Background: College students experience food insecurity at a rate 3.5 times higher than the U.S. general population, affecting 43% of students. Furthermore, college students consume high amounts of ultra-processed products. NOVA, a food classification system, takes into account food processing and is thought to better fit the modern food environment.

Purpose: The purpose of this research project was to examine the impact of CalFresh enrollment on food security status. This study also evaluated the impact of two different nutrition education interventions (MyPlate and MyPlate+NOVA) on participants’ dietary habits and nutrition knowledge.

Background: Food insecurity amongst South Asian Americans is a major public health issue. The South Asian American (SAA) community is the third largest Asian community in the United States. Despite this fact, very few specific studies have been conducted to investigate the food needs and barriers that exist within the SAA community so as to successfully help them improve dietary habits.

Methods: This study utilized a mixed methods convergent parallel design, where both qualitative and quantitative methods were conducted and analyzed separately and compared and contrasted at the end.

Objective: Food insecurity among South Asians in the US is a public health issue. Food insecure adults face a plethora of adverse outcomes and research shows that individuals with ancestral origins from South Asia have a higher susceptibility rate for cardiovascular disease after migrating to urban environments. As such, the goal of this study was to research possible barriers South Asians face when creating cultural dishes in the US.

Background: The Neighborhood Produce Market (NPM) is a food distribution model similar to a mobile food pantry. NPM stakeholders observed a lack of community engagement and familiarity with produce offered.

Project Description: The objective was to develop a nutrition education curriculum for NPM volunteers to better engage families and community members by providing food samples, recipes, and nutrition education. A stakeholder steering committee guided the needs assessment, curriculum development, volunteer training, and pilot test. Seeds that Feed (STF) is a mobile food pantry located in Fayetteville, Arkansas. STF receives produce from local farmers to distribute to residents in low-income housing sites throughout Northwest Arkansas. According to Feeding America, food insecurity affected 14.3% Washington County, Arkansas’ population in 2016. Examining University Food Systems: Understanding Student Food Insecurity Levels And Food Waste At Minority-Serving Institutions, Amy Louise Gootee-Ash

This quantitative study investigated food insecurity levels and attitudes and behaviors towards food waste at minority-serving colleges (MSIs). A validated survey from the United States Department of Agriculture’s (USDA) Adult Food Security Survey Modules (AFSSM) was used to assess food security population levels. Paper 1 of the three included is a case study at a MSI (n = 229) that examined food security levels. No significant relationships at the p < .05 were found between food security and student ethnicity, living arrangements, meal plan enrollments, or grade-point averages. Paper 2 examined food security at three MSIs (n = 449) and two traditional, diverse schools (TDUs; n = 236). Food security levels between MSIs and TDUs were shown to be statistically significant (p < .05), while levels of student financial aid participation between MSIs and TDUs were not statistically significant. A comparison of food security levels at regional-state colleges in Delaware and Maryland reveal a significant difference in levels of food security (p < .05). The third paper found no significant relationship between students (n = 222) who were exposed to food waste education campaigns and reported levels of food waste behaviors. No statistical significance could be discerned between meal plan offerings and reported plate waste, which is food thrown away by consumers after a meal.

Diabetes is a chronic condition affecting more than 30 million adults living in the United States. Diabetes self-management (DSM) can prevent or delay the complications of diabetes and improve clinical outcomes; however, data show that low-income, food insecurity, female gender, and race contribute to challenges performing effective DSM. The health belief model was the theoretical framework for this cross-sectional study, which examined how food insecurity, low-income, and race affect DSM activities in women with diabetes.
