A Nutritional Analysis Of Food Menus Offered At Local Older Adult Assisted Living Facilities, Chloe R. Schmir Jan 2018

A Nutritional Analysis Of Food Menus Offered At Local Older Adult Assisted Living Facilities, Chloe R. Schmir

Honors Theses and Capstones

Nutrition is important in all stages of life, especially in the later years. The purpose of this study was to analyze the food offerings from local assisted living facilities on a nutritional basis. Upon collecting weekly food menus, they were evaluated based on the 2015-2020 Dietary Guidelines for Americans (DGAs) in the domains of food groups, food variety, and excess fats, sugars, and salt. Not a single facility met the DGA requirements completely in food groups or food variety. The food groups facilities were most deficient in were fruits and dairy. Furthermore, each of the menus had items rich in …

Comparing The Effects Of Monensin And Sodium Butyrate On Coccidia In Post-Weaned Heifers, Hannah R. Coffin Jan 2018

Comparing The Effects Of Monensin And Sodium Butyrate On Coccidia In Post-Weaned Heifers, Hannah R. Coffin

Honors Theses and Capstones

The emergence of antibiotic resistances has raised concerns in society about the widespread use of antibiotics, such as monensin, as growth enhancers in agriculture. Pressure to find alternatives has increased since the European Union banned the use of ionophorous antibiotics. Butyrate supplementation has been found to enhance growth in pre-weaned calves and it has been recently suggested to enhance growth in post-weaned heifers. In a recent study by Rice in 2017, there was a quadratic (P=0.03) response for coccidia counts as sodium butyrate was increased, with the lowest counts being at the intermediate doses. This suggested that butyrate has the …

Comparing Bird Communities Within Shrubby Transmission Line Rights-Of-Way Managed By Mowing Or By Selective Herbicide Application In Maine And New Hampshire, Kathleen P. Wadiak Jan 2018

Comparing Bird Communities Within Shrubby Transmission Line Rights-Of-Way Managed By Mowing Or By Selective Herbicide Application In Maine And New Hampshire, Kathleen P. Wadiak

Honors Theses and Capstones

In the northeastern U.S., thousands of miles of shrub-dominated transmission line rights-of-way (ROW) extend across the landscape and provide some of the largest and most stable shrubland habitats in the region. These ROW are used as nesting and post-fledging habitat by the region’s entire community of shrubland-dependent songbirds, but evidence for how ROW are used by songbirds that require other habitats for nesting is lacking. Mist-netting surveys conducted in regenerating clearcuts indicate that adult and fledgling mature-forest songbirds comprise a large proportion of the bird community in clearcuts during the post-fledging portion of the breeding season, a time when juvenile …

Reflection And Evaluation Of The “Healthy Me, Healthy Earth” After-School Program, Mary K. Sherman Jan 2018

Reflection And Evaluation Of The “Healthy Me, Healthy Earth” After-School Program, Mary K. Sherman

Honors Theses and Capstones

The “Healthy Me, Healthy Earth” program was an eight week after-school program for first through fourth graders at the Woodman Park Elementary School in Dover, NH conducted during the Fall of 2017. The program used a cost-effective, food system-based curriculum to promote health and environmental literacy to students who participated. An interdisciplinary approach was used to assess the knowledge, attitude, and behavioral changes of the students. There was a noted improvement in comprehension of food system concepts.

The Molecular Analysis Of Hawaiian Bird Diets, Alissa C. Scinto Jan 2018

The Molecular Analysis Of Hawaiian Bird Diets, Alissa C. Scinto

Honors Theses and Capstones

The aim of this project is to utilize high-throughput molecular methods to investigate the diets of three non-native and one native Hawaiian bird species. Next-generation sequencing (NGS) has made it possible to produce thousands of sequencing reads of DNA in a relatively short amount of time. This metabarcoding technology has been used to identify a range of different taxa, from bacteria in the human gut to fungi in the soil. More recently, this approach has been used to identify insects in the diets of birds and other species, including bees and bats. Samples underwent genomic sequencing using a targeted approach …
