Examining The Credentials Of Food Bloggers And The Online Environment Of Food Blogs, Jessica Coburn

Master's Theses and Doctoral Dissertations

This study evaluated characteristics of food blogs and food bloggers that potentially affect food choices. It was hypothesized that most food bloggers would not have a nutrition-related degree and food blog environments wouldn’t be supportive of health-conscious food choices. A cross-sectional study was conducted using a novel evaluation tool on 187 blogs, out of which 100 blogs met inclusion criteria. Because some blogs had multiple bloggers, two samples were investigated: 111 bloggers (n1 = 111) and 100 food blogs (n2 = 100). Data were gathered from a randomized list of blogs taken from americanfoodbloggers.com. Results showed that 6% of bloggers …

What Are The Barriers Affecting Accessibility Of Dietetic Internships?, Samantha Moelter Jan 2016

What Are The Barriers Affecting Accessibility Of Dietetic Internships?, Samantha Moelter

Master's Theses and Doctoral Dissertations

Objective: To explore the disparity between number of students completing degrees in dietetics, students matched to internships, and current and projected field needs. Methods: An electronic survey covering a variety of factors potentially affecting internship accessibility was distributed to 251 internship program directors, 200 preceptors, and accreditation board, staff, and review members. Results: Of 193 total respondents, 60% agreed that accreditation competencies prepared dietetic interns well and that internship costs may hinder diversity among interns. Seventy-two percent of program directors (n=115) reported difficulties in preceptor recruitment and 56% reported difficulties in preceptor training/orientation. Conclusion: The overarching goal of ACEND®, dietetic …

Comparing Healthy Eating Index Scores To Physical Activity Levels In Adults Using 20007–08 And 2009–10 Nhanes Data Sets, Lori Nedescu

Master's Theses and Doctoral Dissertations

Research suggests diet intake among adults lacks in healthfulness, which contributes to poor quality of life and increased disease outcomes. This study assesses the relationship between diet quality, using the Healthy Eating Index (HEI), and presence of physical activity (PA). Participants included 11,167 adults ≥ 20yrs with valid NHANES 2007–08 and 2009–10 diet interviews and PA questionnaires. Subjects were divided into sedentary, 1–149 minutes per week of PA (moderate exercisers) and ≥150 minutes per week PA (meets or exceeds PA guidelines) groups based on guidelines set by the Department of Health and Human Services. Dietary interviews were scored for quality …

Study Of Intuitive Eating Ratings And Self-Efficacy Differences In Women With Polycystic Ovarian Syndrome (Pcos), Meaghan Ormsby Schillinger

Master's Theses and Doctoral Dissertations

Background: Polycystic Ovarian Syndrome (PCOS) is an endocrine disorder, which if left untreated can lead to infertility and diabetes.

Objective: To determine whether women with PCOS who practice intuitive eating skills are more confident in sustaining healthy lifestyle changes.

Methods: A web-based survey was completed by 120 women with PCOS. Bivariate associations between the self-efficacy and intuitive eating scales was investigated using scatterplots, Pearson’s correlation coefficient, and a simple linear regression model. Ratings on the intuitive eating scale were dichotomized as high or low and self-efficacy ratings were compared.

Results: Of the 120 responses, 89% of …

A Review Of Serum 25-Hydroxyvitamin D Levels In Alaska Native And Non-Natives In Southwest Alaska, Melanee Tiura Jun 2013

A Review Of Serum 25-Hydroxyvitamin D Levels In Alaska Native And Non-Natives In Southwest Alaska, Melanee Tiura

Master's Theses and Doctoral Dissertations

Background: Vitamin D insufficiency and deficiency have been documented throughout the world, correlating with disease processes including: cancers, bone disorders, autoimmune diseases, and cardiovascular disease. Factors affecting people of Southwest Alaska, such as northern latitude (above 34ºN), low dietary intake of vitamin D, reduced sun exposure, high body mass index, and darker skin pigmentation increase risk for Serum 25-hydroxyvitamin D [25(OH)D] deficiency and insufficiency.

Purposes of the Study: To evaluate the incidence of 25(OH)D insufficiency and deficiency in Southwest Alaska, differences in deficiency rates between Alaska Natives and non-Natives, and seasonal trends in 25(OH)D levels.

Subjects: Forty-nine adults with 25(OH)D …
