The Factors Causing High Food Insecurity Rates In U.S. Undergraduate Students, Natalie S. Byrd
Soaring: A Journal of Undergraduate Research
The cliché of a college student surviving off ramen noodles sheds light on a deeper issue — high rates of food insecurity among undergraduate college/university students in the United States. There have been countless studies in recent years exploring the hidden causes of why an estimated 40% of students experience food insecurity as of 2022. These studies conclude three main reoccurring factors causing these high rates: costs, accessibility, and demographic characteristics. Food insecurity rates are important for higher education officials to address due to the countless physical and mental health, academic, and equity implications for the students.

BACKGROUND: Lack of access to adequate, safe, and nutritious food is a major concern for the Afghan population due to ongoing war and humanitarian crises. Recently resettled Afghan refugees in the US continue to face challenges securing adequate, nutritious food resources in new environments. This study examined Afghan refugees' food access and insecurity in the San Joaquin Valley, California.
METHODS: Semi-structured, in-depth interviews were conducted to collect the perspectives and experiences of key informants and newly arrived Afghan refugees.

The Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) is now expected to allow participants to redeem their food benefits online, i.e., via online ordering, rather than only in-store. However, it is unclear how this new benefit redemption model may impact participants’ welfare since vendors may have an asymmetric information advantage compared with WIC customers. The WIC online ordering environment may also change the landscape for WIC vendors, which will eventually affect WIC participants. Stress results in many people altering their eating patterns, often consuming food high in sugar and fat. Such behavior is a factor in the growing obesity epidemic and can potentially cause the development of chronic diseases, resulting in employment problems and billions of extra dollars spent on national health care programs. Researchers have focused on the concept of “emotional eating” while overlooking the overarching research question of this study, which was about exploring the experience of individuals using eating behavior as a coping mechanism to deal with stress. Being an immigrant in the contemporary U.S. is stressful. During the pandemic of 2020, these stressors are amplified for all populations. At the same time, Latinx immigrants are also disproportionately affected by the pandemic. They are more vulnerable, face greater economic challenges, and are more likely to die from the virus. In addition to these difficult realities, regardless of status, Latinx immigrants are often perceived as illegal and subjected to discriminatory treatment [1]. Diet-related health disparities are well documented in immigrant populations. This study aims to help better inform nutrition interventions. It did so by working with migrant members of the New Haven community to explore their perceptions of the nutrition of the food they eat and relate it to how this food is grounded in their cultural identity and social belonging.

Mesa Verde Gardens has been a great asset in the Watsonville and Pajaro area by providing a unique way for people to live healthier lives. The community gardens have given people an opportunity to reach new standards for themselves. The organic produce being grown out of the seven different gardens in the area has accommodated the gardeners with delicious food for the entire season. In order to grow Mesa verde Gardens, an outreach project was conducted to allow people to familiarize with all seven gardens. These events included fundraisers, door to door outreach, and participation in community gatherings like festivals. …

The population over 60 years old is growing rapidly in Norway and in many other countries, and researchers often focus on elderly people and various diseases. This article examines the healthy elderly who are active in their daily lives to understand their motivation and knowledge about food and meals. The method used was CurroCus® group interviews, or fast focus groups. Nine CurroCus® groups were conducted, lasting for 37 to 56 minutes (average = 45 minutes). Food allergies grew 18% from 1997-2007 (Centers for Disease Control and Prevention, 2013). As the prevalence of food allergies continues to grow, college students with diagnosed food allergies are having difficulty finding allergen friendly foods in college campus food service (Food Allergy Research & Education, 2014). In order to find the relationship between food allergy communication and prevalence of allergen friendly food on a college campus, a mixed method design was used for this research study. Obesity-related diseases have been increasing in African immigrants throughout the United States. Although research has been done to identify risk factors associated with many ethnic groups in the United States, only a few studies exist that explore obesity and type 2 diabetes diseases among Central African immigrants. The conceptual framework for this qualitative case study was social constructivism and the health belief model. The notion of addiction pervades Western vernacular. While firmly established in the substance and drug literature, the concept of addiction is now increasingly associated with other ingested substances (coffee, chocolate, highly processed foods) and a range of compulsive behaviors (gambling, sex, online social networking, gaming). Addiction is associated with substantial morbidity and mortality, and a greater understanding of its etiology has significant public health implications. The physiological mechanisms thought to contribute to the development and maintenance of addiction (tolerance, withdrawal, and, possibly, craving) are widely considered hallmark features and primary treatment targets, while psychological and contextual factors are often underappreciated …

