Allergen control plans are increasingly used by the food industry to prevent allergen cross-contact and validation of these plans involves methods to detect allergen protein residues. A commonly used rapid allergen detection method is lateral flow devices, although research about their validation is lacking. The objective of this research was to investigate lateral flow devices, their specificity and sensitivity to milk proteins and milk-derived ingredients, swabbing conditions, and applications in cleaning validation.

Determination of the endpoint of yogurt culture fermentation is a process parameter that could benefit from automation. The feasibility of using a fluorescence sensor technology based on 280 nm excitation and 350 nm emission to predict the endpoint of yogurt culture fermentation was investigated and compared with the endpoint prediction from a near-infrared (880 nm) light backscatter sensor. Yogurt cultures with three levels of milk solids (8%, 10%, and 12%) and three temperatures (40°C, 43°C, and 46°C) were tested with three replications in a 3 x 3 factorial design (n = 27). The purpose of the research was to compare economically useful traits of Holstein cows of different selections. The results show that the German and Australian selections were superior to the Danish and American cows in terms of their growth (at 36 months of age, the body weights of the German and Australian cows were 36.5 and 27.6 kg greater than the Danish cows and 24.3 and 15.4 kg greater than the American cows, respectively). Maximum milk yield was obtained from the American and German cows (25,220 and 24,861 kg). Their milk also had higher fat content. The maximum protein content …

Milk is a highly nutritious natural product and research over the last 10 years has proven that these milk proteins not only provide a rich source of amino acids to the consumer but also contains many bioactive proteins and peptides known to exert biological activity benefitting human health. In this research, proteomic methods were first used to characterize the low abundance proteome within the skim milk fraction produced by Holstein and Jersey dairy cows maintained under the same diet, management and environmental conditions.
