In the last 30 years, rice has become the number one food staple in Haiti, and rice imports have outpaced domestic production to supply the country’s increasing rice demand. Policy makers support the claim that increasing local rice supply will not only reduce the dependency on imported rice but also upheave the national economy. However, there is a lack of information on Haitian consumers’ preferences for rice to aid the development of the local rice supply chain. The purpose of this descriptive study was to determine the reasons why 38% of the students at the University of Arkansas experience food insecurity, yet only 1% of students have used the Jane B. Gearhart Full Circle Campus Food Pantry, in hopes to provide a guide to the Center for Community Engagement in their endeavors to reduce food insecurity on campus (Lisnic, 2016). Many Americans face difficult financial decisions, often regarding the allocation of limited resources. Household resources may be split among the costs of food, clothing, housing, transportation, childcare, utilities, and health care. For some households, this allocation may present a challenge to purchasing sufficient food, leading to food insecurity. Defined by the United States Department of Agriculture (USDA) as “a household-level economic and social condition of limited or uncertain access to adequate food” (2017), food insecurity may decrease when other financial-related aspects of life improve. The following research paper begins with an acknowledgement of the global food crisis and, more specifically, the agribusiness model of food production and distribution in the United States. It then zeroes in on the fundamental issues with many of the United States food movements. It then outlines a narrative with the frame that food security is a human right by elucidating concepts of food justice and food sovereignty. Using nationally representative data, this paper aims to determine the impact of the 2008 financial crisis on the food security level of veterans relative to non-veterans. An ordinal logistic model reveals that the aforesaid recession did not have a significant impact on the food security level of veterans vis-à-vis non-veterans.

Food insecurity arises when one does not have physical, social, or economic access to safe, sufficient, and nutritious food. According to the United States Department of Agriculture (2016), food insecurity affects 15.6 million U.S. households. Its effects go beyond the physical consequences that might arise from not having adequate nutrition, influencing subjective well-being and behavior in both adults and children. This 2 x 2 quasi-experiment investigated how current and prior food insecurity influenced depression, anxiety, stress, life satisfaction, and happiness in parents, as well as how it influenced child behavior.
