Role Of Nutrition Focused Physical Exam In The Identification Of Malnutrition In The Elderly, Madeline Wallace, Markie Campbell, Detri Brech

Sixteen percent of the U.S. population is over 65 years of age and up to one out of two have malnutrition. The nutrition-focused physical exam (NFPE) is an integral part of the nutrition care process and model consisting of consecutive steps: nutrition assessment, diagnosis, intervention, and monitoring/evaluation. The NFPE is a component of nutrition assessment providing registered dietitian nutritionists (RDN) with information to determine nutrition status and degree of malnutrition. Six clinical characteristics used to identify malnutrition are energy intake, weight loss, subcutaneous fat loss, muscle loss, fluid accumulation, and reduced function status. According to the World Health Organization (WHO), globally 340 million school-aged children are obese. The Centers for Disease Control and Prevention (CDC) report that 13.7 million (19%) of U.S. children and adolescents age 2-19 years are obese. Obesity rates are 14% in 2- to 5-year-olds, 18% in 6- to 11-year-olds, and 21% in 12- to 19-year-olds. Hispanic children (26%) and non-Hispanic black children (22%) have higher obesity prevalence than non-Hispanic white children (14%). Non-Hispanic Asian children (11%) have lower obesity rates than non-Hispanic black children and Hispanic children. In Arkansas, 22% of school-aged children are obese and 39% are overweight …

The aim of this pilot study was to examine the feasibility and effect of consumption of fermented vegetables on blood markers of inflammation in women. A total of 34 women were randomized into one of three groups: fermented vegetable (Group A, n=11), non-fermented vegetable (Group B, n=13), and control (Group C, n=10). Participants in the vegetable groups were provided ½ cup of vegetables/day for six weeks, while the control group was asked to maintain their regular diet. This study aimed at validating direct segmental multi-frequency bioelectrical impedance (BIA) as an effective means of measuring body composition when compared to air displacement plethysmography (ADP-Bod Pod) in adults. We also investigated the effect of recent water intake on the assessment of body composition by these methods. The study sample consisted of 61 healthy individuals, 24 males with mean age 25.5 and 38 females with mean age 22.2. Mean body mass index was 25.5 kg/m2 for males and 22.2 kg/m2 for females. Background: Knowledge and consumption of a variety of whole grains are limited in the college-age population. Immersion into virtual reality simulates one being transported from their current surroundings to a completely new atmosphere.

Methods: A pilot study was conducted to determine if college students would be able to correctly identify various grains while immersed in virtual reality. Participants (n=39) were asked to sample two similarly shaped grains (pearl couscous and whole grain sorghum) while immersed in a virtual reality on-campus cafe. Participant surveys captured demographics, a sensory analysis on grains tasted, history of grain consumption and grain nutrition knowledge.

Objectives: Fruits and vegetables (FV) play an important role in people’s health. The current study aimed to identify if specific colors of FVs are associated with type 2 diabetes (DM) risk in the United States Hispanic/Latino population.

Methods: This study used a subgroup of participants from the Hispanic Community Health Study/Study of Latinos (HCHS/SOL). This is a multi-center, prospective cohort study with 16,415 self-identified Hispanic/Latino individuals from 2008-2011. Data collected include anthropometrics, OGTT, dietary intake, medical history, physical activity, and sociodemographic information. FVs are categorized into five color groups: green, white, yellow/orange, red/purple, and uncategorized.

The Academy of Nutrition and Dietetics highlights the need for more mentorship opportunities for Registered Dietitian (RDs) in their 2017 Strategic Plan. There are a limited number of published structured programs that facilitate relationships between practicing dietitians and dietetics students (DS). The purpose of the RD Mentorship Program is to determine the impact of a project-based mentoring experience on self-perceptions of mentoring and professional advancement. The RD Mentorship Program partners RDs with DS to work on specific nutrition-related projects. Partnerships are required to meet at least once per month to work on their project. Relationship Satisfaction & Diet: Exploring The Mechanisms Through Which Intimate Relationships Influence Physical Health, Lindsey Robinson, Dylan Hillock, Dr. Josh Novak

Understanding how intimate relationships influence physical health has been an important topic of focus; however, research remains unclear on the mechanisms through which this influence occurs. The purpose of this study was to examine how relationship satisfaction relates to diet quality, through mental health (depression and anxiety) and diet self-efficacy. Using a dyadic mediation model with a sample of 234 heterosexual couples, researchers found that women's higher relationship satisfaction was associated with better diet through lower depression and higher diet self-efficacy. The purpose of this literary review was to investigate the connection between iron deficiency and motor and cognitive development. Iron-deficiency is the most prevalent nutrient deficiency world-wide, and infants are at a greater risk due to their rapid growth.
