The impact of diet and exercise on overall health and chronic disease risk has been well examined. Multiple studies show that Americans eat more now than they did fifty years ago. What isn’t known is how much of an impact time has on food intake patterns of individuals in terms of different age groups, historic periods of structural influences, and birth cohorts.

Increasing rates of overweight, obesity, and related metabolic diseases documented among refugee communities across the United States necessitate greater attention to how processes of integration impact refugee health. These nutritional health trends (e.g., increasing rates of obesity) suggest potential disconnects between refugees' past environments and their conditions after re-settlement, which may contribute to adverse changes in energy balance (diet and exercise). Homeodynamic space (HDS) shrinks as vulnerability increases with aging and repeated damage to the cells. HDS is lost in alcoholic pancreatitis patients due to overconsumption of alcohol, smoking, and high fat diets. Etiologically relevant animal models for study of chronic pancreatitis (CP) are needed. In order to begin filling this gap a central purpose of this dissertation research was to examine relationships between the alcohol and high fat diet (AHF) and pancreatitis with attention to hypersensitivity and anxiety-like behaviors. The AHF diet induced pancreatitis described here etiologically mimics human risk factors of AHF consumption for advancement to alcoholic CP.

As post-secondary education becomes more important for the American citizen to generate wealth, universities are struggling to retain and graduate African-Americans, the third-most represented demographic in the country, especially at predominately white colleges and universities. The Colleges of Agriculture at these particular institutions are struggling to even get Black students to apply, let alone graduate. One of the major issues is the disconnect between the African-American community and the idea of post-secondary education in the agricultural field. Discussions of sex education of any kind can be controversial in a given setting. Traditional approaches to sex education prompt debate regarding effectiveness. Key indicators central to the effectiveness of sex education continue to be rates of teen pregnancy and transmission of sexually transmitted diseases (STDs). With discontentment surrounding the effectiveness of “traditional approaches,” a more wide-ranging method is worthy of being explored. Aggression is a dynamic and costly feature of human behavior. One reliable cause of aggression is social rejection, though the underlying mechanisms of this effect remain to be fully understood. Previous research has identified two psychological processes that are independently linked to aggressive retaliation: pain and pleasure. Given recent findings that pain magnifies the experience of pleasure, I predicted that the pain of rejection would promote the pleasure of aggression and thus, aggression itself. I also expected that this indirect effect of aggressive pleasure would only be observed among individuals with weaker self-regulatory abilities that are necessary to cope with …
