Food Preferences Among Children At Arcadia Elementary School, Laurel Lee

My research, conducted from September through November of 2017, showed that the children preferred more processed foods and starches instead of healthier options such as fruits and vegetables, even when healthy options were available. According to the parents/caregivers surveyed, their children prefer to eat processed American meals. Parents/caregivers desired for their children to eat a variety of different foods including fruit, vegetables, proteins, and traditional Hispanic food. Aim Undergraduate nutrition and dietetics students need to develop research skills and professional competencies to identify evidence-based nutrition and food studies research. Research skills are essential for student success in dietetic internships, graduate school, and future professional practice as nutrition and dietetics professionals. In a collaborative effort to improve student research skills, teaching faculty, the program director, and the liaison librarian developed a series of research skills one-shot sessions for an accredited undergraduate program in Foods and Nutrition at a public liberal arts college. Seeds that Feed (STF) is a mobile food pantry located in Fayetteville, Arkansas. STF receives produce from local farmers to distribute to residents in low-income housing sites throughout Northwest Arkansas. According to Feeding America, food insecurity affected 14.3% Washington County, Arkansas’ population in 2016. The purpose of this study was to determine if STF’s model is an effective way to increase individuals’ access to fresh fruits and vegetables and increase their potential to meet the United States Department of Agriculture’s Food Patterns (USDA-FP) for to fruit and vegetable consumption. This discussion paper examines development implications for food and nutrition when cash transfer interventions intersect with food system changes, particularly in urban areas where food is predominantly accessed through the market. South Africa is used as a case study because of its advanced social protection system as well as the rapid food system changes it is experiencing that are similar to those in other cities in the Global South.
