The charitable food system includes food pantries and are often used by individuals and households who are food insecure (Kuhns & Norotny, 2021; Seligman & Berkowitz, 2019; Sangye, 2013). Adults with any level of food insecurity have a 43% to 53% greater risk of developing a chronic disease than those who are food secure. The economic and environmental benefits of genetically modified (GM) maize in South Africa have been well documented in previous literature. However, concerns about the longevity of these benefits, have been raised following reports of Busseola fusca developing resistance to Bacillus thuringiensis (Bt) maize in South Africa in 2006. This study uses empirical data to estimate the potential impact of insect resistance on yields and estimates the economic and food availability impacts of genetic deterioration of Bt maize. In Arkansas, 26.3% of children are food insecure, meaning they do not have enough or lack the ability to obtain enough food for adequate nutrition (Miller 2019). In recent years, a new phenomenon has been taking place called lunch shaming where children are sometimes forced to wear signs or handstamps that say the child’s lunch account is overdue. This research analyzes how the media frames food insecurity and how perceived social stigmas affect a student’s willingness to seek out help when struggling with food security.

Rice consumption in Benin is increasing along with shifting consumer demand toward higher quality rice. In this context of changing demands, experimental estimation methods provide an effective way to estimate the current state of consumer preferences. We conducted a hypothetical choice experiment in 15 open markets in Benin to analyze the demand for rice and its substitutes. The results reveal that consumers value quality rice, even those in the low-income class. This project utilized a mixed-method needs assessment approach to urban agriculture in Arkansas, a predominately-rural state. Chapter II was a qualitative study, using semi-structured, in-depth interviews, that investigated the perceptions, needs, and experiences of Arkansas urban farmers and their interactions with the University of Arkansas Division of Agriculture Cooperative Extension Service (CES). Interviews were conducted with 16 urban farmers in Northwest and Central Arkansas. This study examined the relationships between food insecurity, risks, and resources among adolescents attending a large high school in Northwest Arkansas. In a sample of 1,493 students, in which the majority are Hispanic/Latino and receive free and reduced lunch, food insecurity relationships were first assessed controlling for a number of sociodemographic variables, such as ethnicity, gender, and social class. In addition, a number of risk and resource variables were identified at four ecological levels: individual, family, school/peer, and community. It is underdeveloped in food security, agricultural production, and nutritional status, and research shows its residents are not foreign to poverty and malnutrition. This project assesses the effectiveness of the Expanded Food and Nutrition Education Program (EFNEP) within the context of supermarket access. EFNEP is a national community nutrition education program that strives to give participants the tools to live healthier lives. Analysis was performed on participants from 16 Arkansas counties that completed EFNEP during 2013 or 2014. The program outcome is measured in terms of the change in Healthy Eating Index (HEI) as calculated from 24-hour diet recalls at program entry and exit. This dissertation is comprised of three essays that examined the experiences and welfare of traditional food crop farmers in Western Jamaica. It systematically analyses the interplay between smallholder farmers and often overlooked variables in society. The study used qualitative interviewing, field observations and discourse analysis techniques to generate context-specific evidence for food security policymaking.

The first essay examined smallholder farmers' motives for farming.
