The national mammal of the United States, the American Bison (Bison bison) was once nearly extinct. Populations have recovered to the degree that thousands roam the Great Plains today. Due to their large numbers and body size, this species has an oversized impact on the ecological communities where it lives and is considered a keystone herbivore in modern North American grasslands. During the Late Pleistocene (LP; past 130,000 years), over two-thirds of large mammal (>45kg) species went extinct globally. While the role of humans is hotly debated, the effect of these extinctions is growing clearer; the extinctions resulted in widespread and lasting faunal community reorganization. However, the impact of these extinctions on dietary and migratory behavior within faunal communities is unknown. Our study examines the impact of the megafaunal extinctions on the dietary and migratory behavior of surviving Bison individuals in Texas using carbon, oxygen, and strontium isotopes. Grazing from native herbivores such as bison (Bison bison), in combination with prescribed fire, are applied to tallgrass prairies by managers to recreate important disturbance patterns in this ecosystem. Bird communities may be indirectly impacted by these disturbances through their direct impact on plants that provides critical breeding habitat for grassland birds. The objectives of this research are to determine the impacts that bison and prescribed fire have on grassland breeding birds in two tallgrass prairie preserves, Kankakee Sands and Nachusa Grasslands. The objectives of this thesis project were to 1) evaluate the influence of grain- and grass-finishing systems on carcass characteristics, proximate composition, nutritional profile, and fatty acid composition of bison bull meat, and 2) evaluate the influence of animal age on carcass characteristics of bison bulls. For objective 1, bison bulls were allowed to graze native range in north-central Nebraska until approximately 26 mo of age, when they were randomly assigned to either grain-finishing (n = 98; in an open lot with ad libitum access to prairie hay, alfalfa hay and corn for 95 d prior to slaughter) or grass-finishing …
