How food is produced has dramatic consequences on how we live, our world’s justice, and the future of our planet. In a world increasingly driven by neoliberalism, agricultural markets have been incentivized to industrialize, globalize, and consolidate. This has resulted in the global dominance of a new type of agriculture, industrial agriculture, driven by the market logic of lowering costs and raising profits. This thesis provides an analytical case study of Huerta del Valle Community Garden as a successful model of redefining social capital through not only providing healthy, affordable, high quality produce to a community subjected to the disproportionate consequences of systemic inequality, but also in incorporating a food justice education framework to underlie all development at the garden. The food justice movement has taken off in recent years. Despite its call for justice in the food system, it has been critiqued as being inaccessible to people who need food the most. The food system marginalizes women, minorities, and low-income people, making these groups the most at risk for food insecurity. Solutions to food insecurity come from both government and non-governmental avenues. This thesis calls for a merger of solutions to food insecurity and food justice in food security justice, and assesses the ability of solutions to food insecurity to confront issues of injustice. This senior environmental studies thesis explains and analyzes edible education through a food and gardening program at a continuation high school in Claremont, California. The first chapter situates the program-specific analysis by providing background information of the edible education movement, a history of the Edible Schoolyard in Berkeley, California, and an explanation of why food is a powerful teaching tool. The second chapter delineates the program by describing all of its components and compiling essential resources and teaching documents. This thesis explores the social dynamics of community gardens and their participation within them in the contemporary food justice movement in Seattle, Washington. Community gardens are seen as solutions to myriad urban and environmental problems, such as food deserts, community empowerment, urban greening, environmental education and sustainability of the food system. Three case studies of Seattle organizations, the P-Patch Program, Lettuce Link and Alleycat Acres, provide a basis for analysis of the purported benefit of community empowerment as a function of organizational structure, history and policies.
