Influence Of Fermentation And Cowpea Steaming On Some Quality Characteristics Of Maize-Cowpea Blends, Samuel Sefa-Dedeh, Yvonne Kluvitse, Emmanuel Ohene Afoakwa

Professor Emmanuel Ohene Afoakwa

Fermentation and cowpea steaming can be used to improve the protein quality and quantity of fermented maize dough. In the production of maize-cowpea blends, it is important that the quality characteristics are evaluated to determine their functionality in the products. A 5x4x2x2 factorial experiment with cowpea level, fermentation time, cowpea steaming time and fermentation method as the variable was performed. The cowpeas were dehulled, steamed, dried at 65EC for 24 hours and milled into flours. Maize was soaked in water (18 hours), drained and milled into flour. The maize-cowpea blends were made into a 50% moisture dough, fermented for the …

Chemical Composition And Quality Changes Occurring In Dioscorea Dumetorum Pax Tubers After Harvest, Emmanuel Ohene Afoakwa, Samuel Sefa-Dedeh Mar 2001

Chemical Composition And Quality Changes Occurring In Dioscorea Dumetorum Pax Tubers After Harvest, Emmanuel Ohene Afoakwa, Samuel Sefa-Dedeh

Professor Emmanuel Ohene Afoakwa

Studies were conducted on the chemical composition, as well as the biochemical and textural changes, occurring during storage of two cultivars of Dioscorea dumetorum yam tubers. The tubers were harvested and stored under tropical ambient (28_C) and cold room conditions (4_C) for 24, 48 and 72 h. The samples were evaluated for moisture, starch, sugars, fibres and textural properties. Chemical analysis showed no significant differences between the means obtained for moisture, ash, protein, fibre, fat, carbohydrate, calcium, phosphorus, iron, vitamin A and vitamin C contents of the cultivars (white and yellow) studied. During storage, moisture contents decreased by approximately 6–10% …

Forest Dynamics In Flood Plain Forests In The Peruvian Amazon: Effects Of Disturbance And Implications For Management, Gustav Nebel, Lars Peter Kvist, Jerome K. Vanclay, Hector Vidaurre Dec 2000

Forest Dynamics In Flood Plain Forests In The Peruvian Amazon: Effects Of Disturbance And Implications For Management, Gustav Nebel, Lars Peter Kvist, Jerome K. Vanclay, Hector Vidaurre

Professor Jerome K Vanclay

Forest dynamics were studied from 1993 to 1997 for individuals > 10 cm DBH in nine 1 ha permanent sample plots. They were established in natural flood plain forests located on the lower Ucayali river in the Peruvian Amazon. After inventories of three plots in each of three forest types, a light and a heavy felling treatment were applied to each of the two plots, while a third plot was kept untreated. Average annual stem mortality and recruitment rates in the untreated plots were among the highest observed in neotropical rain forests: mortality 2.2-3.2% per year, recruitment 3.0-4.6% per year. Dead …

Modeling The Effects Of Area Closure And Tax Policies: A Spatial-Temporal Model Of The Hawaii Longline Fishery, Ujjayant N. Chakravorty, Keiichi Nemoto Dec 2000

Modeling The Effects Of Area Closure And Tax Policies: A Spatial-Temporal Model Of The Hawaii Longline Fishery, Ujjayant N. Chakravorty, Keiichi Nemoto

Ujjayant Chakravorty

We develop an economic model for a multi-species fishery that incorporates the spatial and temporal distribution of effort and fish stocks. Catchability coefficients and initial stocks are estimated from catch and effort data for each specific location. Vessels are allocated over space and time to locations of maximum profit, which decline with harvest because of stock externalities. A supply function for labor allocation in the fishery is estimated. The simulated model is applied to the Hawaii longline fishery. The economic impacts of regulatory policies, such as reduction of inshore gear conflict and conservation of offshore turtle populations, are examined.

Management Of Fisheries In Eu: A Principal-Agent Analysis, Frank Jensen, Niels Vestergaard Dec 2000

Management Of Fisheries In Eu: A Principal-Agent Analysis, Frank Jensen, Niels Vestergaard

Niels Vestergaard

In this paper, an EU tax on fishing effort is studied as an alternative to the system of Total Allowable Catches (TACs). The analysis is conducted under imperfect information, and the hypothesis adopted is that the EU lacks information about the costs of individual fishermen. In light of this imperfection, there are at least two reasons for considering an EU tax. First, it can be used to correct part of the market failure associated with fisheries. Second, it can be used to secure correct revelation of fishermen types in light of asymmetric information.

Measuring The Cost Of Beach Retreat, George R. Parsons, Michael Powell Dec 2000

Measuring The Cost Of Beach Retreat, George R. Parsons, Michael Powell

George Parsons

We estimate the cost over the next 50 years of allowing Delaware’s ocean beaches to retreat inland. Since most of the costs are expected to be land and capital loss, especially in housing, we focus our attention on measuring t hat value. We use a hedonic price regressi on to estimate the value of land and structures in the region using a dat a set on recent housing sales. Then, using historical rat es of erosion along the coast and an inventory of all housing and commercial structures in the threatened coastal area, we predict the value of the land …
