Upon close examination by nutritional professionals, concern has arisen regarding the typical contents of a young adult diet. This project explores ways in which food pantries across Ohio college campuses are accommodating for those with food restrictions such as food allergies, religious diets, or personal choice (vegan/vegetarian). Food insecurity is a widespread issue that affects many Americans. College students especially bear the burden of this issue. Food pantries are a common institution to combat food insecurity, and these work for many of the individuals that use them. Vitamin D supplementation has numerous effects on athletic performance and plays a significant role in preventing an athlete’s risk of getting injuries. Vitamin D has an impact on numerous physiological functions such as: bone health, muscle function, inflammatory response, and immune function. An athlete’s bone and muscle health are essential for maximum performance and career success. A bone fracture due to vitamin D deficiency can delay an athlete’s training and ultimately inhibit obtaining a collegiate scholarship and/or contract. Dietary quality declines during college and is exacerbated by food insecurity (FI) and substance use (SU), leading to negative health and academic consequences. Purposes of this study were to investigate rank importance of food choice motives (FCM), relationships between FI intensity and FCM, and relationships between SU intensity and FCM.
College students aged 18-30 were recruited by Facebook. The USDA 6-item Food Security Survey Module (FSSM); Alcohol Use Disorders Identification Test (AUDIT); Extended Drug Use Disorders Identification Test (DUDIT-E); and Food Choice Motives Questionnaire were used. The diet quality was analyzed for people living in New Zealand and people living in other Westernized Countries (United States, Canada, Western Europe) based on the dietary guidelines. Diet quality was analyzed by looking at consumption of food groups such as fruits, vegetables, meat, and seafood as well as nutrients such as saturated/trans/unsaturated fat, sodium, and added sugars. These nutrients have been linked to certain health outcomes and chronic disease; therefore, the prevalence of chronic disease was researched to determine if there was a correlation between New Zealand's diet and their chronic disease rates in comparison to other Westernized countries.

Background: Students often experience undesirable body composition changes, as well as previously unknown stressors, during the transition to college. This study characterizes the relationship between body composition, stress, and academic performance in the first semester of college.
Methods: At the beginning and end of their first semester, 54 students (59.2% female) completed in-person weight and fat assessment (bioelectrical impedance analysis), as well as online stress assessment (“academic stress” via the Inventory of College Students’ Recent Life Experiences, ICSRLE, and “perceived stress” via the Perceived Stress Scale, PSS). Introduction: As the aging population increases, the need for accurate assessment of chronic disease risk also increases. There is considerable debate over the best way to assess this risk. BMI is a weight-to-height ratio that is commonly used to assess adiposity and obesity related risk. However, it does not differentiate lean (i.e., muscle and bone) versus fat mass – the true predictors of obesity-related diseases (e.g., cardiovascular disease and diabetes). This is prevalent in post-menopausal women who often experience age-related gains in fat mass and losses in lean mass.

Background: Undergraduates are making their first autonomous health decisions. This is an opportune stage for examining the precursors to the chronic diseases of adulthood. The purpose of this study was to examine correlations between health status, quality of life, and academic success in college students.
Methods: A quality of life survey (Goodman, 1997) was utilized to determine the behavioral difficulties of 86 first and second year college students. This research examines student food insecurity at Bowling Green State University (BGSU) and available resources in Bowling Green, Ohio. Seven classes from BGSU’s main campus were randomly chosen to complete a survey regarding participant background information, details concerning food attainment, food security level, and use of community resources to allow for food acquisition. These classes included undergraduate classes and ranged from 15 to 272 students per class. Less than one quarter of student participants had food insecurity (19%), and food insecurity was significantly associated with financial dependence (P=0.04). A study was composed to analyze the three components of the female athlete triad: disordered eating, amenorrhea, and osteoporosis. The cyclic behavior of these three components and determination of which of the pillars of the triad is the most dangerous was also focused on. In order to test the prevalence of disordered eating among women’s collegiate teams, a brief survey was distributed and analyzed among athletes at Bowling Green State University.
