Serum lipid levels of young women are of particular interest because, in a population riddled with atherosclerosis, premenopausal women seem to have a relative immunity both to severe hyperlipidemia and to those diseases thought to be related to it. The diet of this heterogeneous population is characterized by high intakes of animal protein, animal fat, and sugars.
Research has shown that the type and quantity of fat and carbohydrate have varying degrees of influence on serum lipid levels. Various micronutrients are also implicated. Animal experiments using wide ranges of protein intake suggest that under some …

A study was undertaken to survey by questionnaire and interview methods the breakfast and snack habits of Adventist and non-Adventist adolescents. The purposes of the study were: (I) to find out if there is any difference in the practices of Adventist and non-Adventist teenagers, and (2) to determine their attitudes toward snacking and omission of breakfast.
Results of the questionnaire were coded, punched onto IBM cards, and fed into computing machines for item and statistical analysis. Chi-square test analyses were done on denominational classification against some questions of interest to show any significant differences between Adventist and non-Adventist students' responses. …

The eight weeks of field experience in the Michigan Department of Public Health and several local health departments provided the student with an accelerated orientation to the philosophy and practice of public health at the state and local level. With regard to the practice of public health, the student observed that organization, leadership, communication, and well-defined program plans were important determinates of progress in meeting the health needs of the population.

The purpose of this report is to analyze the student's field experience with the Florida State Board of Health 1 Division of Nutrition. During this eight weeks' period, March 22 through May 16, 1967, the student observed and participated in the nutrition programs. Approximately two-thirds of this time was devoted to the Institutional Nutrition Consultation Program. The student has focused her course and field work on the institutional phase of nutrition consultation. The calcium, phosphorus and magnesium retention of six female phenylketonuric children was studied to determine whether the percentage retention of these minerals would be comparable to the values for normal children established by Lutwak and Macy. 73,78,79 A constant diet was given to the subjects and carmine was used as stool marker. The food and fecal specimens were analyzed for calcium, phosphorus, magnesium and total lipids. Urinary specimens were analyzed for calcium, phosphorus, magnesium and creatinine. The first study was designed to evaluate by the nitrogen balance method the protein quality of a pure-vegetarian diet containing about 6 grams of nitrogen per day. The group as a whole maintained nitrogen equilibrium the average being - 0.11 grams of nitrogen per day. Two subjects were not in nitrogen balance, however, factors other than diet may have contributed to these results and are discussed in the thesis. Hemoglobin, serum cholesterol and total serum proteins did not change significantly during the study. The average true digestibility of 5 of the subjects was 85 percent. It was concluded that this …

A study was made of the urinary excretion of estrogens of healthy university students consuming self-selected diets living under home conditions (4 men and 5 women). Two 31-day test periods were used. During the two test periods, two meal patterns were used; three meals a day or two meals a day with no lunch. Weight was kept constant. Calories, protein, carbohydrate, and fat of their diets were calculated.
Urine specimens were collected twice a week, and additional samples were also collected on specified days for female subjects. Urinary estrogens were determined by using Brown's method (1955, 1957) with some modifications. …

Four healthy university women students (age 21-26) while on self-selected diets and living under normal living conditions served as experimental subjects in a study of changes of serum total lipids, distribution of lipid classes, and the fatty acid composition of lipid fractions during the menstrual cycle. Effect of meal frequency (2 meals vs 3 meals with no breakfast) was also included.
Total lipids were extracted from serum. Chemical determinations of total lipids, total and free cholesterols, and lipid phosphorous were made on these extracts. Concentration of cholesterol esters and phospholipids were calculated and triglycerides plus free fatty acids were calculated …

Millions of pounds of venison are harvested each year in the United States. Over 12,000,000 pounds of dressed venison are harvested during the regular season each year in the State of Utah. The hunters of venison contribute approximately 10 1/2 billion dollars to the economy of the state for licenses, lodging, transportation, and other expense of hunting. In many cases this source of meat is a significant part of the household meat supply. Venison is often wasted, however, because of its undesirable flavor. The lack of knowledge as to the causes of variation in venison flavor has prompted this study. …

The levels and weekly variations of certain lipid components were investigated in healthy adults, 33 to 60 years of age, on self-selected diets under home-living conditions with and without an increased proportion of polyunsaturated fats for a period of 26 weeks. Ten individuals served as controls and 16 were assigned to the experimental diet. Each of the groups contained an equal number of men and women. The experimental diet provided a ratio of polyunsaturated to saturated fatty acids of approximately one, with the substitution of vegetable oils for animal fats within the normal eating patterns of the participants. Five normal, healthy, men (age 33-42) served as experimental subjects. The subjects were on self-chosen diets and received a test-dose of buffered nicotinic acid (Nico-Span in capsule form) of 2 gm daily for three weeks, from the second through the fourth weeks, of the six and one-half week test period. About 30 ml of venous blood was obtained twice weekly from each subject, after an overnight fast of at least 12 hours. Each subject collected a 24-hour urine sample of the day prior to the blood sampling and also kept a record of food eaten.

The composition of tomato fruit at nine different maturity stages was studied. The dry matter content decreased gradually, whereas the alcohol soluble material and non-protein nitrogen increased with ripening. Total nitrogen decreased up to the large green stage and then increased during ripening. Starch accumulated until nearly the large green stage and then diminished rapidly. Of the two components of starch, amylose decreased much faster than amylopectin, and the ratios of amylopectin and amylose thus increased during ripening. Among the amino acids, glutamic acid was present in an exceptionally high concentration, and its concentration doubled as the fruit ripened. A …

Since previous results in this laboratory had indicated that vitamin E was necessary in vivo not only for the optimal sulfation of mucopolysaccharides, but also for the oxidation of neutral sulfur to sulfate, the ability of whole liver homogenates from vitamin Esufficient and -deficient rats to convert cysteine to sulfate was investigated. Then an attempt was made to determine the specific site of the decreased oxidation of cysteine or its intermediate oxidation products. Progress report on a farm scale beef-raising investigation at the Department of Agriculture's Wongan Hills Research Station.
A SMALL herd of beef cattle was established at Wongan Hills Research Station in 1964 and the first crop of calves was dropped in the autumn of 1965. The calves' growth rates were recorded and they were marketed as 18-month-old steer beef in November, 1966.
