Our understanding of the science of anthropogenic climate change and its immediate and indirect impacts has grown within the last decade.Alongside anincrease in concern for the inequities within the industrialized food system, climate change is impacting agriculture and the communities that depend on it in myriad ways. Improving the sustainability of rice production is important given its position as a global staple and its environmental footprint. The adoption of sustainable practices can generate positive externalities such as lower environmental pollution and improved working conditions for rice industry workers that could be capitalized via the design of consumer-based marketing strategies. The Sustainable Rice Platform (SRP) initiative aims at advancing the adoption of sustainable practices in rice production. This study specifies the types of consumers that participate in the U.S. organic market and investigates their revealed preferences. I propose three theoretical consumer types – indifferent consumers, informed organic food lovers, and uninformed organic food lovers – and conduct cross-sectional and time-trend analyses utilizing organic fruit purchase data compiled by The Neilsen Company. The cross-sectional analysis is estimated with a two-stage Heckman selection model, while the time-trend analysis uses simple descriptive statistics and a differenced OLS regression technique. This chapter aims to show that the process of changing rules within the capitalist market system, specifically meat safety governance reform in New Zealand and South Africa, raises profound obstacles for human agency, yet opens new spaces for conceptualizing who participates in promoting change. Agency and structure are complex concepts with dueling tensions that alter the form and substance (as Wright and Middendorf argue in their Introduction to this volume) of individual and collective action in the red meat commodity chains of these two countries.
