Food Preferences Among Children At Arcadia Elementary School, Laurel Lee

My research, conducted from September through November of 2017, showed that the children preferred more processed foods and starches instead of healthier options such as fruits and vegetables, even when healthy options were available. According to the parents/caregivers surveyed, their children prefer to eat processed American meals. Parents/caregivers desired for their children to eat a variety of different foods including fruit, vegetables, proteins, and traditional Hispanic food. This study acknowledges that healthy meal options are available at schools, but there needs to be more research on how to best encourage students to take advantage of these nutritious choices in order …

All benefits provided by natural systems are embedded within coupled social-ecological systems (SESs). Fisheries are clear examples of SESs: through fishing, humans affect ecosystem structure and functioning, and in turn, receive benefits, including sustenance, employment, and cultural value. Resilience, the ability to maintain structure and function in the face of change, is key to sustaining the social and ecological components of fisheries-related SESs and their interactions. Many factors contribute to resilience, including heterogeneity. By identifying heterogeneity in these complex systems, we are better able to understand the capacity of fishery-related SESs to adapt to change, and contribute to management that …

Little change over the decades has been seen in adults meeting moderate-to-vigorous physical activity (MVPA) guidelines. Numerous individual-level interventions to increase MVPA have been designed, mostly static interventions without consideration for neighborhood context. Recent technologies make adaptive interventions for MVPA feasible. Unlike static interventions, adaptive intervention components (e.g., goal setting) adjust frequently to an individual's performance. Such technologies also allow for more precise delivery of “smaller, sooner incentives” that may result in greater MVPA than “larger, later incentives”. Combined, these factors could enhance MVPA adoption. Additionally, a central tenet of ecological models is that MVPA is sensitive to neighborhood environment …

Seeds that Feed (STF) is a mobile food pantry located in Fayetteville, Arkansas. STF receives produce from local farmers to distribute to residents in low-income housing sites throughout Northwest Arkansas. According to Feeding America, food insecurity affected 14.3% Washington County, Arkansas’ population in 2016. The purpose of this study was to determine if STF’s model is an effective way to increase individuals’ access to fresh fruits and vegetables and increase their potential to meet the United States Department of Agriculture’s Food Patterns (USDA-FP) for to fruit and vegetable consumption. This case study introduces an arts camp methodology of engaging communities in identifying their key cultural heritage features, thus serving as a meta study. It presents original research based on field studies on the climate-vulnerable Caribbean island of Barbuda during 2017 and 2018. Its Valued Cultural Elements survey, enabling precise identification of key tangible and intangible art forms and biocultural practices, may serve as a basis for further studies. Such approaches may facilitate future research or planning as climate-vulnerable communities harness Local or Indigenous Knowledge for purposes of biocultural heritage preservation, or towards adaptation or relocation.
