School Pantry Cook-Off: An Approach To Educate Youth On Food Insecurity, Siew Guan Lee, Gretchen Manker, Nav Ghimire, Laura Foist, Julie Buck
The Journal of Extension
The “School Pantry: Mystery Food Box Cook-Off” is a program designed to increase awareness of food insecurity among youth and teach strategies to prepare healthy foods on a budget. A pre-and-post survey showed a statistically significant difference in participants’ overall knowledge, skills, and confidence level after the program compared to before the program. Findings revealed a hands-on nutrition education strategy via cook-off could educate youth on food insecurity and increase their knowledge and confidence to make healthy and affordable meals at home. Other Extension educators seeking to address food insecurity and food preparation skills among youth can replicate this program.

This research was aimed at studying the RISE pilot program and stability factors of low socioeconomic groups. Self-sufficiency programs focus on households moving from crisis to empowerment; no longer relying on subsidies. Gaining employment and housing alone do not create socioeconomic stability. It was therefore determined that the RISE Program should be evaluated to determine the effectiveness at ending dependency. Methods: Thirty-four (30.6%) participants were included in this evaluation. Using logistic regression techniques, sixteen items on the RISE Self-sufficiency Assessment were explored. Results: RISE participants derived significant economic benefits, and that food security seemed to be the greatest mediator of …

Food waste and food insecurity are strange bedfellows, but in the United States they shamelessly walk hand-in-hand. The USDA’s Supplemental Nutrition Assistance Program (“SNAP”) and the Emergency Food Assistance Program (“TEFAP”) are two federal programs that provide for large numbers of people in the United States. Introduction: Food insecurity is a problem for individuals across Ohio, including those living in Appalachia. Adequate access to resources that help combat food insecurity is important for these populations.
Purpose: To examine how rurality relates to food insecurity and need for food resources, as well as availability of those resources including food pantries and soup kitchens, in 15 northern Ohio Appalachian counties.
Methods: A cross-sectional study with a geographical analysis was conducted using data from the American Community Survey census data, County Health Rankings data, and regional foodbank websites.

The pressure of rising food prices on low-income households is often assumed to be primarily an issue for developing economies, where fluctuations in food staple prices can have dramatic consequences for food security and social and political stability. Observers often note that Americans benefit from relatively low food prices and spend far less to feed their families than their counterparts in many other parts of the world. Abstract
In 2018 the Commonwealth of Virginia’s General Assembly considered, but did not pass, legislation to combat food deserts via the creation of the Virginia Grocery Investment Program and Fund. The Fund introduced a $3.75 million per year appropriation intended to leverage public-private partnerships to support construction, rehabilitation, upgrading or expansion of grocery stores or other food retailers in underserved communities.

This study analyzes the response of youth in Chipinge in face of climate change's effect on food insecurity in the area. The qualitative research informed by desktop analysis provides empirical evidence that youth in Chipinge district have lost hope in their potential and district’s capacity to guarantee food security due to adverse changing weather patterns over the previous two decades namely, cyclone Eline and Idai. Chipinge’s climate is the key at changing the narrative at hand as it has proven to favor cash crop plantation and small grain production for example, tea, coffee macadamia nuts, sorghum and millet.
