The authors were perplexed by the seeming dichotomy between the majority 70% of Haitian consumers being chronically food insecure, but still preferring to pay premium international market prices for long-grain rice that constitutes 30% of the calories in this poorest nation in the Western Hemisphere. Globally, rice producers are faced with the temporal problem of deciding the optimal time to being rice harvest. When harvested, paddy rice is typically at a moisture content (HMC) between 15 and 22%. Upon delivery, the rice is subsequently dried by the mill to a moisture content (MC) of 12.5%. Riceland Foods Inc., the largest miller of rice in the world, uses a stair-step pricing model to charge farmers to dry in price/unit as the MC of grain decreases from a range of +22% to 13.5%. Rice consumption in Benin is increasing along with shifting consumer demand toward higher quality rice. In this context of changing demands, experimental estimation methods provide an effective way to estimate the current state of consumer preferences. We conducted a hypothetical choice experiment in 15 open markets in Benin to analyze the demand for rice and its substitutes. The results reveal that consumers value quality rice, even those in the low-income class. While high income consumers are more likely to choose high quality imported rice, low- and middle-income consumers are more likely to select high quality domestic rice among the set …

Response surface methodology (with central composite rotatable design for k=3 was used to investigate the product properties of extruded rice-cowpea-groundnut blends in a single screw extruder. The combined effect of cowpea (0-20%), groundnut (0-10%), and feed moisture (14-48%) levels were used for formulation of the products. The product moisture, expansion ratio, bulk density and total colour change were studied using standard analytical methods. Well-expanded rice-legume blend extrudates of less bulk density and lower moisture content were produced at low feed moisture. These issues are not limited to developing countries. With increased globalization, the management of agri-biotech IP rights affects both developing and industrialized countries. In industrialized countries, for example, IP rights risk management entails protection of inventions via strong patent portfolios.
