Agroecologists understand that farming and food systems are more complex than the aggregation of their components. This realization drives our choices of learning strategies and activities that will prepare students for complexity and uncertainty. Our quest for a just, sustainable, and nutritious food system adequate to equitably serve everyone on the planet today and into the future is an enormous challenge. An undertaking of this magnitude will be met only with major adjustments informed by thoughtful teaching and practicing problem solving skills through a new educational lens. The principles of agroecology help us focus this lens on the wicked problems …
Ascophyllum Nodosum Seaweed Extract Application As A Possible Mechanism For Mitigating Salt Stress In Soybeans (Glycine Max), Elena Hoang
Honors Program Theses
Soil salinity, an abiotic stressor associated with climate change effects, inhibits the normal growth and development of sensitive crop species. The excessive accumulation of salt ions in plant tissue induces oxidative stress, which is characterized by an increased production of reactive oxygen species (ROS) damaging plant organelles and disrupting normal metabolic functions. Seaweed extracts (SWE) may be a solution for mitigating the effects of salt stress on crop yield and quality, as they introduce bioactive ingredients that are able to regulate gene expression and enhance natural physiological processes in plants. However, the positive benefits of SWE applications differ between plant …

Impacts Of Temperature And Salt Concentrations For Thermal Inactivation Of Salmonella In Moisture Enhanced Reconstructed Chicken Patties, Alik D. Browning
Graduate Theses, Dissertations, and Problem Reports (ETD)
The purpose of this experiment is to determine the thermal kinetic parameters of Salmonella in moisture-enhanced, reconstructed ground chicken patties as affected by temperatures and salt concentrations. Salmonella is responsible for 35% of the foodborne illnesses associated with poultry products (Batz et al., 2011). Nonintact reconstructed chicken meat is mixed with brine solutions containing various salt and polyphosphate concentrations to increase water-holding capacity, decrease cooking losses, improve sensory tasting scores, and maintain the good quality of completed chicken products (Gill et al., 2004). Increasing salt concentrations within meats can increase the thermal inactivation of pathogens. In this study, Salmonella Typhimurium …
Phosphate2 And Pin-Likes7 Affect Symbiotic Nodule Phenotypes In Soybean, Bhawandeep Kaur
Phosphate2 And Pin-Likes7 Affect Symbiotic Nodule Phenotypes In Soybean, Bhawandeep Kaur
Electronic Theses and Dissertations
Legumes and soil rhizobia share a symbiotic relationship, wherein rhizobia fix atmospheric dinitrogen in exchange for photosynthates from the host plant. This exchange of mutual benefits occurs in a specialized root structure called ‘nodule’. Soybean (Glycine max) nodules arise from root outer cortical cells. De novo cell differentiation of cortical cells during nodule development leads to the formation of two distinct nodule zones in the mature nodule: the central infection zone where nitrogen fixation occurs and the peripheral parenchyma zone that houses vascular bundles. Plant signaling mechanisms that dictate the development of these nodule zones are not known. To address …

Wastewater-recovered phosphorus (P), in the form of the mineral struvite (MgNH4PO4∙6H2O), may provide a sustainable alternative to decreasing rock-phosphate reserves. Struvite can be generated via precipitation methods, potentially reducing the amount of P runoff to aquatic ecosystems. The objective of this greenhouse tub study was to evaluate the effects of chemically and electrochemically precipitated struvite (CPST and ECST, respectively) on aboveground plant response in a hybrid rice cultivar grown using furrow-irrigation compared to other common fertilizer-P sources [i.e., triple super phosphate (TSP) and diammonium phosphate (DAP)] using three replications of fertilizer treatment in a P-deficient silt loam (Typic Glossaqualfs). Aboveground …

Improving Baking Quality Of Soft Red Winter Wheat In Kentucky Through Breeding And Sulfur-Nitrogen Fertility Management, Maria Paula Castellari
Theses and Dissertations--Plant and Soil Sciences
Soft Red Winter (SRW) wheat is an important crop grown on about 400,000 acres in Kentucky as a pivotal cash crop in the 3-crops-in-2-years rotation of corn, wheat, and soybean. The humid environment of Kentucky generates a high yielding wheat crop, with low protein concentration and weak gluten strength. This wheat is mainly sold to millers and used by the industry for cakes, pastries, cookies, and crackers. Conversely, there is a rapidly growing interest in identifying other value-added markets for this wheat different to commodity commercialization, such as artisan-baked goods and craft-distilled beverages. Evaluating the quality characteristics of wheat grown …

Discovery, The Student Journal of Dale Bumpers College of Agricultural, Food and Life Sciences
The Obese strain (OS) of chickens spontaneously develops autoimmune thyroiditis (SAT) and is a well-established biomedical model for Hashimoto’s thyroiditis in humans. Both conditions are characterized by the infiltration of thyroid glands with mononuclear immune cells resulting in the destruction of thyroid tissue and impairment of the thyroid’s endocrinological functions. Past studies described immune cell infiltration in thyroids of the OS chickens, but the time-course, cell composition, and relative amounts of the various immune cells infiltrating the thyroids have not been well defined. In this project, frozen and stored thyroid glands that were previously collected at 1, 4, 7, 14, …

Research outputs 2022 to 2026
Blackberries and raspberries, commonly known as Rubus berries, are commercially grown worldwide across different climates. Rubus berries contain wide array of phytochemicals, vitamins, dietary fibers, minerals, and unsaturated fatty acids. Nevertheless, these berries have short storage life which is the major constraint in their supply chains leading to higher postharvest losses. Inappropriate harvest handling, physical bruising, insect pests, and postharvest diseases lower the acceptability of fruit among consumers and other supply chain stakeholders. Additionally, the susceptibility to microbial decay, fruit softening, higher ethylene production, respiratory activity, and increased oxidation of anthocyanins, phenolics, and flavonoids considerably affects the marketability of Rubus …
