two preplanned orthogonal contrast statements were used: 1) to compare CON to treated cattle; and 2) to compare OXF to LAE. Heifer BW and BCS were greater (P≤0.02) from MO and LAE on d 112, 140, 154, 168, 182 compared to CON. Calving rate is a qualitative trait regulated by several genes and is strongly affected by the environment. With the development of biotechnology and gene identification, scientists are able to determine which genes affect these productivity traits to improve accurate selection decisions. Prolactin (PRL) has been associated with reproductive traits, melatonin receptor 1a (MTNR1A) has been associated with meat quality traits, and the dopamine receptor D2 (DRD2) gene has been associated with hair coat score (HCS) in cattle. Asian elephants utilize two chemical signals that have been described to function in reproduction: (1) (Z)-7-dodecenyl acetate (Z7-12:Ac) is released by females near ovulation, and (2) frontalin is released by males around the time of musth. Sleep loss is known to trigger an inflammatory response and increase serum corticosterone in both human and murine models. However, very little evidence is available on the potential effects of sleep loss in avian models. This study aims to construct a profile using cytokine gene expression data to determine how birds respond to sleep loss in a controlled environment. Bovine colostrum (BC) is used in humans as a nutritional supplement for immune support and has been shown to reduce Respiratory disease (RD). Other nutritional supplements, minerals and vitamins including mannan oligosaccharides (MOS), zinc and vitamins A, C and E have also been used for immune support. Resting behaviors are an essential component of animal welfare but have received little attention in zoological research. African savanna elephant (Loxodonta africana) and Asian elephant (Elephas maximus) rest includes recumbent postures, but no large-scale investigation of African and Asian zoo elephant recumbence has been previously conducted. We used anklets equipped with accelerometers to measure recumbence in 72 adult female African (n = 44) and Asian (n = 28)elephants housed in 40 North American zoos. Diatoms associated with foraminifers of the genus Amphistegina were assessed using a combination of morphological and molecular techniques. Generalist parasites exploit multiple host species at the population level, but the individual parasite’s strategy may be either itself a generalist or a specialist pattern of host species use. Here, we studied the relationship between host availability and host use in the individual parasitism patterns of the Shiny Cowbird Molothrus bonariensis, a generalist avian obligate brood parasite that parasitizes an extreme range of hosts. We assessed the effects of chilled water cooling perches on hen performance and physiological and behavioral parameters under “natural” high temperatures during the 2013 summer with a 4-hour acute heating episode. White Leghorns at 16 wk of age (N = 162) were randomly assigned to 18 cages (n = 9) arranged into 3 units. Poor rehydration properties of skim milk powder (SMP) can impact processing efficiency and functionality in finished product applications. Rehydration can be split into four stages: wettability, sinkability, dispersibility, and solubility. Previous work has suggested that chelator addition during SMP manufacture leads to higher solubility compared to SMP without chelators. This study focuses on the addition of ethylene diamine tetraacetic acid (EDTA) or sodium citrate dihydrate (SCD) at concentrations of 5, 10, and 15 mM to skim milk prior to evaporating and spray drying. Caseinate powders have been well accepted because of their foaming properties. In this study, 10% solution of reconstituted skim milk powder (SMP) chelated with sodium hexametaphosphate (SHMP) and trisodium citrate (TSC) at 1 mEq, 50 mEq, and 100 mEq were prepared to conduct a comparison with sodium caseinate, potassium caseinate, and calcium caseinate solutions. Foamability, foam stability as well as the preferential locations of αs-casein, β-casein and !-casein in their foams were analyzed. The proteins found in milk are largely important in the functionality of many dairy products and dairy processes. The casein micelle system in milk is a complex and highly studied system. The micelle is thought to be a sponge like structure containing four caseins, αs1, αs2, β, and κ casein, and bound together with colloidal calcium phosphate. When a chelating agent such as a citrate, phosphate, or polyphosphate are added to milk systems, the CCP is bound to the chelator and removed from the micelle. Our understanding of the full life cycle of most migratory birds remains limited. Estimates of survival rates, particularly for first‐year birds are notably lacking. This knowledge gap results in imprecise parameters in population models and limits our ability to fully understand life history trade‐offs. We used eleven years of field data to estimate first‐year apparent survival (φ1st) for two species of migratory grassland songbirds that breed in the same managed habitats but have substantially different migration distances. We used a suite of life‐history, habitat and individually‐based covariates to explore causes of variation in φ1st. The interaction …
