In addition to the direct health impacts of COVID-19, government and household mitigation measures have triggered negative indirect economic, educational, and food and health system impacts, hitting low-and middle-income countries the hardest and disproportionately affecting women and girls. We conducted a gender focused analysis on five critical and interwoven crises that have emerged because of the COVID-19 crisis and exacerbated malnutrition and food insecurity. These include restricted mobility and isolation; reduced income; food insecurity; reduced access to essential health and nutrition services; and school closures. Background: Food is not equitably available. Deficiencies and generalizations limit national datasets, food security assessments, and interventions. Additional neighborhood level studies are needed to develop a scalable and transferable process to complement national and internationally comparative data sets with timely, granular, nuanced data. Participatory geographic information systems (PGIS) offer a means to address these issues by digitizing local knowledge.

The purpose of this study was to evaluate the impact of a nutrition intervention on food insecurity among low-income households with children. Data were collected from 371 parent−child dyads in a quasi-experimental evaluation study of a 1-year intervention (n = 6 intervention schools receiving Brighter Bites, n = 6 wait-list control schools), and longitudinal follow-up of the intervention group 2 years post-intervention in Houston, Texas. American children eat fewer fruits and vegetables (F&V) and less variety of F&V than recommended for health. Food cooperatives and other programs have become a popular way to increase F&V intake, but little is known about the variety of F&V distributed by these programs or its relationship with program attendance or child F&V intake. Brighter Bites is a national, school-based food co-op distributing rescued, donated, fresh F&V to families in low-income schools. A collaborative partnership launched the Great Grocer Project (GGP) in March 2021 in Detroit, Michigan where health inequities, including deaths due to COVID-19, have historically been politically determined and informed by socially entrenched norms. Institutional and structural racism has contributed to a lack of diversity in store ownership among Detroit grocers and limited access to high-quality, affordable healthy foods as well as disparate food insecurity among Detroit residents. The GGP seeks to promote Detroit’s healthy grocers to improve community health and economic vitality through research, programs, and policies that have the potential to advance health equity. University dining halls are understudied food environments that affect student diet quality. This study (1) assessed dining hall offerings at the University of Rhode Island (URI) using the Partnership for a Healthier America’s Healthier Campus Initiative (PAHA) criteria for healthier campus food environments and (2) evaluated student perceptions of the dining hall through a campus-wide survey (n=165). We evaluated breakfast, lunch, and dinner using spring cycle menus (16 weeks in 2019 and 4 in 2021) from two full-service dining halls totaling 29 meals in 2019, and 84 meals in 2021 to determine adherence with PAHA criteria for availability of: 1) …

Basic Needs Initiative at California State University, Monterey Bay is a department that provides students with food, housing, and wellness resources. Over half of the university's students experience food insecurity, and over 85% use non-academic resources to learn about nutrition. This project adds a dietary health section to the department’s website to increase students’ access to nutrition education. It addresses the micro-level agency problem that too few students eat a healthy, balanced diet. Unhealthy eating is a risk factor for food insecurity, so the project indirectly addresses the macro-level health problem that too many college students in California experience food …

Evaluating Fidelity To The National Extension Dining With Diabetes Program: Challenges And Opportunities, Laura E. Balis, Bailey Houghtaling, Julie Harker Buck

The objective of this study was to evaluate fidelity to the Dining with Diabetes (DWD) program. Data were gathered cross-sectionally in 2019 using class profile forms (i.e., checklists) containing items reflecting the core components of DWD: delivery personnel, curriculum, hands-on cooking, and goal setting. Fidelity was calculated as the proportion of core components completed as intended. Educators (N = 9) completed class profile forms for 10 complete DWD programs (i.e., all four classes). Fidelity to components of completed DWD programs and individual DWD classes was high (over 70% in each category). Overall, fidelity was high, and adaptations reported likely did …

Background: Data about physical activity report card for Ghanaian children and youth are available but reports on physical activity patterns and dietary habits of undergraduates are scarce. Material and methods: This cross-sectional study sampled 278 participants (161 males, 117 females, mean age = 20.73 ± 1.72 years). Blood pressure, heart rate, physical activity patterns and dietary habits were measured. Results: Most (83.1%) of the sample predominantly engaged in household activities. Time spent on treadmill/ cycling activities is significantly higher in females than males (P = 0.018). Day/week for high intensity sports was higher in males (P = 0.005), while household …

Proper nutrition is a key factor in physical performance, but there are also indications of an impact of dietary components on the brain function. Therefore, the aim of the study was to assess the impact of macronutrients and water on cognitive performance. Assumptions of the Mediterranean diet correlate with better global cognition, episodic memory, lower risk of cognitive impairment and neurodegenerative diseases. In turn, a high-fat and high-sugar diet shows the opposite effect. Omega-3 fatty acids could be used as a preventive tool for cognitive decline, but there is still insufficient evidence if supplementation improves cognitive functions. The proper intake …

Background: Participation in physical activity (PA) from a young age helps to build the foundation for a healthy life in the future. The purpose of this study was to investigate the relationships between energy intake, dietary habits, PA levels, and healthy lifestyle behaviours (HLSBs) in primary education and pre-service teachers. Introduction: Nutrition professionals face implementation challenges due to their lack of knowledge to incorporate D&I science into intervention design. To improve intervention outcomes, nutrition professionals must be trained in D&I science, which are currently absent in the field.
Aims: To identify and assess nutrition educators and practitioners perceived motivations, self-efficacy, and attitudes in using D&I science to inform the educational design and strategies of a nutrition-specific D&I curriculum for nutrition educators. Then to test feasibility of the nutrition-specific curriculum in increasing knowledge, self-efficacy, and attitudes by a case study approach, pre/post intervention design.
