Antimicrobial agents are used in human medicine to treat infections by inhibiting the growth of bacteria. The same or similar drugs are used in in food-producing animals for therapeutic and sub-therapeutic purposes. Antimicrobial resistant bacteria that develop on farms are a public health risk as these organisms may contribute to treatment failures in infected humans. The main objective of this study was to determine the prevalence of Salmonella isolated from poultry farms in two different seasons to evaluate the effect of recommended biosecurity practices. Non-typhoidal Salmonella is the leading cause of foodborne illness in the United States, resulting in about 20,000 hospitalizations and nearly 380 deaths annually. The meat processing industry has been especially plagued by Salmonella, from meat-inherent sources and more alarmingly, cross-contamination. For ready-to-eat (RTE) meat products specifically, this can cause significant problems in processing facilities ensuring safe product for consumption, resulting in foodborne illness.

The development of standard lethality compliance guidelines by the United States Department of Agriculture Food Safety and Inspection Service (USDA-FSIS) within Appendix A assists processors in confirming that Salmonella is inactivated in RTE beef and poultry products, …

Non-typhoidal Salmonella (NTS) and Campylobacter play a major role in foodborne illness caused by the consumption of food contaminated by pathogens worldwide. A comprehensive understanding of the genetic factors that increase the survival fitness of these foodborne pathogens will effectively help us formulate mitigation strategies without affecting the nutrition ecology. The objective of this study was to identify the genetic determinants of Salmonella and Campylobacter that are required for fitness under various in vitro conditions. The increasing prevalence of drug-resistant pathogens is an urgent problem that requires novel methods of bacterial control. Plant extracts inhibit bacterial pathogens and could contain antibacterial compounds with novel mechanisms of action. Yerba mate, a common South American beverage made from Ilex paraguariensis, has antibiotic activity against a broad range of bacterial pathogens. Salmonella is a foodborne pathogen commonly associated with poultry products; the economic burden to the U.S. is estimated to be approximately $693 million (without factoring in contaminated eggs). Recently, there has been pressure to withdraw sub-therapeutic levels of antibiotics (also known as antibiotic growth promoters; AGP) from poultry due to concern over antibiotic-resistant bacteria spreading to the human population. Listeria monocytogenes continues to challenge the dairy industry in causing post-process contamination of cheeses. To reduce risk of contamination, it is crucial to understand the growth and survival of pathogenic bacteria in cheese products and to develop post-process mitigation strategies. This study evaluated the fate of pathogens in reduced and regular sodium Mozzarella cheese, and the potential of Supercritical Fluid Extraction with CO2 (SFE) to reduce Listeria innocua on Mozzarella and Queso Fresco. RNA polymerase holoenzyme (Eσ) mediates transcription in eubacteria, and is composed of five constant subunits (α2ββ’ω) and a variable sigma (σ) subunit that is responsible for promoter recognition and initiation of transcription. An alternative sigma factor in Salmonella Typhimurium, σ54 (also called RpoN), is mechanistically different than classical σ70-type sigmas, requiring a different promoter consensus sequence, an activator, and ATP hydrolysis. The Rtc RNA repair operon lies within the regulon of RpoN in S. Typhimurium, but has no known physiological function. This study was carried out to detect the occurrence and antimicrobial resistance of Salmonella enterica subsp. enterica serovars Typhimurium, Enteritidis, and Typhi in 252 samples including 100 chicken eggs, 60 processed poultry products (20 nuggets, 20 salami samples, 20 sausages), and 92 poultry giblets (50 livers and 42 gizzards). Salmonella spp. and serovars were identified by PCR. The antimicrobial susceptibility testing was performed by disk diffusion method. Background

The objective of this study was to determine whether irradiation could serve as a suitable phytosanitary treatment alternative to methyl bromide (MB) fumigation for blueberries and sweet cherry and also to determine the effect of phytosanitary irradiation treatment on survival of Salmonella spp. and Listeria monocytogenes on these fruit. ‘Bluecrop’ blueberries (Vaccinium corymbosum) and ‘Sweetheart’ cherries (Prunus avium) were irradiated at 0.4 kGy or fumigated with methyl bromide and evaluated for quality attributes during storage.

Results