In this paper – drawing from a range of food blogs and social media pages – I consider both the ways in which Māori writers discuss some of the barriers and cultural conflicts experienced within the realm of vegan ethics, as well as their perspectives on various facets of Te Ao Māori (the Māori world) such as kaitiakitanga (guardianship), hauora (holistic health and wellbeing), and rangatiratanga (sovereignty) which have influenced their attitudes and approaches towards veganism and plant-based diets. In low-income, suburban Black communities, the prevalence of diet-related chronic illnesses is alarming. Various influences often increase diet-related illnesses among this population. One influence is the use of SNAP benefits to purchase food. In this study, the influences of SNAP as well as other influences affecting food purchase decisions among the study population was examined. A qualitative multicase study approach was used and, face-to-face interviews were conducted, to understand the experiences of 20 low-income, current recipients of SNAP who were Black and lived in suburban, New York. Background: Food allergy is an important public health problem because it affects children and adults, can be severe and even life-threatening, and may be increasing in prevalence. Beginning in 2008, the National Institute of Allergy and Infectious Diseases, working with other organizations and advocacy groups, led the development of the first clinical guidelines for the diagnosis and management of food allergy. A recent landmark clinical trial and other emerging data suggest that peanut allergy can be prevented through introduction of peanut-containing foods beginning in infancy.

Food insecurity is defined as the limited or uncertain availability of nutritionally adequate and safe foods. It can also be defined as the limited or uncertain ability to acquire acceptable foods in socially acceptable ways. Previous research has observed that food insecurity can disrupt optimal development throughout the life cycle. A growing body of literature has documented the effects of food insecurity on cognitive, academic, and psychosocial development among college students. These studies consistently observed that food insecurity is associated with lower academic performance, poor health, and decreased psychosocial function. The concept of food addiction (FA) remains controversial with research being in the nascent stages; FA like any addiction can have a devastating impact on the lives of those afflicted. There exists a clinical need for treatment strategies for those affected. This article reviews potential treatment strategies for FA. The treatment strategies target four core behaviours of the addiction phenotype specifically craving through the opioid system, impulsivity as a personality trait, compulsivity through the serotonergic system and lastly motivation through the dopaminergic system. Affect regulation theories posit that loss of control (LOC) and binge eating are maintained via an emotion regulation process, through which eating relieves negative affect and aversive mood states. LOC has been identified as a key binge eating characteristic associated with psychopathology and poor psychological outcomes. As such, maladaptive emotion regulation has been identified as a central risk factor for binge eating, as theories posit that individuals binge eat in response to negative mood states. However, empirical studies testing the link between induced negative mood and subsequent food intake in people with LOC and binge eating have yielded inconsistent findings. …

Though food is widely recognized as a basic necessity for humanity, disparate access to it highlights whose bodies, environments, health, nutrition, and utter existence has mattered most in American society—and whose has mattered the least. Through interviews with residents of the South Side of Chicago about the alternative food pathway they’ve forged for themselves, we learn that food becomes much more than just sustenance. Interviewees describe our present day food system as undeniably rooted in a history of enslavement and exploitation of Black and Brown bodies; they regard food justice work by communities of color as an important source of …

Abstract
Incarceration and substance abuse are two of the largest public health issues in America. While the U.S. makes up only 5% of the world’s population, it accounts for 25% of its prisoners. Incarceration affects more than 2.2 million individuals who will eventually return to their families and communities with ongoing family, social and health issues. Women in prison are a particularly vulnerable and underserved population, generally of low education and socio-economic status and although they account for a small percent of the prison population, many are mothers of young children who are likely to become incarcerated themselves. Automation of dietary assessments allow participant behaviour to be captured by video observation. They also allow clinicians to identify areas which effect reporting accuracy. This observational study describes the differences in behaviour according to the type of foods selected by participants using a dietary assessment website encompassing diet history methodology.

Objective: The aim of this study was to examine food patterns of Australian children ages 9 to 13 y in relation to ω-3 long-chain polyunsaturated fatty acid (ω-3 LCPUFA) intake. Methods: Secondary analysis was conducted on nationally representative food data of 1110 Australian children ages 9 to 13 y (525 boys and 585 girls) that was obtained using two 24-h recalls. Principle component factor analysis was used to identify food patterns. Discriminant function analysis was used to identify the relationship between the food patterns and total ω-3 LCPUFA intake. An Australian food composition database, AUSNUT1999, does not include long chain omega-3 polyunsaturated fatty acid (LC omega-3 PUFA) data. Measurement of the fatty acid content of diets initially analysed using AUSNUT1999 requires conversion to AUSNUT2007, an updated database inclusive of LC omega-3 PUFA. The aim of this study was to convert clinical trial dietary data from AUSNUT1999 to AUSNUT2007 and measure LC omega-3 PUFA intake. Clinical trial diet history (DH) data was converted from AUSNUT1999 to 2007 using a staged approach. To determine the nature and differences in expert opinion from the fields of nutrition and marketing on the use of health claims in the 30 most frequently appearing Australian magazine food advertisements, a survey was conducted with 28 nutritionists and 21 marketing experts in Australia and New Zealand. The experts assessed the advertisements with respect to the accuracy of the nutrition claims, the tactics and intentions of the advertising strategy and the accessibility of the nutrition information to lay consumers.
