This paper examines fruit and vegetable intake (FVI) in low-income households that participated in a cost-offset (CO), or 50% subsidized, community-supported agriculture (CSA) program. CSA customers paid farms upfront for a share of the harvest, and received produce weekly throughout the growing season. A cohort of adults and children 2-12 y in a summer CO-CSA were surveyed online twice: August 2015 (n = 41) and February 2016 (n = 23). Food insecurity occurs when an individual does not have consistent access to fresh, nutritious food in safe, socially acceptable, and affordable ways. This is a significant challenge facing Kentuckians, with one in six adults and one in four children experiencing some degree of food insecurity. The present study examines the effectiveness of customized nutrition education in improving 1) nutrition-related behaviors associated with food insecurity and 2) management of household food supply in food-insecure individuals with and without children. For many people, the corner store remains the main grocer, or the only source of sustenance in minority communities. This study examined the distribution of corner stores as a future reference point to provide healthy food access to predominantly African American communities that lack full service grocery stores. Business data was obtained from respective county by use of Standard Industrial Codes. Gestational weight gain outside the recommended ranges puts women at risk for pregnancy complications and adverse birth outcomes. Food insecurity and environmental factors including neighborhood deprivation may influence gestational weight gain. This research 1) examines the impact of neighborhood deprivation on gestational weight gain, 2) identifies if the association varies by selected maternal characteristics, 3) examines the relationship between food insecurity and gestational weight gain, 4) determines if stress mediates the relationship between food insecurity and gestational weight gain, and 5) examines whether selected maternal characteristics mediate this relationship. Food insecurity is defined as the limited or uncertain availability of nutritionally adequate and safe foods. It can also be defined as the limited or uncertain ability to acquire acceptable foods in socially acceptable ways. Previous research has observed that food insecurity can disrupt optimal development throughout the life cycle. A growing body of literature has documented the effects of food insecurity on cognitive, academic, and psychosocial development among college students. These studies consistently observed that food insecurity is associated with lower academic performance, poor health, and decreased psychosocial function. Past and present, community gardening has been used as a response to poverty, a way to supplement healthy foods, and a mechanism for community involvement. For thirteen refugee families living at the Housing Authority of Bowling Green, community gardening has become a way to recreate their traditional cult ure. Based on data collected through interviews during the summer of 2016, these refugee s identified gardening as a buffer against food insecurity, providing access to both healthy a nd culturally appropriate foods.
