Chinese dietary therapy has been documented to date back at least 4000 years (Zhang, 2012). The aim of traditional Chinese dietary therapy was to maintain health by achieving the balance of Yin, cold or cool, and Yang, hot or warm, components in human bodies through having a Yin-Yang-balanced diet. Yin foods were to expel heat syndromes, such as constipation, caused by excessive Yang (heat), while Yang foods were to treat cold syndromes, such as fatigue, caused by excessive Yin (coldness). Objective: The purpose of the DNP project was to improve nutritional knowledge of the adolescents at Kings Canyon Unified School District while also improving their perceived ability to choose healthy food. This project was enveloped in a larger community outreach mission utilizing a free school-based clinic for the purposes of providing sports physicals to students and health screening and physicals to the community. The diet quality was analyzed for people living in New Zealand and people living in other Westernized Countries (United States, Canada, Western Europe) based on the dietary guidelines. Diet quality was analyzed by looking at consumption of food groups such as fruits, vegetables, meat, and seafood as well as nutrients such as saturated/trans/unsaturated fat, sodium, and added sugars. These nutrients have been linked to certain health outcomes and chronic disease; therefore, the prevalence of chronic disease was researched to determine if there was a correlation between New Zealand's diet and their chronic disease rates in comparison to other Westernized countries.

PURPOSE:Muscle soreness levels and hydration status are important indicators of recovery from high intensity endurance exercise, and can be influenced by post-exercise nutrient intake. Chocolate milk has been reported to be an effective recovery beverage in adults, as it contains carbohydrate, protein, and water/electrolytes at levels that are appropriate for refueling, muscle repair, and rehydration. However, few studies have tested the efficacy of chocolate milk for post-exercise recovery in adolescents. Background: The Neighborhood Produce Market (NPM) is a food distribution model similar to a mobile food pantry. NPM stakeholders observed a lack of community engagement and familiarity with produce offered.

Project Description: The objective was to develop a nutrition education curriculum for NPM volunteers to better engage families and community members by providing food samples, recipes, and nutrition education. A stakeholder steering committee guided the needs assessment, curriculum development, volunteer training, and pilot test. STF receives produce from local farmers to distribute to residents in low-income housing sites throughout Northwest Arkansas. According to Feeding America, food insecurity affected 14.3% Washington County, Arkansas’ population in 2016. Objective: To understand the perception of anemia among the women of childbearing age in Bolgatanga, Ghana, and to correlate the reasoning with the high incidence of anemia in the area.

Black soldier fly (BSF) larvae have been studied extensively in animal feed production, but there is limited research for non-production species, such as reptiles, despite their popularity as a calcium-rich feeder insect. The goals of this thesis were to determine the nutritive value of BSF larvae for a lizard species and as an ingredient in a diet formulated for snakes.

Background: While nuts and their related nutrients have been inversely associated with some cancers, the association between nut consumption and prostate cancer has been inconsistent.

Methods: We conducted an analysis of the association between nut and peanut butter consumption and risk of incident prostate cancer among 173,243 men in the prospective NIH-AARP Diet and Health Study. There was a total of 18,619 incident prostate cancer cases during the 16 years of follow-up. The prevalence of low-energy availability (LEA) in able-bodied female athletes has been extensively examined; however, research has yet to examine LEA in Paralympic athletes. Therefore, the purpose of this study was to examine the risk of LEA and related symptoms including menstrual health, hormonal profiles, and bone mineral density (BMD) in female para-athletes. Female national para-athletes (n = 9) completed 7-day food and activity logs, Low Energy Availability in Females Questionnaire (LEAF-Q) and Eating Disorder Examination Questionnaire (EDE-Q), Dual energy X-Ray Absorptiometry (DXA) scans, and hormonal profile blood spot testing. Additional health concerns and behavioral changes have been attributed to the consumption of foods containing preservatives and additives. Sodium benzoate (SB) is a commonly used bacteriostatic in food and beverages. This study investigates the effects of SB on the gut bacteria and mucosal health in the gastrointestinal tract of laboratory mice.
